Hi I would like to suggest that you stir fry the curry paste with oil until fragrance first, before adding any veggies. You can also stir fry the paste with a little bit of coconut milk, instead of the oil too. That's how we used any kind of curry paste in Thailand :)

I actually do almost the exact same recipe as you do myself and I love it ^^ except that I do it the other way around: I first put in the veggies so that they can cook (with a bit of water to steam under a lid) and roast a bit afterwards, when they're close to being done I add the curry paste, seasoning and coconut milk :) but I gotta try it your way the next time ;) thanks for sharing this :)
Beth this has become my go to meal when I have visitors come and stay with me. I makes a lot (which covers more than one meal) and I can add cooked shrimp or chicken to it. The flavor is fabulous! I’m actually going to make it this weekend because it’s been awhile and this girl needs some Curry! 🤗

well usually in alot of thai restaurants, they put fish sauce in the curry. the curry paste itself is vegan, so although this isn't authentic curry, it still tastes just as good imo
