Thanks your asking. I fry immediately after mixing. Even though many „professional“ chefs recommend you to let is rest for a while, I find the result very delicious when cooking already right after mixing. What I usually do is prepare all the ingredients before I start cooking and the first thing is marinating the meat. So it has a few moments of rest while preparing the other ingredients. With the preparation your are good to go with the few minutes the dish is prepared in the pan by stir frying. Please let me know if this helps. 🫶

Hello, thanks for your wonderful feedback. You absolutely can use chicken instead of the beef. If you use chicken breast you can switch it in the recipe as it is. But you can also use boneless chicken thighs. I love them because they are highly forgiving and stay juicy and tender even when cooked a little longer. With chicken thighs you can also remove baking soda from the recipe. Does this make sense for you? Where are you from? Is seafood also an option for you?
