Edit: when I watched again he says carrots will add sweetness and it’s clearly shredded in the food processor but they must have accidentally edited out the part where they say how much carrot to use. I made this on dec 24 and it was amazing. I did have a problem finding anything but fresh chestnuts at the store. I roasted them myself according to the label directions from the bag. They remained way too hard even after 30 minutes in the oven so I would not use this ingredient again. I had to use 2 cans of crescent rolls in place of the puff pastry because I couldn’t find that in the store either. That worked out just fine though. The flavor was amazing and the texture was wonderful. 2 of my friends who were not vegan tried it and loved it too. Thanks so much, I think this will be a tradition every holiday season and I would make it even for a regular non-holiday dinner. Thanks so much for this amazing recipe!

I couldn’t find gluten-free puff pastry and didn’t make my own so I used a GF pie crust from Trader Joe’s, unfortunately they only sell them seasonally around the holidays, so stock up! I ended up rolling out one of the crust laying the duxelles and adding on top of my molded filling. It was amazing! This year I found GF puff pastry and am excited to be using puff pastry rather than pie crust. I’m also making an adaption of this recipe by adding seasoned impossible ground “meat” adding blitzed nuts (chestnuts, cashew and walnuts) sage, thyme, rosemary, veg and lentils. I am going to try to “pre-stuff” it by adding a layer of stuffing . The conversion for the temperature of 185* C is 365* F. Thank you for this recipe and all of the wonderful ones y’all do! @@MissRnH if its only for 1 person, id say maybe half the recipe to save waste. The middle stays soft and mushy, I blended mine in the food processor, I wouldn't do that again, id leave it the way it is outta the pan. And definitely use the knife he suggests 👍😅 enjoy cooking 🙂

3rd Vegan Christmas, first time making this. Best one I've made by far. So much more flavour than the one's I'd made previously.
Amazing recipe! Making it is quite time consuming, so I make a few at a time and pop them in the freezer - makes Sundays easy. Delicious!

Looks lovely. I have had a hard time finding vegan puff pastry. It is typically made with butter.
You might ask the puff in the video
The butter flavored ones I think. Normal, regular, puff pastry has none.
If you’re in the U.K look for a gluten free one it’s also vegan too.
