    I made this for Christmas, but substituted the jackfruit with artichoke hearts since I couldn't find any jackfruit nearby in time... but goodness this was heavenly. This was by far the best vegan Christmas centerpiece I've ever made, thank you for this fantastic recipe.
    It took a bit of effort but it was well worth it, I think I'll make this much more often. Just flawless.

    I made this for Christmas Eve dinner and it was extraordinary. All the guests raved about it, even those that heard the name and declared "I hate beets". I convinced them that not all beets taste the same and they loved this dish. It really is spectacular as the center of the table course. There are many components so there is significant prep but it's not hard and well worth the effort. Thanks for this great Christmas vegan option!

    Noticed your hob flame is quite orange. Our carbon monoxide alarm kept going off and a gas engineer came and told us the hob flame should always be blue (ours was orange like yours too until he fixed it). I know it can sometimes be due to just a bit of soot, thought I should mention it just in case!

    This is what the plant based community needs here in the States. An all-natural non-preservitive meal. So so so much more healthy than all the supermarket meat substitutes. I know I'm dreaming: "The HappyPear" in every city, burge and town!!!...
    In all seriousness, please consider expanding to the U.S.! Here in "Myrtle Beach, South Carolina" specifically, I am convinced that we need a "The Happy Pear" market here!

    I made this for a non vegan in Christmas day (2024) and it absolutely delivered!!! Amazingly tasty. Made the while thing on Christmas eve and then just banged it in the oven while I focused on my sides. Brilliant, brilliant recipe.

    I've been making your other Wellington & gravy & stuffing for Xmas for the last 3 years and it's always brought a lot of happy and shocked faces because it's all vegan, so I think this year I'll try this one.     Thank you for an amazing recipe and all the work and love you put to sharing this with us.
    Made this for Christmas dinner and it was a total hit with the family. This will be on my list of go to. Didn't have jackfruit in pantry and quickly replace with 100gr of vegan soy shred I had on hand.

    Excellent recipe, mouth is watering! Going to try it this year, replacing the HP wellington with the nut & couscous filling I've had for the last couple of years (gone but not forgotten!) Will do the gravy too, thanks a million lads!

    I made your dish with added sage and parsnips (from your other video) and it was really good. My only concern was the pastry was dry. I bought a commercial brand. Next time, should I brush each layer of filo pastry with olive oil, or do you have a receipt for filo pastry that is good?

    Can you make this ahead of time? Or make everything day before and assemble and cook the following day? I don’t think my family will allow me kitchen access for this long on Christmas Day but I would love love love to make it for them!

      I made their Wellington from last year (or a few years ago?) I made it the day before and covered it in foil to stop it burning when I was reheating it. Hope that helps!

    My family has enjoyed this recipe for years now!! The recipe on the website isn't the original but I've managed to track it down xx
    Ingredients;
    1 sheet of puff pastry - 320g
    Beet jackfruit filling;
    2 Tbsp olive oil
    400 g tin of jackfruit - drained rinsed, chopped, tough seeds removed (230g drained)
    200 g beetroot grated
    100 g carrot grated
    1 red onion
    1 large clove garlic
    200 g cashews
    4 sprigs of fresh thyme
    ½ tsp salt
    Spinach pancake;
    60 g self raising flour
    125 ml plant milk
    60 g baby spinach
    Pinch salt and pepper
    Mushroom duxelle;
    1 Tbsp oil
    250 g chestnut mushroom
    1 red onion
    ¼ tsp black pepper
    1 tbsp tamari
    ½ tsp dried thyme - or 2 sprigs of fresh
    ¼ tsp dried sage
    Instructions
    Preheat the oven to 180 C fan
    Add the cashew nuts to a baking tray and bake for 10 mins at 180 degrees until golden. Remove and set aside to cool.
    For the beet filling drain and rinse the Jackfruit, pick out any of the tough seeds and roughly chop the jackfruit. Grate the carrot and beetroot. Peel and finely chop the onion and garlic. Pick the thyme leaves from the stalk and chop. In a food processor, blitz the roasted cashews until they have the texture of coarse breadcrumbs, remove and set aside.
    .
    To make the beet filling; in a large flat non-stick pan, heat 2 Tbsp of oil over a medium heat, when hot add the onion and salt and cook for 2-3 minutes until it starts to soften, add the garlic and cook for a further minute. Add the carrot, beetroot and jackfruit and cook for 5 minutes until the veg is cooked. Add the chopped thyme and mix well. Remove from the pan into a bowl and pulse the beet mixture in the food processor just to bring it together, taking care not to blend too smooth as we want to keep some texture. Remove from the food processor. Chop the roasted cashew nuts so they are like bread crumb size and mix with the beet and jack fruit filling.
    For the mushrooms Duxelle, Peel and chop the onion. Chop the mushrooms into even sized pieces. Use the same pan as the beet mixture to make the mushroom duxelle. Heat 1 tbsp of oil over medium heat, add the onion, mushroom and salt and cook for 2-3 minutes until the mushrooms have reduced and the onion softened. Add the tamari, pepper and herbs and mix well and remove from the pan to the food processor and blend, again not too much so as to leave a little texture. Give the pan a quick clean for the pancakes.
    While the beetroot filling and mushroom mixture are cooling time to make the spinach pancake layers. In a blended blend together the pancake ingredients until smooth and a bright green colour..
    In the same pan over medium heat, heat a little oil, when the pan is hot add enough batter to cover the pan. Cook until the edges start to cook and release from the pan and the centre is cooked. We find a silicone spatula is great for turning pancakes. Make a second large pancake and set aside to cool.
    To assemble the wellington;
    Take the sheet of puff pastry and place it on a parchment paper lined baking tray
    First add the pancake on the pastry, it’s ok if they overlap slightly and just trim the edges within scissors to the same size as the pastry if needed.
    Add the cooled mushroom duxelle mixture and spread evenly over the pancakes, leaving approx 2-3 cm uncovered at the edges all the way around the pastry.
    In another piece of baking parchment, add your beet mixture along the centre of the paper and fold over and roll up the ends and roll it to become a sausage shape, take a moment to ensure it is super smooth and cylindrical. Carefully remove this sausage shaped beetroot filling and place on top of the mushroom duxelle. Double check the volume of filling so that the pastry can cover the full filling.
    Wrap the pastry tightly around the filling, the sealing at both ends like a parcel and flip over so that the seam side is on the bottom.
    Mark the top of the pastry with the back of a blunt knife in a criss cross design taking care not to cut through the pastry and brush with the non-dairy milk
    Bake in the oven for 30-35 mins at 180 C fan or until the pastry is golden brown all over.
    Garnish with fresh thyme sprigs and serve with all your favourite christmas sides! Enjoy

I declined due to my already failing health lupus and heart disease. I’m a single mother with two beautiful autistic children both are non verbal so things can be challenging for me at times. We are facing eviction this month. I know God will provide but please pray for us. God bless.

    Do warn your guests that when they use the restroom the red is all the beets and not that they have internal bleeding? Just asking because I freaked out the first time I went to the bathroom after I'd juiced a beet, almost called an ambulance. But this is disgusting. Eat meat or don't, stop trying to mimic meat. It's just gross.
