    This is English Service, sometimes called Silver Service, where a server plates the food for each guest from a large platter of food, as shown in this video. In French Service, the server presents a platter with several portions of a dish, and the guests serve themselves; other servers follow with sauce or other items, which the guests also serve for themselves. There's a funny scene from 'Downton Abbey', season 3 episode 1, where the new footman, Alfred, following his training as a hotel waiter, tries to plate the food for the family in the style of Silver Service; Violet, stunned, says, "Can I do it?", and clueless Alfred answers, "If you wish, my lady, of course". Russian service involves presenting the food on large platters but then carving, saucing, and plating the food at a side table or gueridon before presenting it to the guests. American Service, a term encountered only in old books and sometimes called Restaurant Service, involves portioning and arranging each plate of food in the kitchen; the servers then bring a filled plate to each guest. Older French people often remark that nouvelle cuisine, which relies on plated food and mimics "vulgar" American Service, completely ruined the Russian Service that once characterized service at the best French restaurants.

    only 2 problems:
    the male waitor keeps shaking his hair, could lead to hairs falling in bad places.
    french service is done from the right, not from the left.

    You'd better carry the dishes with the left hand and serve "à l'anglaise" with the right hand, by the left side.

    am confused here. French service uses Gueridon, tableside where food is portioned out to plates, the best french service includes table side cooking like a flambe'. This is Russian service to us!

    The French do not put their hands in their laps. You keep your hands on the table even when being served. Putting your hands in your lap is an Anglo thing. Ce n'est pas acceptable. I realize its about the servers, but those being served should know how to be served.
