Thank you! You might be able to use Pectin or carrageenan in place of them but I haven't tried this out so I'm not sure if it will work. Gelatin/agar agar is usually available on Amazon.
I haven't used these brands but any whipping cream with at least 40% fat content can be used in this recipe. Creams with lesser fat will not whip well.

Can you please tell me how you've melted the agar agar powder. I've bloomed 7gAgar : 50ml water for 10 mins and then tried melting the mixture in a double boiler low flame, it just turned hard, I again tried a fresh batch in the microwave this too failed, no matter what variation I try, I've tried all brands such as Purix , Meron almost everything, they always become hard and don't melt. What am I doing wrong ?
I think you might be using too little water for that much agar agar. I used 1/2 cup (120ml) water in the recipe to melt the agar agar and I’ve never had an issue. If you can consume gelatin, that might be a good option to try out because it is a lot less finicky than agar agar.

Agar agar needs to be boiled properly and then poured while still hot. It definitely needs longer than 10 minutes to set. I have more details on my blog post.
Can you clarify how much water to use with the 2.5 tsp. Agar agar? I tried to boil it using 1/2 cup per the recipe but it still came out thick. It didn’t mix well with the filling I made. It was also hard to find the Alphonso mango locally so I made my own pulp. I also used agar agar for the topping but used a different water ratio after realizing my error with the filling. The cake started sagging but it was delicious! The cake was gone in less than a day! It was rough around the edges because I used parchment paper since I didn’t have the cake collar but will definitely purchase a roll. I plan to make it again so the correct water measurement would be great if you can post it. Thank you!

I would still recommend using the same 1/2 cup of water but to make it easier to mix I'd recommend 2 things: 1. Use both the mango pulp and the water mixed together to dissolve and heat the agar agar. 2. After this mix has come up to a boil, add it to the cheesecake filling with your mixer running and while it is still hot and pourable. This should help it mix evenly. Letting it cool down will thicken it further making it harder to mix which is not the case with gelatin. Hope this helps! I usually include more tips on my website. The measurements seem a little off, 200g of crackers crushed in a 9 in pan results in a 20% of the volume of the pan. Do I have some of the numbers wrong?

Maybe your pan is shorter than mine? You will also need to make sure that the cookie crumbs are pressed down very firmly into the pan, otherwise the crust can fall apart.
