You honestly have me tearing up: thinking of people who are on a budget for Christmas - that's the spirit! Being alone on Christmas and on a budget, having something nice like this, really makes a difference! I made your Wellington in past years and it was such a highlight.
Honestly, you guys have helped so much with getting my parents more plant based! We grew up in Ireland and live in the US now ... However, I could show my mum a million American TH-cam recipe videos and nothing registers, but I show her one video with you guys and she's running out to buy everything to make the recipe!!! I send her all your videos now 😀 It really helps that you do the budget ones too, cuz Irish mammys can be real cheap, lol.
So I just prepared this whole meal for our Christmas dinner. It was amazing! I love how everything gets done at the same time, and in one hour we had all dishes on the table. Thank you sooo much for sharing, it was indeed delicious and super filling!
Looks great. You can just mix up the flour with some cold water before putting it in the gravy so you won't have to deal with the lumps of cooked flour.
If you can afford in add vegan red wine to the gravy, it makes it so special and tasty. If your in the UK most of Sainsbury own brand is vegan (just check the label) and pick up bottle for £5.
This recipe is perfect and I followed the instructions EXACTLY! The wellington was AMAZING and yes, add the extra soy sauce to make it extra-tasty! I cooked my potatoes and carrots in the same baking tray and I had the best result by slightly boil the potatoes first and add the carrots 20 mins afterwards and rotating the potatoes and the carrots once to make sure they cooked evenly on both sides. Yes, I cooked this meal twice in preparation to make sure Christmas went well... and it's such an AWESOME recipe!
Oh no! I thought this looked great & wanted to try it but I havent got a twin to help me shape the pastry so I suppose thats it then. They should have said you needed a twin right at the beginning!
Made this wellington a few times now but previously used rice or potatoes instead of cous cous and sometimes a different variety of vegetables, always good. This year I used the onions/garlic/carrots/parsnip base with roasted swede, lightly sauteed, mashed chick peas, chestnuts, roasted cashews and walnuts in shortcrust pastry. Best ever. Thank you.
Actually love the way you guys offer suggestions of alternatives for allergies, saves me time googling to see what I can swap in. My Christmas wishlist this year consists solely of an ecoegg, lush products and your cookbook.
i cannot believe this, i contacted you on instagram about the wellington you sell, sadly only in Ireland. You kindly rescued my christmas dinner telling me there is a wellington recipe on your Happy Pear website, tonight i logged on to youtube and was delighted and amazed to see you had done a wellington recipe, thank you, merry christmas
I love you guys! I made this meal today and it was BEYOND delicious. I made it with a gluten free vegan puff pastry (with my proprietary blend of "flour") and homemade vegan butter. Cheers!
Greetings my Vegan Brothers! This is perfect especially since finanances has been very tight as of late. This is going to be a fun one to try with my son (who is vegetarian) but is also LOVING vegan dishes even more! I would love to try to cook this with my son. You guys have encouraged me to cook more with him and now he is in love with tamari! heheheheeee. AND he is making ME food for work that is vegan! (im so happy) I have to ask though....what paper do you use in the oven with the wellington? I also have the challenge of only having a toaster oven as an oven for the regular oven we have is broken. One day, can you try to bake things in a toaster oven for those that have "oven challenges"? Much love! ♥ lishajoya
Looks fantastic as usual. Also, as a side note, with the gravy you can do the oil, add onion, then add flour, Stir and THEN add broth or water and seasoning. That way you NEVER have to strain the flour clumps out. They completely dissolve. If it needs to be thicker, mix flour and cold water mixed well in a cup and add it slowly to the already made gravy, while it's still simmering, until it gets as thick as you want it. Gravy is one of my specialties. 😊😊😉. Love all of your recipes!!! 👍🏼
This is our first vegan Christmas too and I’m cooking for a family of 5! Really wanted to make it special, but couldn’t figure out how till I found this video! I already made a veggie loaf and stuffing ahead (frozen now), but now I think I’ll turn the roast into a Wellington by wrapping it in dough. Then add the yummy looking carrots and cabbage as sides. Thanks for the next level ideas guys!
I love your channel, men! You are top notch food angels. Please never stop bringing your creative gifts to us. I'm poor as dirt 😁 lol-- so I appreciate all you do to show us that we can eat well for our bodies using natural options-- and still do our part for our planet-- EVEN if we are on a budget. I want you to know we APPRECIATE all the goodness you impart! 💛⭐🌛🌞✌💛
Thanks for this Xmas dinner recipe. I will go for it with some twists. I will replace couscous by potimarron (pumpkin kind), potatoes by chestnuts and I will mixed carrots and sweet potatoes fries. A little more expensive but not out of range. Thanks a lot !
So THIS is what I can do with my ($10) GF puff pastry for Christmas dinner. Looks amazing, tasty AND easy! Thanks so much and Happy Christmas to You and Yours. :)
Watching one brother cook: nice! Vegan food. Accidentally discovering them cooking together: THERE'S TWO OF THEM!? the happiest day of my life so far 🤩❤️ their cookbooks are smashing! Highly recommend.
Omg I made this pie today. Gosh its massive and delicious and would feed an army. And yes the gravy ( which I'd never normally use) was great too. I started with the pie allowing the ingredients to cool before wrapping in pastry then put all in the oven together. I hope it freezes after cooking theres a lot here. Happy new year to you both and thank you very much for all your inspiration
Hi guys I made this yesterday for some of us that are plantbased for Christmas dinner it is fabulous! I will regularly be making this for Sunday lunch, we have enough left for today too. Thank you.
Excellent!!!! That spot of maple syrup with the 🌶 in the cabbage looks like an absolute winner. Can’t wait to spring that on my vegan friends!!!! Thank you!
Hi guys love your channel ; really enjoying all the menus; thank god for you two; as a nurse ; born in Dublin, now a nurse in Melbourne Australia; where we are going into lockdown again; your meals are so easy and quick which is a bonus for me 🇦🇺❤️💙☘️☘️☘️
I've watched this so MUCH!!! I will make this for this xmas. I'm looking forward to it now 🤗 I think ye have converted me with the cabbage as well, a bit of green needed on the day 😋
Amazing! I can’t wait to try this, thank you so much. I’m new to living plant based, I can’t eat nuts, when you say replace with seeds, I’m wondering if you mean things like hemp and flax seeds? Great to find you both on TH-cam. Best wishes from north west England. Gez
At what stage can we freeze this ahead of time please? Edit....I froze the whole thing with the raw pastry, it cooked fine. I also made mini sausage type rolls, cooked them first then froze them, they were fine defrosted and warmed through!
I had to work on Thanksgiving last year, so I made this to take to work to share with my coworkers and everyone loved it even though they were not vegetarian. Thanks guys!
Wow guys this looks amazing. You are making me change my mind about xmas lunch. I will be the only vegan at my family dinner this year. Think this wellington will knock their socks off. Could I use pptato instead of parsnip? We dont really get parsnips here in cape town
Great spread. I love your Wellington however, I generally prepare mine with lentils rather than couscous because of my obsessive need to protein bulk my meals. Happy holidays!
Thank you! This will be my daughter, my grand baby Sadie (4) and my first vegan holiday! This will do so well! Happy & blessed holidays! From Dina at the NJshore/US
That is a beautiful looking meal. Thanks so much guys. Trying to get my kids to see that vegan can be yummy! Will definitely try this. Happy Holidays 🌲❤
I love your recipes and also you are a lot of fun! Happy New Year! I would like to ask you that if I can substitute the hot peppers you are putting in the cabbage for something else or just leave it with the ginger. Many blessings for you both and thank you for your great work!
I wanted to put my hand through the screen to taste it lol it looked amazing...TFS , for a no nonsense approach to cooking, hope you guys have a great Christmas 🤗🤗🤗
Suggestion, if you dissolve the flour in a little bit of cold water before adding it to the gravy, you don't have to strain the gravy afterwards ... Great recipes, can't wait to try them.
This looks amazeballs. I am totally going to use that pastry on my stuffing and see if it works out. You guys always give me great ideas. Happy Holidays.
This is amazing. I'm gonna do something similar next year. The store bought alternatives here in canada are $5+ alone, this would be so helpful and help me stay under budget. Definitely keeping this in mind for Ostara (Easter)
I cannot do better than my instant friend below, except, why all of a sudden all of that oil ... a bit of oil, bros, people hated me in school because i was a girl and mouthy with it, but seriously, i would use a sweet potato and use less time. The rest of your feast is brilliant. And tx forever; was a hard year for me but you guys cheered me up and all is well. Wishing you well and much much cheers for the season!!!!
Thanks you guys! I Made the wellington + Gravy yesterday and it was delicious! Even the cat approved of the gravy haha. My brother and his wife don’t like mushrooms, so this was a great recipe!
that looks very delicious. i made something similar last year but i had two oven, this year not. One question, do you put everything together in one oven?
You honestly have me tearing up: thinking of people who are on a budget for Christmas - that's the spirit! Being alone on Christmas and on a budget, having something nice like this, really makes a difference! I made your Wellington in past years and it was such a highlight.
this exact Wellington recipe? :)
@@KentuckyChicken2 No, the other one from two years ago. It is quite similar.
Honestly, you guys have helped so much with getting my parents more plant based! We grew up in Ireland and live in the US now ... That’s so cool to hear!! Thanks so much for sharing the love. Hopefully your Mam will like our next level Christmas Main, haha. ❤️❤️
Totally!!!!!!! Hard time of the year, and sometimes brilliant. Best wishes.

As a broke student with no blender, thank you so much
Listen Moo, no bother!! 😂😂
Ask around use a friends.
Get a cheap used one at garages sales thrift shop's a few bucks
So I just prepared this whole meal for our Christmas dinner. It was amazing! I love how everything gets done at the same time, and in one hour we had all dishes on the table. Thank you sooo much for sharing, it was indeed delicious and super filling!
how was the wellington? im tempted but the cous cous is putting me off haha
Looks great. You can just mix up the flour with some cold water before putting it in the gravy so you won't have to deal with the lumps of cooked flour.
or use a whisk, if you have one - great for removing lumps from white sauce too.
A jug full of maple! Glorious sight.
I love that you always nibble as you go along and then enjoy the prepared dish at the end. Just like the rest of us!
If you can afford in add vegan red wine to the gravy, it makes it so special and tasty. If your in the UK most of Sainsbury own brand is vegan (just check the label) and pick up bottle for £5.

Thanks! I’m going to make the wellington. Maybe I will add some lentils.
Great idea! :D
Excellent idea to add some protein! Plus it would be very tasty too.
Oh no! I thought this looked great & wanted to try it but I havent got a twin to help me shape the pastry so I suppose thats it then. They should have said you needed a twin right at the beginning!
Sarah Strong, you don't need a twin to help shape the pastry. You just need four hands instead of two! Thumbs up on your comment.
@@AdrienneAce2 Ah well. Thats ok then, just as soon as I find the second-hand shop I'll be fine.
Not just the pastry. I just need kitchen twin. Has to be a twin, not a helper. Explaining takes too long.
You guys are literally changing the world, one bowl at a time. Congratulations!

It’s the most beautiful thing I’ve ever seen, and it’s on a budget!..I’m not crying *sniff*.
That will be my first vegan christmas and thats how i imagined it :)
Me too 😍
mine too this year!
If I’m at your house, and you offer me wine, I’ll hold up my glass and say, “Just two tablespoons, please.”

You just gave me two tablespoons of inspiration for what to cook these days:)
Thank you people so much!
Looks delicious. How would you deal with gluten issues and the pastry?
You guys are Awesome! I'm making this for The Holiday Thanksgiving otherwise known as a regular day off!! Thanks for this, I will post pics to IG!!!
Looks absolutely delicious, I'll definitely have a go at that.
