TAMALE PIE MADE WITH MASA HARINA: Delicious, More Authentic Recipe w/Ground Beef, Corn & HATCH CHILE

  • Let's face it, there's no substitute for tamales, but this Tamale Pie made with Masa Harina is at least closer to the flavor profile of tamales because it's not made with corn bread. It's really delicious! Masa Harina is a corn masa flour. I typically buy Maseca brand, in case you're looking for it in the grocery store and aren't sure you've got the right thing. Read on for the recipe.
    Tamale Pie
    1 lb. lean ground beef
    1/2 chopped white or yellow onion
    2 minced garlic cloves
    1 15oz. can corn, drained
    1 can crushed tomatoes
    1/2 cup chopped Hatch green chile
    1 Tbsp. red chile powder
    1 Tbsp. cumin
    salt to taste (I use about 1 tsp.)
    approx. 1 cup grated cheddar cheese
    For the dough topping:
    2 cups masa harina (I use Maseca brand)
    1 tsp. baking powder
    1 tsp. salt
    1/2 cup melted fat (I use butter. You can also use lard or vegetable oil.)
    1 1/2 cups warm chicken broth
    In large skillet over medium high heat, brown ground beef. Add in chopped onion and fry until translucent. Add in all other ingredients: minced garlic, crushed tomatoes, corn, green chile. Season with chile powder, cumin and salt. Continue cooking approx. 5-10 minutes. Once fully cooked, take off burner and set aside.
    Meantime, make dough by mixing together the dry ingredients: masa harina, baking powder and salt. Add in melted fat and mix until crumbly. Add chicken broth a little at a time until fully absorbed into dough. If it's too dry, add more chicken broth. It should be spreadable.
    Grease a 9x13" baking dish with butter or non-stick cooking spray, then add meat mixture and spread evenly across the bottom of baking dish. Sprinkle shredded cheese on top. Spoon dough on top and carefully spread across the top of dish. (This will take a little time. If dough is not spreading, wetting your spatula with water may help.) Sprinkle additional cheese on top and bake at 350º for 30 minutes until golden brown.

    Spread the masa between two sheets of parchment paper. Spread by using a rolling pin to the size you need for your baking dish. This goes much faster! Then just flip on to the meat mixture. If it breaks apart, you can just smooth those sections together. Also, roast the corn a bit before adding it to the meat. That really brings out the corn flavor. Pan fry the corn without liquid or oil. It will have a great roasted flavor.

    I remember when I was a kid my mom used to make this all the time I used to make a face cuz I didn't like the corn in it. But I ate it anyway. Now I would eat it but I would put roasted corn but this looks great. Love the crema at the end

    We always had it with cornbread with the fillings sort of mixed inside. I like the looks of this. I'm definitely going to try it out!

      No have never thought of using Corn Masa instead of cornbread wish is so delicious 😋 But masa makes a lot sense now for the real tamale taste.       Never tried it with corn bread.
      My Mom would roll out the masa on wax paper, lay it over the meat in the pan, then peel the wax paper off.

    i made this for the first time using leftover oven baked chicken you're right no true substitute for tamales, but to follow the recipe and to keep the filling as semi-moist as possible..,in a quarter of time to make tamales, Its a true game changer.....AWESOME

    I have some old Mexican cookbooks from the 30's and 40's, I'm guessing it was invented back then. My mom had like 5 copies/versions of the recipe in her recipe box. My dad loves it, (he thinks his mom used to make it) and so does my Mexican husband. I like to use leftover chili to make it.

      I think it's simple. Spreading the masa is the only tricky part. Sometimes I wet the spatula to make it easier. Hope you enjoy it.

      Yes, you can absolutely use prepared tamale masa from a Mexican market.

    The masa spread pretty easily on top of the meat. IDK if it helped but I measured the masa and then sifted it, and then added the other ingredients.

    there are a few different Maseca variations. could you say which one you used. one variation is for making corn totillas. another variation is for making tamale masa. which variation did you use? I'm thinking the Maseca tamal variation for making tamales will be the best choice. we will be replacing the corn with some drained then oven roasted hominy. we digest hominy easier than whole kernal corn. thanks for sharing.

      That is a great question. I only do the float test when I’m making actual tamales. It’s really important, especially since, whenever I make them, I make multiple dozen. You would hate the masa to be dry. For this tamale pie recipe, I don’t think it’s necessary. I probably could have afforded to add even a little more chicken broth to make it easier to spread, but the consistency turned out perfect. It’s really delicious. Hope you enjoy it.
