    I was just at Kreuz's Market this past weekend. The price jumped from $21.90/LB to $26.90/LB !! I about fell off my chair. I will say that the brisket and ribs were excellent and the sausage was out of this world! Overall, it was worth it, but the price of beef has sky-rocketed! Great video -

    As a CenTex guy, Smitty's is my favorite BBQ. But you went at the wrong time. 10-11am is the perfect time to get there. Nothing wrong with the other 2 at all either. I kind of think of Blacks as more of a East Texas style BBQ than traditional CenTex style. If I were you, I would venture over to Giddings for City Market and just up the road from there to Lexington for Snow's. Between Smitty's, Kreuz, City Market & Snow's, you'll never need another place. IMHO Franklin is good, but over-hyped.

    Good review, appreciate the straight forward honesty. Been to all those a few times and had better Smitty's that you did. Every place can have an off day and thats just the nature of that type of business. Again, great job keep it up.

      Yeah, I totally agree, Arnie. I'll be honest, I WANTED to like Smitty's more than I did but I gotta call it like I see it or what's the point. It was great to be in a place like that though. bbq history. And the people were so freaking nice.

    My neighbor walked over just last week and told me he had found "bbq nirvana" after visiting Black's. He's been to Franklin's before, waited in line at Black's for 45 minutes compared to 5 hours at Franklin's and for him and his wife they considered everything as perfection at Black's.

      And while he was waiting in line trying to sneak a few pictures of the pits, he was invited back for a very personalized tour, cooking methods including temps and times, seasonings, were carefully explained. Meat was purchased by the pound, everyone got 2 sides, 4 people, total bill $120. That sounds like a bargain.

    I’ve been to all three many times, and Smitty’s is usually my favorite; your brisket looked super dry on that day, though. I feel like that’s the nature of that business - if you serve a ton of people something that takes hours to cook, you can get it right about 2/3 of the time.

    The thing I miss the most about living in Texas is the BBQ. I lived in Houston and went to a place called The Hickory Hollow at least once every couple of weeks if not more. It was so reasonably priced and absolutely delicious. I knew the first time I walked in there when I saw all the pics of country stars that I did not recognize the food was going to be the real deal. Their chicken fried steak was awesome as well. I never had a bad meal there. Well I lied I miss the girls more than the BBQ....

    I don't think showing up late to a restaurant is an excuse for poor quality brisket. It'd expensive, and If it isn't up to their normal par standards, then it shouldn't be served.

    Fun one to watch! I went to Lockhart a few years a go with some friends and hit the big 3. We did Kreuz first, Blacks second, and lastly Smitty's. The highlights for me were Kruez's Sausage and Blacks's Beef Ribs. We thought the brisket and pork ribs were also best at Kruez's as well, so that was definitely the best stop overall. We hit all three on a Saturday around noon or so and still thought Smitty's was OK, but not amazing. We took a big ass nap in the late afternoon and then still make it out for a solid Austin evening. Next time I need to hit the Austin joints... if I can make it to get in line early enough. Great video!

      That's Keegan. Yeah, I think Black's is the one that had the most potential. The beef rib was cooked exactly like I like it. I had some friends go to Smitty's today and said it was not very good so it might be a problem they need to address. While I've had a few people tell me Kruez wasn't as good as we experienced, I've had WAY more say it was awesome. Man, that sausage!

    You missed City Market in Luling. Sometimes it is best to get one item at on3 place and another at a different place. This is especially true with the sausage. Country folks eat early and get up early so they are not out eating late like city folks. Remember if you hoot with the owls you can’t soar with the eagles.
    Your partner really was a great addition to the video. Great dry humor.

    Stopped at Kreuz on Friday and got 2 links and a slice of brisket just enough for a sandwich . The Sausage is the bomb and many yrs ago they didnt have sides . My family have been eating at Kreuz since my Grandfather was a teen ranchand and hes 92 . The old loaction of Kreuz was segregated and the upstairs was where poc would sit unless you were in the lead ranchhand or had permission . Kreuz over Smittys all day !

    Great video! I live in San Antonio and have driven to Lockhart a number of times specifically for the BBQ. I agree with your assessment of the three joints with one exception, Smitty's. I have not eaten there so I cannot comment. My last trip to Black's was in keeping with the innuendos about the sausage. It was for the annual meeting of the Royal Order of the UCD. It is a group that I started when my son was in high school as a way to honor him and a small group of his ROTC buds. Until they all grew up, got married and moved away, I would arrange the annual meeting at a regional BBQ joint. Our last meeting was at Blacks. All I can say was that we had to roll the windows down on the trip back! For those of you not familiar with a UCD and those national heroes who flew the SR-71 Blackbird and the U-2 Dragon Lady, a UCD is a urine collection device. You can use your imagination from this point on.

The backdoor story of the Royal Order of the UCD is I was the Commander of the 9th Physiological Support Squadron at Beale AFB CA in the mid 90's. Our job was to provide all of the life support required for the pilots who flew the U-2 at altitudes approaching 70K feet and above. Should they loose cabin pressure, they their blood would "boil" instantly if they did not have the protection of a full pressure suit (like the astronauts wear on EVA). One the biggest issues for the pilots is urinating while seated without defecating. (Actually, this is one of the wash out criterion for prospective pilots.) So, an ingenious device that was was developed in the late 50's was a UCD. It is a silicone "condom" worn over the penis that is connected to a venturi system what wicks away the urine into a "P pot" under the belly of the plane (the most replaced component of the entire aircraft because of the uric acid.) As the Commander of the PSD, I had the singular honor of having a "high flight" in the U-2. We peaked out at 69,999 ft over the San Francisco Bay........spectacular. Since I was responsible for all of the life support systems for the pilots of this awesome aircraft, I wanted to use all of the systems of the life support design. So, I hydrated well and then could not take a piss to save my life. While the experience was life changing, I was in agony until I landed.

      I created the Royal Order of the UCD to honor my son, that other "PISS HEADS" THAT I LOVED AS MUCH AS MY SON DID! They graduated HS in 2006 and still as tight as then. I love these guys. The Royal Order of the UCD is alive and well.

    Not too surprised Black’s didn’t have much seasoning. I was reminded of “Legends of Texas Barbecue Cookbook” concerning Edgar Black Jr. it reads on page 220 that “Edgar Black Jr. doesn’t use a rub and he doesn’t use a mop...’The only seasoning is post oak,’ he says.”

      I found this to be true yesterday. Some salt and pepper would've went a long way. Sausage was seasoned well but lacked the fire to get the cassing done. Had to cut it off and just eat the meat.

    Easy:
    Kreuz for sausage
    Smittys for the pork chop
    Blacks for brisket and beef rib
    Franklin for everything
    Personally I prefer La BBQ to any of these.

      Which is top down the ONLY way to be consistent on everything every day.

    Excellent video young man! I rarely post, but I am a subscriber and a fan! In Lockhart, we always used to stop for bbq and had almost the exact same results as you two did! The only thing is, you forgot another bbq place called the "Chisholm Trail BBQ House". My wife insists that I stop there because, according to her, it tastes more like a good old fashioned back yard bbq. Try it next time you're down their way. Keep on posting!!!

    Very interesting! I had a similar experience with Smitty's: I picked up a couple of pounds of brisket, drove an hour+ home and it was still incredible. A few weeks later, the wife and I went there and ate - similar situation as it was late in the day and the brisket was like Arby's roast beef - incredibly disappointing given how good it was the time before. I guess timing is everything there. Say what you want about Rudy's, but no matter what time of day you go there, the quality is consistent.

    I just watched the other video. I have to stop now. 10:49 p.m., and I am not leaving the house to find barbeque at this hour, as everything is closed. ;-)
    Killed me I took my father and daughter out for a belated Father's Day dinner a few weeks back ( Black Hog in Virginia ), when I could have made my own, plus my dad at 85 didn't eat much/ was full pretty quick.

    So visually, Blacks looked like it was the best. Definitely better slice on the brisket. Even though we eat with our eyes first, it’s the taste in our mouth that leaves the lasting impression. Good for Kreuz.

    Not sure yet if you are going to Stiles Switch bbq in Austin in part 2 but if not you should really try next time. They have all-around great BBQ and less waiting in lines.

    I also did a central Texas crawl earlier this month, and the guys and Leroy & Lewis (please tell me you've eaten there) told me that Snow's was out of town at a festival closer to DFW and to try Lockhart instead. I'm glad they did - yes, like you, I found out they don't have the same obsession with rendered fat that Austin does, but the charm and the seasoning of the old pits is not something to be found in the capital, or anywhere else. I could taste the history more than I could the 'beef tallow finish,' and for me that goes a long way.....i hope that didn't sound too passive aggressive, I just subbed lol

    NEWS FLASH: Customers are allowed to add salt and pepper at the table.
    Last time I was there, I found Kreutz a little bit salty.
    Other friends who went there recently found the brisket a little dry. They are native Austinites living elsewhere now.

    Hey Justin! Kreuz Market is where We met TRoy for lunch a about 3 years ago when we were there for the MotoGP race!! Back when you and I started calling each other different names!! lol. I need to come out that way again soon. Funny thing is, looks like you guys went everywhere we went and more. We did Kreuz, Louie Mueller, Salt Lick and Blacks. Couldn't do Franklin on that trip. We did Truth BBQ and the other Blacks the next year but was only passing through, so again couldn't do Franklin. Great vid man. Thank GOD I smoked a brisket the other day and had some to eat while watching...lol. Nothing worse than watching somebody's BBQ vid and not having a way to get any (at 1am EST) lol. Looks like we're not "friends" anymore on FB, but I get it. We do clean ups and especially you famous guys. Anyway, hope all's well brother.

    I did this a yr and 1/2 Ago a little different mine started in Oklahoma went to KC, Memphis, Georgia, Mississippi and then Texas. The Texas experience was Snows, Blacks, Louie Mullers, Franklins, Salt Lick and Pecan Lodge...............And the reality is at least for me was there was a distinct #1 Franklins.............A distant Second was Snows then Louie Mullers, Blacks, Salt lick followed by Pecan Lodge. What was amazing too me was Snows, Louie Muller, Blacks, Salt Lick and Pecan Lodge all where good hell I would go as far as too say really good.............But Franklins is on a whole different level. There was not a single item I ate (Which was everything) that was not perfection accept 1 item. Their Beef Ribs are on a different level, the Brisket is in a different Galaxy, The Pork Ribs..........Not my thing but cooked perfectly and flavor was great (I prefer a sweeter rib) The Turkey was crazy good, Pulled Pork was again was at a different Level..........The only thing that didnt blow my socks off was the sausage..............That winner IMO was Blacks.

    My parents would make trips to Kreuz just for the sausage. I grew up eating that sausage. It wasn't until I was much older, that I realized Kruez brisket was guud. Again, we'd just go for the sausage. Kruez sausage is the best!!
