    Very well done video .. nice kitchen and production values .. and you are the only one who has shown the correct order .. carrots then celery then onion .. no one else does this. Great video!

    best video for soffritto, I have made soffritto over and over again to make perfect taste and find this is the best way (adding carrots first and so on)

    When I'm making Puerto Rican style sofrito I like to use a store-bought shortcut to save time I will use a jar of tostitos salsa and I will add lots of garlic and a bunch of cilantro and this will complete the sofrito I also buy the garlic already chopped up and depending on the dish I will add green onion or scallions as some people call them just the green part you can take the white part still on it and plant it in the dirt or suspended in a cup of water so the roots are touching the water and it will grow so long as it has sunlight if you do water you must change the water frequently also trim the roots cuz they do grow very long

    When I make my sofrito for Puerto Rican sofrito I put it on the blender that's how I was taught to make it

    Good vid but I think you cut too much of the onion and carrots’ ends when peeling them. Is there a reason why?

      I think that the point of this recipe is that all ingredients are cooked at the same level. The carrot is harder and that’s why it goes first, or else we would burn the onion

      My half italian mom used to tell me that in soffritto the garlic is just an extra but people have an obsession with it in other countries.
      I cant be sure it had to be true, but i just enjoy the garlic anyways

      I always thought a soffritto was made with olive oil and a mirepoix was with butter.

      You're slightly right.
      With each flavour base, we touch on aromatics AND we also touch on the frying fat used to reduce/saute the aromatics.
      For example, the flavour base for Indian food is ginger, garlic and onion - they love using ghee (filtered butter) as their fat.
