How to cook Teochew Braised Duck - Delicious & succulent!

  • Scroll down for ingredients Anne does a great Teochew Braised Duck! She learnt to cook it as a teenager from a Teochew family who were tenants living in her family home. This is such an amazing dish, especially if you love duck! The duck meat is succulent, and the delicious spiced gravy gives it a perfect finish. She hopes that the younger generations will always remember how to cook this for their family and friends. Enjoy it with steamed rice. Yummy!
    Important note:
    Cooking time for duck varies depending on the size of duck, the age of duck, how high your flame is and how much water you put into the pot while braising. So please don't follow the cooking time exactly as stated in the video. The most important thing is to cook the duck until it is tender. Young duck will take 45-60 minutes to cook. Old duck with more fibrous meat will take about 1.5 hrs to tenderise. Anne prefers to braise young ducks as she feels the meat is tastier.
    Ingredients:
    Duck 2.5kg
    Marinate skin of duck with Light & Black Soy Sauce (just a small amount to cover a thin layer)
    Rub inside duck cavity with:
    Five Spice Powder 1 tsp
    Salt 1 tsp
    White pepper powder 1/2 tsp
    For the braising sauce:
    Brown sugar 2 tbsp
    Small onions/shallots 5, chopped roughly
    Galangal/Lengkuas 4 slices
    Garlic 5 cloves, crushed
    Star Anise 4 pcs
    Light soy sauce 2 tbsp
    Black soy sauce 1 1/2 tbsp
    Five Spice powder 1 tsp
    Knorr chicken powder 1 tsp
    Salt to taste

    Back home on Guam theres was an oriental kitchen that served this and I absolutely loved it! I’ve been away from my island for almost seven years and I just recently found out the restaurant back home exploded and business shut down💔 I’ve been trying for years to find out the name of this recipe but I guess I wasn’t doing enough research. I found your video yesterday so I decided to make your Teochew last night! It came out AMAZING! Soo soo delicious!!!!! Thank you so much!!!     This is sooo yummy, and I’m Teochew too so definitely will try making this dish during the upcoming CNY period. Just a few questions: that’s a fair bit of flipping and basting.. can give rough idea on how many minutes per flip? And did the duck cook for about 2 hours in total? 😄

      So sorry for missing your question! Cook for about 10-15 minutes after each flip. Cook on low fire. Yes, it can take about 2 hours to cook an old duck. Younger ducks can be done in 1-1.5 hours. It is quite difficult to give a definite cooking time. The most important thing is to use a chopstick and poke the meat to check for doneness. Hope you get to enjoy this Teochew duck!     May I ask what do you mean by black soy sauce ? Aren't all soy sauce black ? Do you mean dark soy sauce instead ? Also could I make this with only duck drumstick part instead of a whole duck since there's only me that's going to eat this dish =)

      Hi June, Black Soy Sauce is a Chinese Cooking Caramel. It is different from Dark Soy Sauce which has more of a salty flavour. Black Soy Sauce is used more as a colouring for Chinese cooking, and is a little sweet-ish. You can easily get it in supermarkets/sundry shops in Malaysia & Singapore. If you live abroad, you might only be able to get in certain Chinese supermarkets. If you cannot get Black Soy Sauce, you can just omit it. The duck will look a tad pale but the flavour shouldn’t be affected. Yes, you can cook just the drumsticks/legs - reduce the recipe accordingly. Hope you enjoy the duck! 💗
