It's probably because technology is now different. And they are still working out the kinks for data/script that governs which surface has how much adhesion. New engine, new problems, I guess.
Combat and movement in the first game was much snappier. It was more arcady for lack of a better word, but you felt much more in control of your character. I think the movement and combat are intentionally like this to somehow be more "realistic". Movement is my biggest bugbear because jumping up a cliff only to hit a small glitch and slide all the way back down is incredibly frustrating. I never feared jumping or falling off ledge in the first game, but in this one I'm always afraid my character will fall if I get to close to the edge.
Honestly the developers of this game are paradoxically both smart and stupid as hell. There are too many surfaces that are slippery. You can slip on surfaces that normally you wouldn't with boots, unless it's wet and too smooth of a surface. I don't think these japanese developers go out much.

It was NEVER this bad in the first Dragons Dogma and the devs need to fix this stupid shit like this that has no place being in any game.

I freaking hate the slide physics in this game, it us by far the worst part of the game after 70+ hours

I hate sliding in this game, when I was playing it, suffering from low FPS, I felt almost physical pain from endless sliding.
