  • Hokkien Braised Duck
    Ingredients:
    2 kg Duck
    5 slices ginger
    6 garlic
    1 lemongrass
    Pandan leaves
    Marinade Ingredients:
    1 tsp salt
    2 tsp sugar
    2 tsp five spice powder
    Sauce Ingredients
    2 tsp sugar
    5 tbsp dark soy sauce
    1 tbsp oyster sauce
    2 tsp five spice powder
    3 star anise
    8 cloves
    4 garlic
    4 slices ginger
    1 stick cinnamon
    1 tsp ground white pepper
    1 tsp salt
    8-10 small cubes rock sugar
    1 liter water
    Pandan leave
    Instructions:
    Preparation Method - Duck
    1. Clean the duck thoroughly include all innards In the duck cavity. Then blanch the duck for a few minutes in a wok of boiling water.
    2. Remove any remnants feathers. Rub all over with coarse salt, then rinse thoroughly.
    3. Pat dry and rub each of the marinade ingredients all over the duck and in the duck cavity.
    4. Marinate overnight or at least for 1-2 hours.
    5. Stuff the ginger,garlic, lemongrass and pandan leave into the cavity of the duck.
    Cooking Method
    1. Add the sugar in the wok and fry over low heat until it melts
    2. Once sugar turns golden, quickly add in the dark soy sauce and fry for 30 seconds over low heat.
    3. Next, place the whole duck in the wok and coat it evenly with the soy sauce mixture.
    4. Add in 1litre of water until the water covers the duck around three-quarters, and add in the rock sugar , five spice powder, star anise, cloves, ginger and cinnamon stick Bring back to a boil over high heat.
    5. Once boiling, turn the heat down to medium and braise the duck covered for 1.5 hours turning the duck over mid way. Turn the duck a few times towards the least 30 mins to ensure the bottom of the duck is not burnt as the sauce thickens.
    6. Turn off the heat and leave the duck immersed in the sauce for another hour if desired.
    7. Cut the duck into serving pieces and arrange on a serving platter. Then drizzle the sauce over the duck. Serve with rice and dipping sauce.
