    Interesting recipe. LOVE your cookbook. Do have a couple suggestions: Rather than sriracha, try gochujang; nice kick and definitely Korean. I also would skip the peanuts and do sesame seeds, sliced scallions and cucumbers to keep it more in the Korean style. Keep the recipes coming!

    Went a different route. Used your marinade and cut up the meat in 1 to 2 " squares. Cooked meat as directed. I took basmati rice, thinly sliced carrots, and micro broccoli florets and stir fried them in a wok. I served the meat over the fried rice and it is to die for! This recipe is very versatile. Thanks.

    The pear is there to tenderize the meat. It can also be substituted with kiwi.

    Nice! I actually do taco Tuesday and we love a korean style but it is sometimes more labor intensive than I have time for. Farm life problems 🤷🏻‍♀️
    Fish sauce is umami in a bottle and your girl is all about the umami!
    Grind some green onion into the marinade, trust me.

    Kevin, your channel has been a lifesaver to my sanity lately. I'm going to be making your split pea soup tomorrow and got all the ingredients today. For anyone reading, that is a budget-friendly meal (you can withhold or substitute as well, from what it looks like); AND... I've seen MY utility bills go waaayyy up during the pandemic in the summer months.     Since I do want to do the 24-hour marinade I'll have to make this next weekend! I can't wait to make this!!!!!! I am not afraid to use fish sauce! I never smell it or taste it but when the recipe calls for it I use it! I've seen a t-shirt on another You Tuber's channel saying that it "Smells like he--, tastes like heaven!" I also love Kim Chi!     I’ve seen korean tacos that use Asian Pear, which is supposed to tenderize the meat. I made them years ago and they were totally delicious. Yes, fish sauce is a great umami ingredient.

    I made some mini burritos with this and shared them with a couple of co-workers. They both loved them! One of them requested I make her another batch of them so I did! Unfortunately I was only able to marinate the beef for 6 hours this time but it still turned out fine! BTW, my compliments to your butcher! Any chuck roast I've ever used was gross so I used an eye of round roast both times! Thanks for a great recipe!

    thank you for the recipe! I made these tonight and the family loved them, I didn't have any kimchi but it's too spicy for them anyway. Also I lost my can of pears so I used a can of fruit cocktail and it actually turned out really good

    I made this and it was really good. First time trying kimchi and it wasn't as bad as i thought it was going to be. It goes really well with this beef. Someone make a recipe with the leftover marinade with the meat juice. I cried a little bit throwing it out but its probably too much salt, fat, and sugar for me.

    Not sure why but my marinade turned out a lot lighter. Only alterations I made was more fish sauce and I used chili oil instead of sesame oil.

    the whole idea of fish sauce is not appetizing (its not something I grew up with) however, so many dishes are not the same without it. It adds an umami you cant get from anything else.

    So.... trying not to go to the store for a can of pears.... don't have kiwi either. Any other suggestions or experiences? I'm assuming the canned pear doesn't really add to the flavor so I want to be careful what I use... canned mandarin oranges? Canned pineapple? Canned peaches? Don't judge me. 🤣Just looking for suggestions. Love your recipes and your personality!!❤😋😊

      Pears are really what's needed though. Trust me, it's worth it. The pear juice tenderizes the meat and adds a little sweetness.

      It's a shoulder clod. Also called chuck mock tender roast.
