Instant Coconut Ladoo Recipe

  • Shik's Kitchen wishes all Mauritians around the world a Happy Independence day
    Today I'm sharing this quick and easy recipe of coconut ladoos in the colours of the Mauritian Flag.
    Ingredients
    2 Cups Dessicated or Shredded Coconut
    1 Tablespoon Ghee
    3/4 Cup Condensed Milk
    Extra ghee to roll the laddoos
    Food Colouring of your choice (Optional)
    I used Wilton Gel Colours in:
    Red
    Blue
    Yellow
    Green
    Flavouring of your choice
    I used the following flavours with the different colours:
    Rose Essence (red)
    Vanilla Essence (blue)
    Cardamom Powder (yellow_
    Almond Essence (green)
    Makes about 20 laddoos
    Note:
    They will keep for upto 1 week in the refrigerator though they probably won't even last that long!
    -Be careful not to burn or roast the coconut for too long or it will become too dry.
    You can omit the ghee if you want or replace with unsalted butter.
    You can omit food colouring or use natural food colouring. Just bear in mind that some of them such as turmeric will also alter the taste.
    You can also add in chopped nuts such as almonds or pistachio to this.
