    I am on keto so I make a broccoli soup very similar to this but instead of regular flour of course I use almond flour and carrot flavoring instead of carrots.... Because they are very high in carbs.... But what takes this soup to the next level is when you add fresh nutmeg.. It may sound crazy but I promise you it adds that extra something..... Love your videos and the chemistry between the 2 of you is magic ❤

    This is one of my pantry staple soups! I use a bag of the Costco frozen organic broccoli and a can of evaporated milk to keep it pantry-able.

    I love the look of the broccoli and cheese soup so much and have to try making it at home myself and see how it turned out. You cook great dishes and Dude does a great job of tasting your dishes and must have a hard time stopping in most cases due to them being so delicious.

    Discovered this recipe this week on youtube. Oct 27, 2022 What a awesome soup. Nice flavor light, creamy, nice after taste in the mouth. I add 1/2 tsp of turmeric for added color. My wife really enjoyed the soup. Now I have to make for Church Potluck. OOOOH!! so good. Nice job thanks

    Enjoying the soups. Have made a version of creamed soup for dairy- and gluten-intolerant folks by adding a big spoonful of rice to the softened onions at the start, skipping the flour, and then blending everything at the end. Don't need the cream, and cheese lovers can add cheese to their own bowls. (Rice is also way cheaper than cream, but it does add a bit more cooking time.)

    My favorite soup! I never made it though because my husband doesn't eat dairy either. I tried recently though with a recipe similar to yours. I didn't like it, but I think that's because I didn't like the cheese I used. It was too strong for it. Something mild is good!
    I love what you said "I like things to taste the way they are suppose to taste" no skimping!

    Dude will be happy to know that cheddar, and so presumably marble cheese are quite low in lactose as compared to other dairy products. Feel free to google it. Happy to help. You two are inspiring. 👍😉✌️

    Excited to try this. Any idea what it takes to integrate chopped chicken into this without under/overcooking the rest?

      If you're using raw chicken, cut into cubes and sauté at the beginning before the onion. If using cooked chicken, I'd add after making the soup and heat it through. Hope that helps!

    Have been working my way thru your new cookbook and today the recipe tried was your broccoli cheese soup. So very good. Thank you. There is an error in the recipe though, the carrots are not listed, just 2, shredded. Easy enough to figure out but thought you might want to know. You and Dude are a favorite on TH-cam.

    Looks yummy! My favourite vegetable is broccoli so, this is right up my alley! Interesting take on the soup - I don't think I've ever seen a recipe for broccoli soup that has parmesan in it. I don't mean that as a negative - I will definitely try it! 😊 BTW, I've started using your trick of leaving the end on the onion - it does help with controlling the onion when chopping so, thanks for the tip!

    Ohhhhh boy, that soup looks fantastic, my mouth is watering! I too am lactose intolerant (recently discovered) even though we’re not supposed to be affected by cream and cheese, I think most of us are...but Flo, I’ll be taking a maximum dose of my tablets because I’m not going to pass up that delicious looking soup!

    Looks delicious. I'd use a blend of grated Parmesan and Romano for better flavor. Agreed that shredded carrots is better. I don't like crunchy lumps of anything in soups.

    I'm not a fan of sharp cheddar cheese, but it actually adds a good flavor to broccoli cheddar soup so I don't mind it! Cheese = YUM

    Hooray for another soup recipe! It is going to be rainy and cooler than usual here all week apparently so I've baked some savoury muffins and am preparing for a soup-a-day week. Thank you Flo! (And Dude...I've got my lactase pills ready too but I do have to use fat free half and half even with the, that whipping cream would make me feel like I want to die, haha.) I can't wait to begin finding the new Carnation lactose free 'canned' milk in local stores because it will give the shelf convenience of a rich milk taste for soups and gravies without the lactose. But so far...none here!

    I forgot to ask is this soup freezable because I wanted to freeze some of it I put one small potato in it because I’m a country girl got a head potato with my soup but potatoes don’t freeze well but we’re probably gonna eat the potatoes right now but I was wondering can I freeze half of this because I made quite a bit I actually made it tonight watching your video I had to I can’t wait to make the beef and barley I’ve never made that so I’m excited and I love the hair looks so beautiful

    Have you tried "Pot In Pot" to cook rice? I have a very small kitchen so in order to justify the Instant Pot I had to get rid of the rice cooker and the slow cooker. Problem is I was not satisfied with the standard way of cooking rice in the instant pot. Then I remembered as a cook in college we cooked rice in large pressure cookers. I tried it, 1:1 water rice, for 30 minutes and it was perfect.

    The cheese that you buy in the store, which comes ready shredded, is covered in cellulose fiber pulp, which is to prevent clumps or melting.
    Basically, it's covered in paper dust.

    I usually just chop up my cheese if I'm melting it into something like soup ,I find it quicker,easier and it melts fine.Soup looks good ,though, I might blend some of it to make it a little thick but leave some of the chunky bits in a thicker soup.

    I like to strip the stems & eat them raw.. I was told that the pkg cheese is coated with some kind of wax, because it keeps the grated cheese from all sticking together & getting gummy.. Right now it's spring here but I eat soup anytime of the yr.. OH the finished looks sooooo good. I'd put the carrots in, I'm a big veggie fan but not vegetarian.

    Hi Flo! I have the instant pot ultra and I have tried to cook rice (jasmine) on it 3x and it always turns out wet and overcooked at the bottom and the just perfect on the top part. Help please!

      I don’t know why. Same thing happened to me the other day when I made 4 cups, done on top, crispy on the bottom and never came to pressure. I just happened to know how long it should take and turned it off. I usually make 1-3 cups and never have issues. It seems whenever I make more, it doesn’t like it. Makes me want to get a regular rice cooker.

    Added powdered parmesan and it stuck to my spoon after stirring. Also used half and half and it came out fermented and not creamy looking. I had to blend it all and it was way better.

    I love this soup, But I’ve never thought to make it in my instant pot I always do it in my Dutch oven, i’m definitely going to use my instant pot the next time I make it . This recipe is almost identical to the one that I use except my family loves cheddar cheese so I found I get better cheddar flavor without overwhelming the soup by using a medium cheddar and for added broccoli flavor I take about 2 cups of the soup and the cooked broccoli stems and put it in a blender and then add it back into the pot and I find that gives the liquid good broccoli flavor too instead of only tasting broccoli when the bite includes a piece of broccoli. I’ve tried using an immersion blender in the pot of soup but like you I do not like only having tiny specks of broccoli in my soup. That method also adds too much air into the soup and changes its color and texture which I do not like so I find just blending the broccoli stems with some of the liquid and adding it back to the pot gives it great flavor without changing the color or texture.

    My first "real" job, after delivering papers in grade school, was as a dishwasher in my uncle's restaurant. Let's just say that "Brocolli and Cheese Soup Day" was NOT my favorite day of the week. I still bear the emotional scars.

    My kind of cook. Kind of hard to cook things when people can't eat certain things. My grandson loves milk but has a protein intolerance and allergy to it, not lactose intolerance, plus oatmeal, glutens, cooked tomatoes, and so on. He gets sick enough to go to bed and at 26 won't grow out of it but seems to get worse.

    Why do you use flour? it only adds more calories? This use to be the poor man version when one could not afford cream, since you do add cream, flour is not needed or optional. I love your show but sometimes the ingridence work against health. I learn so much about food doing Keto and lost 73 lbs. no longer diabetic nor high blood pressure without being hungry. I still lover your show I think it is the two of you :)

      So just do it! No need to post that you are doing it. This channel is very obviously dedicated to a lot of " pressure cooking". I'm sure you can find lots that are not, and are dedicated to using "standard cookware".

      Your choice, of course! Personally, I don't have an instant pot - so, I just adapt an excellent recipe and still have access to all the other videos as well.
