My father was a Northern Pacific Railroad worker for 30 some years. He would make this recipe maybe twice a month. After heating up the kitchen (yuck) he would fill us a bowl full of this, grab a spoon. And we'd head out to the back steps for dinner. It was a tasty meal. Made even better because my father had prepared it, and then the added adventure of eating outside with him. Love you poppi. Miss you. ❤

I have made something similar by making a one pound serving of thick chili and putting the cornbread mix into a greased baking dish baking dish first and putting the chili on top. After it is baked, let it cool a little and then turn it upside down onto a large plate so the cornbread is now on top. You get a crunchy crust on top instead of a moist crust on the bottom.

      .....Yes, I've made this . :) !
I've also made it with Leftover taco meat.added some seeded, small dice jalapeño ( like 1/ 2 of one) ,shredded cheeses of choice, and Chopped Scallions.
( I make several different versions of " Taco meat "... this one is made with Organic ground beef , Taco seasoning ,and half of a small can of tomato paste, and a bit of water. You can use a small can of tomato sauce if you don't have tomato paste. )

That paper towel trick, especially when using cast iron, is pure gold!! I'm getting way too old to try to be tilting cast iron, but I'm never willingly giving it up! By the way, you can also use pages of newsprint as long as you wrap it so that the paper towel is the only thing that touches the food.

I've made it with beef, peppers, and onions; shrimp and sauteed veggies, and even 'coney dog' style with hot dogs, chili, and raw onions. I'll be sure to try your skillet method!

Made this for dinner last night, after watching the video yesterday (for myself, wife, and two sons). Excellent video, easy to follow, easy to make. First son dished up what looked like half of the cast iron pan even before tasting it! Second son took almost as much, also prior to tasting it! There were a few leftovers but I think those disappeared during the night. So, an unqualified success. We play a game with new recipes, did you like it? yes (regardless), would you like to have it again? yes (again, regardless), how often (and now the truth comes out). The answers to the third question can vary from "once in a lifetime would be sufficient" all the way to "once a week" (although occasionally I've gotten an "every night"). This recipe was rated as "every other week." Thank you for one more surefire hit to add to my dinner arsenal!

I will try this...and also I was so flattered. You prepare meals just like I do, right down to moving over the meat and soaking grease with paper towels. And of course I always have some Jiffy in the house. And when I get a box out I usually have a box of their cake mix, so I make that up for dessert. Just a small cake, but that's all we need. I'm an Illinois girl who was transplanted to Florida. Here I have learn recipes from cooks from the islands to South America. I love those as well. But, when I see something like this, it justs brings me home again. My mom died before she could teach me to cook. I was 11. But, memories of certain spices and of course the aromas and tastes bring her right back and I just cook until I get it right...sometimes it may take awhile. Mom always had Jiffy. But, I even cut my onions just like you, and the bell pepper-so like I said, I am flattered. I never knew if what I was doing was right or wrong...and I am sure I am older than you. Thank you..I subscibed and will try this soon as it is starting to chill down here in Florida-FINALLY. The 60's...whoa..might snow!! Ha Ha

LOL! You have as much chance of snow there as we do here in SE Texas. I am glad that I can help bring back those happy memories of your mom.

I made this last Sunday. It was very good. The filling itself makes good breakfast burritos with some scrambled eggs and grated cheese.

    This looks wonderful Catherine!😍
I love how Thomas finds recipes for your family to try! 😘 And he's not afraid to get in the kitchen either! 👍
This reminds me of a tamale pie my mom used to make with the meat mixture topped with cornbread mix! 😋
It's so neat to find interesting things when going through the family history! 😚 And the fact that he found a recipe is even more special! ☺️
Thanks for sharing another great recipe! 🥰
