My absolute favorite pasta is Lasagna. Clear second place are Canneloni (half filled with meat, half filled with ricotta. Distant third is Ravioli with nutmeg, spinach and ricotta.
My favorites: Non stuffed Pasta: 1. Rigatoni Bolognese 2. Penne or Rigatoni Putanesca 3. Spagetti aglio e olio with Gambas Stuffed Pasta 1. Raviolo all'uovo 2. Cannelloni filled with ricotta and ragu 3. Tortellini al Brodo (but only fresh broth)
Number one cauzuni - best ever! 2 pasta e fagioli, 3 Orechiette (or cavatelli or similar) with pomodorini and ricotta, 4 pasta with ragú, 5 spaghetti allo scoglio
1. Tagliatelle alla puttanesca, although Vincenzo's got me looking for fettucce now. 2. Bucatini aglio e oil, with anchovies and capers, with toasted seasoned bread crumbs. 3. Pasta e fagioli, because it's so easy to make, once a week in winter. 4. Cavatelli con broccoli. 5. Rigatoni alla Norma And two seasonal only: 6. Orecchiette pesto, with fresh basil, toasted pine nuts, garlic, pecorino. 7. Farfalle alla caprese salad, with campari tomatoes, fresh basil, fresh boccaccini, and one raw peeled garlic clove, the only thing cooked is the pasta. Ok, now I'm hungry. How can anyone pick just five?
My top besides yours is ricotta ravioli with the good sauce . It has to be home made ravioli! Then next I like ricotta gnocchi with the good sauce Vini. I make meat balls like no one else. I will take this recipe to the grave. I've never seen anyone making meat balls the way I do. I searched thousands of recipes. Keep it simple!!! Right Vini
Vincenzo, I have a request. I'm half Sicilian, and want to get back to my roots, so I've been trying Italian recipes I've never had before. Would you consider a series of videos of traditional foods eaten for each holiday? Plus the recipes, of course. It would be fun and very helpful. Blessings to you and your family!!
Thank you for your request! 🇮🇹❤️ I'll definitely consider creating a series of traditional Italian holiday recipes. Stay tuned, and blessings to you and your family too! 😊👨🍳🎉
There's a terrific book out, "Celebrating Italy," that is all about the traditions and recipes. The recipes have marvelous names, like a cookie named St. Agatha's tits to honor the Saint who cut her breasts off to make herself less desirable to men.
Aglio e Olio will always be my top 1, because you just can't beat the flavor that's packed into such a cheap dish. Also, once I mastered it (it's got a lot more nuance than I expected) it remained a staple in our house
Aglio e Olio is a classic for a reason! 😋🇮🇹 The simplicity and depth of flavor make it a timeless favorite. Mastering it is a true culinary achievement! 👨🍳👌
I could honestly eat Aglio e Olio every day!! I love playing with this dish but yes, I totally agree it's sooo simple but hard to master, remember always use a really good Spaghetti and fresh Garlic and Parsley! I love Garofalo, Voiello and La Molisana pasta, they are all excellent brands and honestly you can't go wrong!!! I bloody hate Brexit 🤬🤬🤬, importing the most amazing Pasta from Italy used to be so easy but now it's so much more expensive and that's no fault of the Italians! Thank you Aldi, you are very hit and miss but you do get awesome pasta every now and again, for a very reasonable price!! Just watch people eat this for the first time, it's so rewarding!!!!! They always want it again!! 😘👌🥰🤯
I must say I am a pasta lover and could eat it for breakfast lunch or dinner. Of course my Dr.. would have a cow since I can't have a lot of starchy food. I will just have to make smaller portions.. I am hooked on how you cook and I can't get enough of your videos.. I have to say for 60 yrs I was never able to eat red sauce because of all the other ingredients that was put in the cans of tomato and sauce.. Watching your video on how to make homemade sauce has kept me in my kitchen for days making and storing for later... Again . Thank you for all the wonderful recipes.. Keep them coming.
I’d like to thank you for all the authentic dishes I was able to make. I live in the US and thanks to you I was able to cook Italian dishes that reminded me of nonna.
I really love the Pasta al Limone recipe. At home we usually cook some dish very close to it. It is basically the same but the mint is replaced by fried zucchini. That is very delicious, too.
That sounds like a delicious variation! Replacing mint with fried zucchini in Pasta al Limone is a tasty twist. It's always fun to experiment with different ingredients while keeping the essence of the dish intact. Buon appetito! 🍋🍝👨🍳🇮🇹
I have to say, although a lot of pastas are available in the Netherlands, the actual recipes are not that common, at all! Simplicity with sauce in a jar, and usually on top (yes, really), it surely opened my eyes to see how much is possible, and how much the dish is improved by simply changing the recipe to properly include the sauce. Thank you!
A couple of years ago an Italian national showed me how to make Spaghetti al Limone, which I hadn't heard of. His version used panna da cucina, which I guess is basically cream. That seemed fine at the time, but I am very glad to see your version here without cream. I'll be trying it as soon as lemons are in season.
I'm glad you found a version of Spaghetti al Limone that suits your preferences! It's a delicious pasta dish that highlights the bright and zesty flavors of lemons. Using fresh lemon juice and zest, along with other simple ingredients, is a classic and authentic way to make it. Enjoy making and savoring this dish when lemons are in season-it's sure to be a refreshing and delightful meal! 🍋🇮🇹🍝😋
Vincenzo, this video made me so hungry and I could´nt even tell you which one of your recepies I preferre. They all look stunning. However, thre are some pasta dishes that use fried breadcrumbs, which I´ve never attempted. Maybe you would consider introducing them to us?🤩
Yessss! Vini. It was really hard to choose between gnocchi and clams. In the end I'll take the clams too Vini. What a rough life we Italians have choosing all of this fantastic food! LOL.
Haha, you're absolutely right! Choosing between all those fantastic Italian dishes can be a delightful dilemma. Enjoy both the gnocchi and the clams, and savor the deliciousness of Italian cuisine! 🍝🇮🇹😄
OMG...I can see why you find it hard to choose the best dish! I want to very much try the clam dish! I've made the Nonas spaghetti! I will not make spaghetti any other way! If you make large meatballs, use them on a sandwich! The sauce is great with a little or alot mostserlla cheese and parmasono.
I've seen some of my favorites passing by and here is my Top 5: 5 - Tagliatelle Carbonara 4 - Spaghetti Bolognese (Ragu) 3 - Penne all'Arrabiata 2 - Linguine alle Vongole 1 - Spaghetti Aglio Olio e Peperoncino 🤤 The carbonara and ragu, those I've made better thanks to your video's, so thanks for that and keep up your video's on how to make the best Italian dishes...
Your top 5 Italian pasta choices sound absolutely delicious! I'm delighted to hear that my videos have helped you improve your Carbonara and Ragu skills. Thank you for the support, and I'll definitely keep sharing more Italian recipes. Buon appetito! 🍝🇮🇹😊
Love your videos Vincenzo! I make your spaghetti all a pomodoro all the time and it’s always a hit with my family! Only use fresh ingredients and ALWAYS mix the pasta with the sauce.
You're very welcome! 😄🍋 I hope making and enjoying this lemon pasta brings back wonderful memories from your childhood. It's a delightful and refreshing dish. Buon appetito! 🇮🇹👨🍳🍝❤️😋
Love your videos! I've found so much inspiration here and I've learned many new recipes for dishes I didn't know existed. My favorite is probably Pasta a la Norcina, follwed closely by Pasta al Limone. I hope to try Spaghetti al Assassina next
Thank you for your kind words! I'm delighted to hear that you've found inspiration and learned new recipes from the videos. Pasta a la Norcina, Pasta al Limone, and Spaghetti al Assassina all sound intriguing and delicious. Enjoy your culinary adventures, and happy cooking! 🍝🇮🇹😊
Great video. Can’t wait to try this awesome technique for carbonara. Loved all the recipes though, and vongole is one of our faves. So many delicious choices….thank you!
I'm glad to hear that you enjoyed the video and found the carbonara technique interesting! Vongole and the other recipes are also delicious choices. You're very welcome, and happy cooking! 🍝😊🇮🇹
You're very welcome, my dear friend! 😊 I'm thrilled to hear that you find the pasta dishes delicious. If you have any more questions or need more recipes, feel free to ask. Buon appetito! 🍝🇮🇹👨🍳👍👍👍👍👍
Great choices! 🍝🇮🇹 Penne Arrabbiata, Spaghetti Carbonara, Tortellini with Browned Butter and Sage, Spaghetti Bolognese, and Gnocchi with Tomato and Basil Sauce are all delicious Italian dishes! Buon appetito! 😋👌🇮🇹
I used to be a chef 20 or more years ago. I enjoy food. Since I've ended up being a nurse. 12 hr shifts. 1 to 2 hrs travelling depending on where I'm sent. Time and life have got in the way. Now I'm in the middle of both a curse and a blessing. Used to doing 60to 80 hrs a week plus mental amounts of travelling. Last year leave my house 6pm get home 945 am. No time to cook or breathe. But this year has been crazy . Work drying up. Most of the places I've worked are fully staffed.im lucky to do 2 shifts a week. Terrible for paying the bills. But other good side I'm back in love with food. The food I know is French, I love it. But. ...... what I love more yhan znything is Italian food. I know much much less about it. But love it. Love your videos. If I win the lotto I'd love to travel top to bottom of Italy. With time to enjoy the food and culture. Like the rich folks from UK did many years ago.... the grand tour 😂
I knew right from the start pasta alle vongole was going to take the cake 😂 Vincenzo, I don't think i've mentioned it before but the music you pick for your videos perfectly complements the goodness of your recipes 👌🏽 the way that carbonara dish spun to the sounds of italian opéra was glorious !!
Haha! 😄 Pasta alle vongole is a classic favorite. Grazie mille for your kind words about the music in my videos! 🎶 I try to create an immersive experience, and I'm delighted to hear you enjoyed it. More delicious recipes and music to come! 👨🍳🍝🇮🇹🎵👌
Carbonara and Lakme', perfecto! My favorite! Oh, but pasta with clams?!? Yes, positively, linguine with clams, my all-time favorite. Must agree with you, Vincenzo, this is the ultimate pasta. Makes me weep for those who don't realize how simply wonderful this dish is.
I couldn't agree more! 😄 Carbonara and linguine with clams are indeed fantastic pasta dishes, each with its unique and delicious flavors. It's always a joy to hear from someone who appreciates the simplicity and wonderful taste of linguine with clams. Italian cuisine has a way of capturing the heart and palate. Buon appetito! 🇮🇹🍝👨🍳😋
Absolutely love the #2 with your nonna... definitely going to try it! my nonna is second generation Italian, but strangely enough, didn't cook Italian dishes. Thank you for bringing the traditional Italian pasta dishes to my life, and love the way you incorporate the "cream" into the dishes. New to your channel, and loving watching your video's. God bless and once again, grazie!
Thank you! 🍝😊 Creating creamy sauces without using cream is a wonderful way to enjoy rich flavors while keeping it a bit healthier. I'm glad you appreciate it! 🇮🇹👨🍳😋
Vincenzo, your childhood pasta with tuna has become one of our favorites. It’s impossible to explain how it can be so good but it is. The quality of the tuna is super important so it doesn’t fall apart into a mush.
Superb choices Vincenzo! 👌 Here are mine: 1. Spaghettoni allo scoglio 2. Spaghetti alla puttanesca 3. Tagliatelle al ragù di carne 4. Linguine alle vongole veraci 5. Pasta e fagioli
Pasta every day sounds like a delicious plan! Homemade pasta is a rewarding skill to master, and it's so worth it. Enjoy your pasta-making journey! 🍝👨🍳🇮🇹😋
Gnocchi are a wonderful choice! They have a delightful texture and can be paired with a variety of sauces. You're welcome, and enjoy your pasta adventures! 😊🍝🇮🇹👍
My 2 🎉favorites are the Lemon pasta and the Spaghetti Alle Vongole! Although, as an Italian, my 2 personal favorite pastas I like to cook are Spaghetti Alle Vongole and Pesto Genovese I loved watching the video: beautiful job, fabulous, inspiring!
We have just finished eating the second recipe Vincenso! I have to say it was amazing! Fresh herbs from the garden and quality Italian indigents! I should say Molto bene! Thank you for the recipe! Everyone had a second plate 😃
Vicenzo caro mio...love your channel. I guessed 4 of the 5 before watching: I didn't get the gnocchi because I didn't think of that as a pasta. My substitute would be spaghetti alla pesto. THANK YOU for the tiny meatballs; your Nonna was right and all the detractors are just lazy. We love to make these with white veal in a white wine tarragon sauce. But about your pasta alle vongole, I had to laugh. Yours is so elegant. We have eaten mountains of this on the beaches of Liguria, the villages of Cinque Terre, the micro clams pulled from the sea, boiled with oil and wine and herbs in a pan on an open fire, and then just tossed with great platters of garlicky, lemony spaghetti or linguine and fresh parsley. Sort of pasta al limone mixed with clams. It could take an hour (and a couple of bottles of wine) to eat, taking each tiny vongole out of its shell and savoring it with a forkful of pasta. The most romantic dish on the planet, on a hot Italian seashore. No arranging required. By the way, the best Valentine's Day or lovers' midnight pasta is the pasta al limone topped with caviar.
I'll try the lemon pasta. I made up a recipe with mini farfalle, diced chicken, 'ceci' peas, toasted pine nuts, capers, artichoke hearts, some garlic, black pepper, dried oregano, olive oil, parmesan cheese, and a lotta lemon. I'll try the fresh mint sometime. My lemony pasta dish is more on the oily side, too. I often sprinkle the cheese on top after it's ready rather than stirring it in.
Great choices Vincenzo, Amatriciana is my favourite, #2 Tagliatelle Bolognese, #3 Beef ravioli in a tomato sauce with basil, #4 I know it's unheard of in Italy but chicken linguine and #5 spaghetti carbonara
Those are fantastic choices! 🍝🇮🇹 Amatriciana, Tagliatelle Bolognese, Beef Ravioli, Chicken Linguine, and Spaghetti Carbonara - all delicious Italian classics! 😋👌
So appreciate this video and all the cooking tips I learned here. ❤ First on my list is the mini meatballs. If I get real brave I’m going to make Nona’s potato gnocchi ⭐️ So far everything I have made using your recipes have been my favorites ❣️
Thank you so much for your kind words and support! 😊❤️ I'm thrilled to hear that you've been enjoying the recipes and learning cooking tips. You can do it - those mini meatballs and Nona's potato gnocchi will turn out fantastic! 🇮🇹🍝👨🍳
I can’t wait to try spaghetti with mini meatballs 😋 before I have never wanted to try it because spaghetti with big meatballs just doesn’t look nice or practical to eat 😖
Bravo, thank you for the inspiration, especially the recipes! I wrote down all the ingredients for the preparation and we'll go shopping on Thursday. It's just brilliant to conjure up such delicious food from so few ingredients, especially the lime pasta made me very curious. And the best thing is the ingredients don't cost that much but I have to admit that I can't make the recipe with the mussels because seafood costs an outrageous amount here. I would also like to give an update because my child has asked for double portions the last two times even though he is not a big eater 😚👌
19:37 Carbonara mmm so that’s how it’s done, yes yum …. 21:19 awesome thankyou Nonna…. I need to watch more about different Pastas , all these were mouth wateringly good. I’ve always wanted to know how , 👍… Please Vincenzo which sauces for which pastas. I understand now the cheese is the cream in Carbonara, . Who better to learn how to cook Italian food than off an Italian. Yum so good
I'm glad to hear that you find the pasta dish appealing, even if you're not a fan of seafood. Italian cuisine offers a wide range of pasta options to suit various tastes, so you can always customize the ingredients to your preferences. Enjoy your pasta adventures! 🍝🇮🇹😊
try it mate, that one is my favourite of all times too, clams are simply delicious. find a good fishmonger, don't buy canned or brined stuff, you wont regret it!
If you don't like seafood, try freshwater clams :) I met people who lived in a van by the lake near me, who would dive for them every day. "If this van's a-rockin', don't come a-knockin'' " Also, our Zebra mussels here in the US need to be harvested instead of poisoned. Putting poison into the environment is counterproductive. But perhaps you meant that you don't like mollusks in general.
Fantastic dishes Chef...I love Bucatini, Tagliatelle, Pappardelle, Capellini and Paccheri...Lived in Italy and loved the people, the country and the foods...and Vincenzo, Merry Christmas to you and your family.
Im from Germany and i recieved guanciale and peccorino from a guy whos working with me. Hes from Sizilia so i told him to get me this stuff to make Spaghetti Carbonara originale like you do it .Ive used the same recipe like you Vincenzo it was soo unbelievable tasty ❤
That's wonderful to hear! 😄 It must have been a truly authentic and delicious experience making and enjoying Spaghetti Carbonara with guanciale and pecorino from Sicily. Italian ingredients can make a significant difference in the flavor and authenticity of Italian dishes. I'm delighted to know you enjoyed it so much. Keep exploring Italian cuisine, and buon appetito! 🇮🇹🍝👨🍳👌😋
I'm glad to hear you're excited and hungry! Italian pasta dishes have a way of tantalizing the taste buds. Enjoy watching and exploring the delicious recipes! 🇮🇹🍝😊
I'm thrilled to hear that you're addicted to my Bolognese recipe! 🍝😃 It's a classic favorite for a reason. Keep enjoying those delicious bowls of pasta! 🇮🇹👨🍳👌
Dude, beautiful video, beautiful Nonna. The food looks excellent. I hope you do a video just like this about your favorite Italian Christmas dishes. 🎄 Merry Christmas man.
Beautiful! Thank you! I like your number 1, pasta spaghetti vongole and lasagna. haven't tried carbonara yet or gnocchi. thank you again! beautiful. you and your cooking are like dreamboats floating across the sea. thank you!
Thank you so much! 😊 I'm glad you enjoyed the video, and trying one new Italian recipe each week sounds like a delicious plan. Buon appetito on your culinary journey! 🇮🇹👨🍳🍝👌😋

fantastic. Thanks for this inspiring and informative vid Vincenzo. I recently made my first bolognese sauce. Gonna have a go at the Pasta al limone, carbonara, then the meatball spaghetti. Thanks again. God bless
You're very welcome! 😄👍 I'm thrilled to hear that your wife loved the Pasta al Limone. Italian cuisine has a way of bringing joy to the table. If you ever need more recipes or tips, feel free to reach out. Buon appetito! 🍽️🇮🇹😋❤️
I'm delighted to hear that you enjoy lemon pasta inspired by my videos! 😄🍋 Pasta with tomato, salami, and artichokes sounds like a flavorful combination. Italian cuisine offers such a diverse range of delicious dishes to explore. Buon appetito! 🇮🇹🍝😋
Watching this while eating my own homemade lasagna. Honestly, who doesn't love lasagna? Think he was trying to choose 5 pastas that aren't to cliche, or technically a casserole.
Pasta al limone really surprised me, I never had it. I was in Amalfi in the 90s (almost got adopted by a restaurant owner back then), but in all my years the combination lemon, mint and pasta never occurred to me. Thanks for the inspiration, I'll give it a try (in the spring/summer, when I got fresh herbs again). And homemade gnocci... man, it's a long, long, long time since I made them and they were fabulous (followed Gennaro Contaldos ricotta dumplings recipe). That's a big trip down memory lane... gotta make that soon, maybe together with my girlfriend and her girls, a little family project :) My personal favourites... 1: Spaghetti Amatriciana 2: Spaghetti/Linguine Vongole (unfortunately, I don't get fresh and good Vongole very often - and my girlfriend doesn't like anything living in water) 3: Lasagne 4: Spaghetti / Linguine Bolognese 5: Pasta verde with a ham / peas / creamsauce and a healthy dash of nutmeg. I know, it's not italian (at least not to my knowledge, please correct me if I'm wrong), but it's a dish my mother made and it's one of my comfort foods.
Tagliolini al tartufo bianco is indeed a luxurious and incredibly delicious pasta dish, perfect for special occasions or indulgent treats. The delicate truffle flavor adds a unique and exquisite touch to the meal. It's a fantastic choice for those moments when you want to savor something truly special. 🍝🇮🇹😋
Rigatoni Amatriciana, Penne puttanesca, gnocchi with walnut and brown butter, black pepper fettuccine with oyster mushrooms duck and orange cream, porcini pappardelle with rabbit ragout.
Excellent choices, though my mixed meat ragu for me is my favourite. It takes leftover cuts from trimming briskets, pork butts and pork ribs and make a ragu using soffritto, tomatoes, red wine, parsley and basil served with strozzapreti. Gnocchi is my #2 mainly for sentimental reasons, it was the thing Nonna perfected and has been handed down to now our kids know how to make it now. We can use sage and butter, pesto or even bolognese sauce works well. #3 is another one of Nonna's, she took olio e aglio and added anchovies. Something I loved as a kid growing up and one I still love in my 40's. I know Vincenzo you are not the biggest fan of anchovy, I personally love it. #4 is Arrabbiata Calabrese. I always enjoyed Arrabbiata but it was not a top top favourite of mine until I discovered nduja. Now I can't get enough of the stuff. #5 is Carbonara, a classic for a reason. I was an adult when I tasted this proper for the first time, as this was something Nonna didn't ever make, she was from rural Veneto so not really that proficient in Roman dishes, I never liked the cream crap that you get in restaurants but when I tried it for the first time proper I was blown away.
Your homemade mixed meat ragu sounds absolutely mouthwatering! It's wonderful to hear about the family traditions and recipes passed down from Nonna. Gnocchi with sage and butter, olio e aglio with anchovies, Arrabbiata with nduja, and discovering the true Carbonara are all culinary adventures. Italian cuisine truly has a world of flavors to offer! 🍝🇮🇹😊
You're very welcome! 😊 I'm delighted to hear that you enjoyed the recipes. If you ever have more questions or need culinary inspiration, feel free to reach out. Buon appetito! 🇮🇹👨🍳🍝👌😋
I don’t have one favorite, but I had ravioli with fish, cheese and bread filling and they were delicious. The pasta itself was made with some wine, great stuff.
Mmm.... this was amazing to watch! My #1 is also linguine vongole! My #2 is cacio e pepe. My #3 is spaghetti al tonno. My #4 is tortelloni pesto. My #5 is also spaghetti al limone. ❤
I'm delighted to hear that you enjoyed watching! 🍝🇮🇹 Your top 5 pasta choices are fantastic, and it's wonderful to see the love for Italian classics like Linguine Vongole, Cacio e Pepe, and Spaghetti al Limone. Tortelloni Pesto and Spaghetti al Tonno add a delicious variety to your list. Buon appetito! 😄🍽️😋🇮🇹❤️
That's a fantastic goal! 🍝🇮🇹 Exploring and trying different pasta dishes is a delightful culinary adventure. If you ever need recipes or tips, feel free to reach out. Enjoy your journey through the world of Italian pasta! Buon appetito! 😄🍽️😋👨🍳👩🍳❤️
❤Spaghetti and meatballs,❤ linguine Alfredo, ❤ baked ziti, ❤ fresh cheese and potato pierogi with browned butter,, ❤my nonna (baba!) used to make me rotelle wheels pasta and my godmother made me angel food cake dyed my favorite color to go with it... i loved it.❤❤❤ bonus... i also love italian wedding soup❤❤❤
6:40 Spaghetti with big meatballs is an American thing, but spaghetti with teeny meatballs is an Italian thing indeed. And this is where the discussion sometimes arises where people say that spaghetti with meatballs don't exist in Italy. Of course they don't exist with big "American-style" meatballs, but they have always existed with teeny meatballs. Big meatballs in tomato sauce we make them as a second course and with the sauce we season the pasta.
You're absolutely right! The concept of spaghetti with meatballs does have variations between Italian and American traditions. In Italy, it's often those delicious teeny meatballs (polpettine) that are paired with pasta, while large meatballs in tomato sauce may be served as a separate course. It's a great example of how regional and cultural differences influence the interpretation of dishes. Grazie for sharing this insight! 🍝🇮🇹😊
pasta al limone, remind me as a child always spent our holiday in Limone sul Garda...same place same family overthere for decades.... thats why I eat Italian 5 times a week :D
That's such a wonderful connection! 😃🇮🇹 It's no wonder you enjoy Italian cuisine so much, especially Pasta al Limone. It must bring back cherished memories. If you ever want to chat more about Italian food or need recipe ideas, just let me know. Buon appetito! 🍝🍽️😋🌞
Salmon,Al Limone, creamy mushrooms, pomodori, broccoli. Gennaro taught me the joy of cooking. I‘m not from Italy but I want those dishes authentic. Italian cuisine is so fresh, healthy, simple and delicious that way.
My five faves right now, in reverse order, are: 5) Pasta e Fagioli 4) Bigoli in Salsa 3) Tagliatelle Carbonara 2) Pappardelle Bolognese 1) Pasta Puttanesca (any flat noodle)
What are your top 5 Favorite Pastas?
My absolute favorite pasta is Lasagna. Clear second place are Canneloni (half filled with meat, half filled with ricotta. Distant third is Ravioli with nutmeg, spinach and ricotta.
My favorites:
Non stuffed Pasta:
1. Rigatoni Bolognese 2. Penne or Rigatoni Putanesca 3. Spagetti aglio e olio with Gambas
Stuffed Pasta
5. Rigatoni alla Norma
And two seasonal only:
I'm coming over. That's one of my favorites too and I'm wondering what you're doing with yours
I was surprised how easy carbonara was until I made it, cement like cheese and egg into a cream in half a minute or less.
I could honestly eat Aglio e Olio every day!! I love playing with this dish but yes, I totally agree it's sooo simple but hard to master, remember always use a really good Spaghetti and fresh Garlic and Parsley! Yessss!
Clams, gnocchi is just fancy mashed potatoes
@@coryheckler2354yeah, but make the meatballs in the oven, sorry Nona but much better caramelized and perfectly shsped. Try it, THEN comment...
Vincenzo, you made me change the way I prepare Italian dishes. You made my life better. Thank you. Merry Christmas!
I've seen some of my favorites passing by and here is my Top 5:
5 - Tagliatelle Carbonara
4 - Spaghetti Bolognese (Ragu)
3 - Penne all'Arrabiata
2 - Linguine alle Vongole
1 - Spaghetti Aglio Olio e Peperoncino 🤤
The carbonara and ragu, those I've made better thanks to your video's, so thanks for that and keep up your video's on how to make the best Italian dishes...

This was fantastic! Thanks for keeping us in the loop with the cooking time, that really helps.
You're very welcome! I'm glad to hear that the cooking time tips were helpful. Happy cooking! 😊👨🍳🇮🇹
Love your videos Vincenzo! I make your spaghetti all a pomodoro all the time and it’s always a hit with my family! Only use fresh ingredients and ALWAYS mix the pasta with the sauce.
Thank you! 🍝🍅 So glad your family enjoys my spaghetti al pomodoro. Fresh ingredients and mixing the sauce with pasta are key! 😊👌
A phrase we have is ‘bring the pasta to the sauce not the sauce to the pasta’ 😂 (which means mix it don’t just put the sauce on top)
Oh my! I haven’t had lemon pasta since I was a kid! Thanks for sharing your recipe! ❤
You're very welcome! 😄🍋 I hope making and enjoying this lemon pasta brings back wonderful memories from your childhood. It's a delightful and refreshing dish. Buon appetito! 🇮🇹👨🍳🍝❤️😋
His instructions are excellent -- clear and concise. Thank you.
Love your videos! I've found so much inspiration here and I've learned many new recipes for dishes I didn't know existed. My favorite is probably Pasta a la Norcina, follwed closely by Pasta al Limone. I hope to try Spaghetti al Assassina next

Love all of these- caccia e Pepe is one of my favourites as well! Grazie for a great video😘!
Grazie mille! 😘 I'm thrilled to hear that you love Cacio e Pepe and enjoyed the video. Your support means a lot! 🇮🇹🍝👨🍳😊

Nevermind... flower duet, delibes. Very nice. Nice pasta too :).
Omg. I made the pasta limone exactly like you said and it was wonderful. My italian husband loved it. You are right...no cream!
Grazie mille! 🍝🇮🇹 Spaghetti alle Vongole is indeed a classic and delicious choice. I'm glad you enjoyed the video and recipes. Buon appetito! 😋👨🍳
How generous of you. I’m going to start with gnocchi. (I’ve never had gnocchi before.) Next the carbonara. Simple, yet profoundly rich!🤗
Vincenzo, your childhood pasta with tuna has become one of our favorites. It’s impossible to explain how it can be so good but it is. The quality of the tuna is super important so it doesn’t fall apart into a mush.
Some great choices, and I liked the balance this year! (and all the trips with great guests)
Thank you! 😊👍 I'm delighted you enjoyed the balance of recipes and guest appearances this year. More delicious content coming your way! 🎉🇮🇹
Superb choices Vincenzo! 👌
Here are mine:
1. Spaghettoni allo scoglio
2. Spaghetti alla puttanesca
3. Tagliatelle al ragù di carne
4. Linguine alle vongole veraci
5. Pasta e fagioli
I could probably eat pasta every day!!! Can’t wait to learn how to make it homemade!!!!!
Pasta every day sounds like a delicious plan! Homemade pasta is a rewarding skill to master, and it's so worth it. Enjoy your pasta-making journey! 🍝👨🍳🇮🇹😋
I Love em all but I am leaning towards the Gnocchi. 😊 Thanks Vincenzo👍
Gnocchi are a wonderful choice! They have a delightful texture and can be paired with a variety of sauces. You're welcome, and enjoy your pasta adventures! 😊🍝🇮🇹👍
You can tell that he doesn't have to clean the kitchen himself. 😄
I should say
Molto bene!
Wow, sounds like an incredible plan! Enjoy every flavorful bite, and if you ever want to share more culinary adventures, I'm here! Happy cooking!

I like pasta alfredo with parmigiano reggiano and butter, it is so simple but so delicious!
Absolutely! Simple can be incredibly delicious. Pasta Alfredo with Parmigiano Reggiano and butter is a classic comfort food. 😋🍝🧀👌
Yum so good
This video allowed me to learn how tomprepare the RIGHT Carbonara! Thank you Vincenzo!
I never used a steam pot under my pan….BRAVO!….what a great idea for carbonara…..my favorite!
I don't like seafood, but that last pasta dish looks amazing.
What a lovely Italian family
Oh, my goodness, that lemon pasta looks so delicious. I will make it!!!! Thank you so much Vincenzo!
Fantastic dishes Chef...I love Bucatini, Tagliatelle, Pappardelle, Capellini and Paccheri...Lived in Italy and loved the people, the country and the foods...and Vincenzo, Merry Christmas to you and your family.

The fact that Lasagna is not one of the 5 shows you that even some Italians get pasta wrong.
That's a big trip down memory lane... gotta make that soon, maybe together with my girlfriend and her girls, a little family project :)
My personal favourites...
1: Spaghetti Amatriciana
2: Spaghetti/Linguine Vongole (unfortunately, I don't get fresh and good Vongole very often - and my girlfriend doesn't like anything living in water)
3: Lasagne
4: Spaghetti / Linguine Bolognese
5: Pasta verde with a ham / peas / creamsauce and a healthy dash of nutmeg. I know, it's not italian (at least not to my knowledge, please correct me if I'm wrong), but it's a dish my mother made and it's one of my comfort foods.
Nice choices . One of my favourite is tagliolini al tartufo bianco. Not an everyday pasta , more for special occasions , but boy is it good!
Depending on the seasons, I like pasta al limone in summer, Pasta alle Vongole more in the cold months, then with the whole shells, like vacation.
Incredible video. Perfection is not a Myth...
