한국에는 미소랑 쇼유라멘 가게가 너무 적은게 아쉽네요 일본분들도 돈코츠같은거랑 과한 라멘은 생각보다 안찾는데 한국만 유독 돈코츠가 많은게 참 이해가 안가는....맛은 있지만 일본분들도 미소랑 쇼유잘하는 곳이 진짜 맛집인걸로 알아서

Maybe put time stamp up it helps viewers answer better. Uneducated guess, some paste, powder from many ingredients, eggs, spices, rice or other stock substance, sugar and MSG, Or miso, fish stock?🤷🇨🇦 Many things are possible depending on dish.

Looks great, but I stay away from foods that are directly torched with butane. They do that a lot in Asia. I read that 2-3 decades ago Japan was having trouble with a high rate in stomach cancer. It is all that cooking of food over grills and butane torching of foods. Those cooking methods produce carcinogens from what I have read in the literature.
Man this blowtorching thing is an epidemic.

1軒目の1つ目のラーメンは、脂っぽいハム肉が入っている。麺が玉子麺ではなく白い。ネギではなくニラ。
1軒目2つ目のラーメン、麺を茹ででからスリコギで麺をかき混ぜている。
麺は茹ですぎていてグニャグニャ。
1軒目3つ目のラーメン、これも麺茹ですぎてグニャグニャ、韓国海苔を使用、ネギとニラを入れている。（ネギとかニラは日本では薬味と言って臭みを消す野菜という考え方に基づいて使うので2つとも入れるということはあまりない）
など、日本風韓国ラーメンというのが正解ですね。
ただ日本のラーメンだって、中国のものをアレンジして作ったものなので、
韓国の人の口に合うのならこれで良いのではないでしょうか。

Я тоже часто не использую соль - многие удивляются потому что на их взгляд это безвкусно но поверь как готовят профи - это кулинарное искусство
Скорее всего это не соль, какая-то специя или смесь специи с солью.
Не знал что это так называется. Подобное у нас варят для свиней.
Кстати, стоимость ингредиентов для этих блюд очень приличная.
Ну а так это само собой, что для одного деликатесы, для другого корм для свиней или собак :))

Потому что не знают что в лапках и вообще ногах животных очень много полезного но потихоньку откуда-то узнают и тоже начинают готовить - благо интернет есть и много чему можно научиться
