I hope you personally read this someday. I was electrocuted 4 years ago and the recovery has been brutal. My nervous system was extremely effected and has taken so long to heal. Which means eating has been a struggle. I always loved to cook good, healthy meals but after the accident it was really challenging to eat anything. Lots of bouts of depression came with it all. Then my husband was deployed for 2 years and on and on. It's always been a fight in my life to pursue cooking, even in the most challenging of times. I stumbled upon your channel recently and have been so inspired. It's easy on my nervous system to watch your shows as watching at tv/videos has been a struggle for years because of the stimuli. Anyway, since watching, I've tried a couple dishes and feel that spark to keep going and keep cooking. Thank you so much for all the effort you have put into creating something really unique. It's a toss-up between this and the Mediterranean Style Pasta. For myself, I really want to try the seafood pasta recipe, but I live in the desert near Phoenix, Arizona, and it's almost impossible to get good, fresh seafood 😞. However, I'll try!!! I fell asleep watching your videos and woke up watching this! I must buy a pasta maker soon. Ex did not let me take it when we broke up because he knew it would upset me. And he never used it AND bought it for me as a birthday gift. I may just go buy one today!
You are very good, I always follow you from Italy and I often repeat your recipes. I would like to give you a piece of advice: after having rolled out the dough, before cutting the fettuccine here we let the dough rest for about 10-15 minutes, so that the tagliatelle are well dried and do not stick together. and in Italy... it's a crime to cook pesto... :)

Hi, You have great recipes and perfectly filmed with a wonderful dog but your pesto is a total disaster. Real pesto from Genoa is my favorite addition to pasta so it hurts me that you add lemon, flour and water. Italians would not forgive you ;) Best regards .
