  • Suji | Greo | Mauritian Recipe I Quick and Easy
    Ingredients:
    1 Cup Fine Semolina (greo)
    2 ½ Cups Milk
    6 Tbsp Sugar
    2 Tbsp Ghee
    8 Almonds (finely sliced)
    2 Tbsp Raisins
    1 Tsp Fennel Seeds (lightly crushed)
    1 Tsp Ground Cardamom
    1 Cinnamon Stick
    Method:
    Roast semolina in a pan over low heat. Stirring all the time to avoid it from burning until it turns a light golden brown. Be careful not to burn the suji or roast it too much or the suji will be too dry when cooked. Set aside.
    Place ghee in a pan medium heat. Once it's melted, add in the sliced almonds, raisins, crushed fennel seeds, cinnamon stick( i ran out so couldn’t include it in this video). Stir and cook for 2-3 minutes until the raisins have puffed up.
    Pour in the sugar and stir well for a little less than a minute. This step is to caramelise the sugar a little bit.
    Carefully pour in the milk as the sugar is quite hot. Stir nicely and bring to a gentle boil.
    Now switch the heat to low and gradually pour in the semolina while stirring vigorously. Keep adding in the semolina gradually until it’s all mixed in. You can also switch off the heat and do this if you are doing this for the first time as the mixture thickens pretty fast.
    Add in the cardamom and mix well to ensure that there are no lumps.
    Our suji is now ready. Serve warm garnished with more sliced almonds.
    Note:
    - If the suji is too dry at this point then pour in more milk to moisten it as the mixture will keep drying when it cools down.
    - If the suji is too moist then keep cooking it further on low heat until the milk is absorbed in nicely. This process should take less than 5 minutes.

      @@danieljheelan5256 Yes you need 'semoule fine' for this recipe. Not sure where you are based but it can be obtained in Indian grocery shops 🙂

      On fait des couscous mais le blé n'est pas fin comme pour le soudi.
      Le greo était très fin et je ne pensais pas que c'était du blé.
      J'irai chercher chez les Indiens.
