I made this cake about a week ago. Was a hit and will make again. The only thing I did different and not on purpose was I could only find a 15oz can of cream of coconut. Since I had never used it before I mixed the whole can with the sweetened condensed milk....I wasn't scared(LOL) just went for it and it was just fine. A great go to cake that most will love, except the coconut haters. Can't please everybody!

This takes me back to my childhood! I haven't thought about cream of coconut since Momma made this when I was a kid. The only thing she did different was toasting the coconut for the top of the cake. A true classic. Thanks for bringing back such sweet memories!

One of my favorite drinks is a Pina Colada. My mom used to make them in the blender all the time. I am gathering the ingredients to make this cake right now. I can't wait to see how it tastes. If I try, I look like a Mr. Yuck sticker or "Hey Kool-aid" 🤣 That cake looks so good. I can't believe you've never used Coco Lopez before. It's a poke cake too, but with cooked pineapple syrup poured into the holes. It has a frosting on it that has a couple of drops of rum extract in it and topped with toasted coconut. The Pina Colada cake looks amazing! When you got a few drips of cherry juice on the whipped topping I wondered if you would do something with that. When you just put more drops of cherry juice on it I laughed out loud and knew that’s exactly what I would have done!! Don’t be scared… right? Love your videos… thank you.
