      Fellow Louisianian checking in. I lived in Lafayette for a couple years after Katrina too. I could really go for one of those grease-soaked burgers from Judice Inn now that I'm thinking of Lafayette.

      There's just a restaurant near where I live called Asian Cajun. They serve Cajun seafood boils and Chinese food. It's yummy

      There's a lot of good crossover possibility in Asian and Cajun cuisines. Both have a lot of rice. A cross between dirty rice and fried rice would be great!

      And we get to experience these foods vicariously through Emmy. With her gifts for describing foods so well I have a good idea what unfamiliar goods taste like. I haven't tried any of the "sausages" boudin (?) But I've tried a number of other foods including, crawfish (yes I sucked the heads), jambalaya, and alligator and they're all delicious!! I can't wait to see Emmy's take on rhem.

    My grandmother came to Louisiana straight from Laos back in the 70’s and she made her own hybrid of boudin using egg rolls! She put the filling in the boudin into an egg roll wrapper with sweet chili sauce on the side! You should definitely try it!

    I'm south of Lafayette and we eat a lot of boudin balls here. Take the boudin from the casing, roll into a ball, roll in flour or corn meal and deep fry. YUM!!

    Emmy!! My heritage is Louisiana Creole. We make our own boudin (and andouille) from scratch. You must must MUST broil your boudin the next time you try it. Good boudin has a high fat content (we add butter and ground pork belly 🙂) so by broiling the boudin, you allow the fats to "fry" the rice and meats. It leaves a wonderful texture and deeper flavor than boiling it.
    I'm so happy you enjoyed boudin - it's my favorite food! Everyone who tried my dad's boudin falls in love 💛

    My dad was from Louisiana and traditional boudin was made with pork and chicken livers, rice, and seasoning. It’s nothing more than dirty rice inside of a casing.
    Cracklings are the best when they’re fresh hot out of the oil.

    My fiancé was born and raised in Shreveport Louisiana and he loves boudin and I fry it up in a pan with oil and make a scrambled egg and place all that in a corn tortilla with some cheese. Yum! Love you Emmy. 💛💚💜.

      I am a NC boy and it's one of my favorite pork products ever. My best friend's mom is from Opelousas and makes a rice dressing that is basically boudin that's a bit heavier in the rice and not in a casing. So stinkin' good!

    I'm not at all knocking what Erin sent you, but I am from Crowley, about 20 minutes outside of Lafayette. You have never tasted Boudin until you've eaten it from either The Best Stop in Scott, or Dons Specialty meats on I 10. One day, you mark my words Emmy, I am going to send you Boudin and Cracklin's from both of those places. Once you taste it, you will see exactly what I'm talking about LOL.

    Yesss my state!! I’m in Baton Rouge and I’m so excited to see this video! Lafayette has the best food along with New Orleans and Lake Charles! I love boudin!! We also have boudin balls stuffed with pepper jack cheese and those are my favorite and they are out of this world! I love to heat my cinnamon pecans up so they’re warm and it really brings out the flavor. Omg, what a bad time to be on my diet lol 🤤🤤 I can’t wait to see the other videos! 😍😍

    Thank you, Emmy, for bringing Boudin into the light. It is something I miss all the time. I was born and raised in the Houma/Raceland area of Louisiana. But as my father worked in the Oil Field, I have traveled all across southern Louisiana.
    I do ask you to forgive me as I must correct a few things. I would not do my ancestors and their memory proper if I did not correct the wrong history given. The Acadians did not just flee, they were forced from Acadiana by the Britsh Army from their homes, just as it was done to them 78 years before from all parts of Europe. The British forced the Acadians into their churches where they separated the childen first on their own boats. Then separated the women and men on their own boats. From there, their boats deposited them all across the coasts of the Gulf of Mexico.
    The Native Americans in certain regions were what saved most of the Acadians and thus gave us the names Cajuns. There were cases of people dying just from a broken heart for everything that they went through.
    Finally, Arkansas is the state to the north of Louisiana. Georgia is above Flordia and on the Atlantic Coast.

I can only explain my own feelings towards my upbringing. Everyone experiences life differently and everyone takes away different lessons.

    I’m creole (I’m from southeast Texas) and I love that you did this episode! (BTW thank you for correctly pronouncing all the French haha) it’s really cool to see someone enjoying my culture’s food, also boudin is one of my favorite foods ever I could eat it all day every day 😋 Emmy you are awesome... a good tip for eating boudin too it’s it’s way better with crackers and ,some people *cough cough * like me will eat it with pickles too yum!😜(also in my family we steam our boudin because it preserves the flavor and it keeps smoked boudin from becoming too mushy) (also here in Texas we typically don’t eat boudin noir we usually have boudin blanc that’s been smoked the same way you smoke sausage)

    I'm so happy you got to enjoy some delicious Lousiana food.
    Being born and raised near Lafayette, I can say that the Sovoy's has a special place in my heart as we had a, if not the, packing plant right outside of my home town. That is about as close to true Louisiana boudain you can get without having to stop at a little butcher shop/gas station out in the middle of the country somewhere. Also, the cracklin that you had there is not exactly what I'd call real cracklin, as it's usually got more meat to it and is so crunchy that you have to suck on them for a bit first before you bite into it. The pralines you had are actually one of two kinds, as you can get them either hard or soft. Those are the soft ones, and are my favorite, but the hard ones are basically a hard crack candy version of the exact same thing. As for the alligator meat? If you don't want to fry it, make a jambalaya out of it. But if you do fry it, I like to fry them on a stick so that they're easier to hold since good gator can fall apart since it can be a tender meat.

      Actually, the spelling goes either way. I live in Shreveport these days, which is closer to Texas. Texas people often use the -ain ending as opposed to the -in which is the Traditional French spelling. So, less of a spelling error, more of the locals polluting me. It was an honest slip, despite having the discussion many, many times before on the correct spelling.
      My bad.

      if there are Spanish (Cuban, Dominican or Puerto Rican food stores or restaurants) you can get Chiccarrons which is fried pork skins with meat attached. It's not exactly Cajun style coz we cut ours small and they leave theirs in large pieces.

    Erin did so well with packaging! I have seen so many videos on Louisiana’s culture that I don’t recognize and question if I’m actually from there but everything in this video is true to New Orleans ! I love that Emmy does research for every video to help inform others about different places ❤️ I suggest grilling or frying the boudin. I prefer boudin with a crispy skin rather than a chewy skin that’s hard to eat.

    It's unfortunate she didn't send you even one of the top 5 best boudin brands. The three best ones in my humble opinion are Don's in Lafayette Louisiana, The Best Stop in Scott Louisiana, and Billy's in Opelousas Louisiana where they have boudin balls with pepper jack cheese in the center. And my favorite way to cook the boudin link is in the casing fried in about 1/2 an inch of cooking oil.

    Mmmm alligator meat is soooo gooood. And crawfish is absolutely delicious. You're gonna have fun with all of that good eatin'. To get that fresh cooked deep fried pork skin experience put the cracklins on a cookie sheet and put into a hot oven for about 5-10 minutes. So good.

    Boudin is my favorite! My dad makes his own and it’s so amazingly delicious! When i went to Louisiana I didn’t get to eat any freshly made there but I tried the pralines and omg they are delicious! I also had a praline liquor that tasted great with ice cream

    I just got back from Lafayette the other day, we were visiting a friend who lives there. It’s so funny that you posted this video. I ate at three different boudin places while I was there and they were all delicious! The best was the smoked boudin and the boudin balls with pepper jack cheese! 🤤 Thanks for sharing such a great food from an area that deserves more exposure.

    Believe it or not Deer or beef tamales are big in Louisiana as well. A great brand is Mickey Browns.

      @@emmymade Louisiana , Texas, Mississippi hunters kill a lot of deer which is a lot more lean than beef so to use up the meat they will make deer sausage, deer tamale, deer chili, deer buritos, etc. The taste is great kinda like beef but it can be dry and if you know how to fix it and season it right there isnt any wild taste at all. A mixture of pork butt added to the deer meat ads the extra fat and that meat can be used in almost anything.
      I believe the seasoning they gave you can be added to almost any mixture of meat to get a tasty end product.
      This may sound funny but most men round here know how to cook almost as good as our wives. Especially in Louisiana, It isnt frowned upon and in some instances he women like getting a break when their men cook.
      I cannot wait to see you cook up the alligator.
      You can make an aligator sauce Piquante, which is delicious and the Piquante sauce can be used in a
      Turtle meat (delicious has meat that is unique to any dish) Piquante
      Also an Alligator Courtbouillon (pronounced koo be aw) is delicious as well.

      @@emmymade Also do yourself a favor and fry up a few peaces with corn flour and seasoning instead of just regular flour and seasoning. Zaterans makes a fantastic fish fry using corn flour . The taste is fantastic!

      by the way the difference is one is more roux-based and involves browning meat (sauce Piquante) while the other is more of a poaching meat (fish) in a heavier tomato-base liquid/gravy (Court Boullion) the ingredients for making both can be very similar but the taste can be quit different. Alligator meat can be very tough so marinating it or cooking a bit longer can help with that

    I live in South Georgia. We also use cane syrup around here. I understand the logical thing for "syrup" is waffles or pancakes but we use it mostly for meat. Like, a sweet sauce for fried pork chops. So good! We have pecan trees all over our land. We call them pee-cans, pu-con sound very strange.

    Glad you liked our food. Our area, south Louisiana, has received many southeast Asian immigrants. They enjoy the fact that so much of our traditional foods are similar to their traditional foods. Rice mixed with pork, beef, poultry, or seafood is common here. We also do a breakfast of eggs and rice made with leftover rice. I fry my eggs till the White is hard but the yolk is soft and put them over the reheated steamed rice with a bit of seasoning.

    The Canadian Acadians have given Louisiana a lot in way of culinary delights, but also the introduction to the French language. Boudin is actually originally a Canadian recipe and it was closer to a blood sausage. There was no rice in in, and called Boudin du Pays. If you go to the east coast of Canada (Acadia), people still make things like gumbo, jambalaya, and something we call freeko!
    The famous Beignet, is not only French sounding, but has it's roots in Canada, and was a play on the traditional Bannock. Bannock = Beignet. This is a great video. Loved it!

      Not completely correct. The majority of our food is actually a fusion of french( nova scotica canadian)and african. Far more african influence than anything else. Jambalaya is a well known descendant of jallof rice. And we all know how the french ended up with those recipes. Didn't they invade a lot of africa?
      I'm Cajun. Part of the Houma tribe. I know my heritage well. Alot was adapted from african slaves.

      I can't speak to the food for sure but the Acadians did not introduce French to the United States, the French did. The Acadians went to Louisiana after the expulsion because it was a French colony. They were given the option to go there or back to France.
      And as for gumbo and jambalaya on the east coast I would assume it's a transport from Louisiana when a chunk of the Acadians came back to Canada about a generation or two after the expulsion. Or possibly an import from all of the trade links between Halifax and the Caribbean in the late 1800s and early 1900s, especially considering most black Canadians are of Caribbean origin (though most today are from families that immigrated in the 1960s) and both gumbo and jambalaya are variations of west African recipes altered by slavery.

    If you take the boudan out of the casings and add to sour cream and cajun seasoning it makes an excellent dip serve with Ruffles potato chips...you will not be disappointed! Love your channel and personality

      Lol when I describe the taste of alligator to someone I always hate to say "tastes like chicken", but it really does. I see it like chicken with texture more like lobster.
      Absolutely delicious though.

    I'm Cajun all the way . I love my Boudin and Cracklins from Billy's. Before anyone judges ( I love my Roux) and Sausage from Savoie's . We are Tigers on Saturday and Saints on Sunday ! Also, Thank you so much for this !! My best friend seen this and showed me and it cheered me up because I was having a not so nice night and also not many people know the difference between Creole and Cajun.
