    My father was a Northern Pacific Railroad worker for 30 some years. He would make this recipe maybe twice a month. After heating up the kitchen (yuck) he would fill us a bowl full of this, grab a spoon. And we'd head out to the back steps for dinner. It was a tasty meal. Made even better because my father had prepared it, and then the added adventure of eating outside with him. Love you poppi. Miss you. ❤

    That's a keeper. Going in my casarole rotation. Your channel has improved my menus 100%. It was frozen meals and fast food after my wife died. Now I'm enjoying my time in the kitchen.

    My dad worked for 45 years as an engineer for houston belt and terminal. And got a safety award also. He loved this recipe. I now cook it all the time on his horner

    My Grandad worked from age 13 until he retired at 62 for Atchison Topeka & Santa Fe !! Very proud and he still holds the record for longest employee ❤️ He'd have loved this.

    Made this for my son, daughter in law, and four grandchildren tonight. Everyone loved it. My great great grandmother (born 1859) was the first female telegraph operator for the AGS (Alabama Great Southern) Railroad. She passed this receipt (very similar) down through the last 150 years in our family.

      How did you live without cooking in cast iron! Lol I cook every thing in cast iron. That’s how I was taught to cook! Fried potatoes are best.

    As an old bachelor, I used to dread the huge family meals.
    And then I got a Vacuum Bagger.
    It and my chest freezer are my new Best Friends.

    I have made something similar by making a one pound serving of thick chili and putting the cornbread mix into a greased baking dish baking dish first and putting the chili on top. After it is baked, let it cool a little and then turn it upside down onto a large plate so the cornbread is now on top. You get a crunchy crust on top instead of a moist crust on the bottom.

      .....Yes, I've made this . :) !
      I've also made it with Leftover taco meat.added some seeded, small dice jalapeño ( like 1/ 2 of one) ,shredded cheeses of choice, and Chopped Scallions.
      ( I make several different versions of " Taco meat "... this one is made with Organic ground beef , Taco seasoning ,and half of a small can of tomato paste,and a bit of water. You can use a small can of tomato sauce if you don't have tomato paste. )

    Today June 12 my late dad's birthday I had to do something not to cry, my dad was my life, I am 78yr old, was daddy's girl and miss him so much, I don't see my daughter she split our family I have my son I haven't since last Xmas, I am alone in my apt. so I made a butter pecan mix cake and made holes in it and put Smuckers caramel in the holes and topped it with whipped cream, Im diabetic sure doesn't look like it, I watch all your videos, God Bless🙏🙏

    That paper towel trick, especially when using cast iron, is pure gold!! I'm getting way too old to try to be tilting cast iron, but I'm never willingly giving it up! By the way, you can also use pages of newsprint as long as you wrap it so that the paper towel is the only thing that touches the food.

    We tried this last night. It was really good. Thanks. My son was visiting and took some home for lunch today. The only thing I did differently, was made a separate batch of Cornbread. Aside note about Railroads. My son loves trains. He come by it naturally. My grandfather was a lawyer for the Boston and Maine, back in the early 1900's. He passed away in 1920. Thanks for the recipe.

    Looks great! I make a similar casserole I found in a Louisiana cookbook. Layer of cornbread & cream corn mixture, then whatever filling layer, then another cornbread layer and bake. I've made it with beef, peppers, and onions; shrimp and sauteed veggies, and even 'coney dog' style with hot dogs, chili, and raw onions. I'll be sure to try your skillet method!

    A cast iron pan is one of the most versatile kitchen essentials. Every House Should Have At Least One 10-inch Pan. A 10-inch & a 12 to 14-inch pan is all you need.

    I just made this dish, and it was delicious. I have enough left over for a couple of days of my lunches at work. I only modified it slightly by adding just a little extra garlic powder and some smoked paprika. Other than that I followed the recipe perfectly, and it is very tasty and easy to make!

      This sounds delicious . But I don't care for sweet cornbread so I would make my own and add all the ingredients you put into it. I'm plan ING on making it soon it sounds somewhat like a tamale pie..I really like tamale pie so I'm sure I will like this one too.       @@ShirleyIngram-wd1nj Same here on the sweet cornbread. I add a little sugar to my mixture, maybe a few tbs, but I really load it with butter, like a full cup. Real buttery cornbread to me makes that slight sweetness blend in. I hate cornbread that tastes like sweet muffins.

    My dad worked on the Katy R/R which is no longer in business. He would bring home different versions of these recipes. The caboose had a pot belly stove to keep the place warm for the workers when traveling up the R/R lines. The employees would cook on top of the stove and eat out of tins can and share a meal.

    My father, my grandfather, and my great grandfather were lifetime railroad men…the New York Central ,he called he caboose , where he and the men lived while on the road, the Waycar..he was a great cook, and we inherited huge cast iron frying pans when he died in 1982…we don’t have them anymore,…couldn’t hardly lift them….this is similar to a tamale pie I used to make, but the cheese was mixed unto the meat and black olives…but I will be trying this version, lol…I am still licking my “chops” over those Creamy Country chops..🥹😃

    I hope the tomatoes don't ruin/affect the cast iron! It's such a great meal. We prefer a thicker 'broth' so flour gets sautéed in with the burger, and drained, mild canned green chilis are added to the cornbread. Yummy, it's all good! Thanks ✝

    Made this for dinner last night, after watching the video yesterday (for myself, wife, and two sons). Excellent video, easy to follow, easy to make. First son dished up what looked like half of the cast iron pan even before tasting it! Second son took almost as much, also prior to tasting it! There were a few leftovers but I think those disappeared during the night. So, an unqualified success. We play a game with new recipes, did you like it? yes (regardless), would you like to have it again? yes (again, regardless), how often (and now the truth comes out). The answers to the third question can vary from "once in a lifetime would be sufficient" all the way to "once a week" (although occasionally I've gotten an "every night"). This recipe was rated as "every other week." Thank you for one more surefire hit to add to my dinner arsenal!

    Really love your recipes, it's the kind of food that I grew up on. My Dad was also a railroad engineer and my Mother liked to cook anything that could be prepared, and served in one pot🙂 Life had it's ups and downs, but we seldom missed a meal; somehow my parents always seemed to be able to put a meal on the table.     I made this last Sunday. It was very good. The filling itself makes good breakfast burritos with some scrambled eggs and grated cheese.

    My mom used to make something similar called soup bean pie. Hamburger pinto beans onion chili powder and with the cornbread baked on top. probably had more ingredients but I cant remember.
    I will have to try this one though.
