    In the 80's I used to travel in and around Lafayette a couple time each year. I was taken by a bit of surprise when I came to realize that most of the mom&pop/local convenience stores kept a warm crock pot filled with wands of boudin at their check out counter. It was usually sitting next to an open loaf of white bread and customers would grab a slice of bread and wrap it around a wand of boudin and enjoy their treat in their car.
    Boy o boy do I miss that fun. Tasteeeeee!

    What's a Cajun 7 course meal? A pound of Boudin and a six pack of beer! Boudin is the king of sausage. You can grill it so the skin is crisp and you can eat the casing as well. Boudin and scrambled eggs in the morning is divine!

    My grandparents were from Avoyelles parish and made boudin from scratch their whole lives. It was a simple and delicious basic recipe that was not always exactly the same. It depended on what meats were at the table. It could be pork livers or chicken livers - different cuts of pork meats and fats. Green onions and rice were ever present of course. It was a regular food in the rotation. I went to college at USL in 1984 and moved to a place where boudin was way more common than in New Orleans. It was around in N.O. for sure but not as predominate as in Lafayette. But Lafayette had a lot more variety and complexity of boudin than what I had experienced. There's some good boudin all over Louisiana but Lafayette is the capital as far as I'm concerned.

    Acadiana owns my heart. Lived down there twice. Tonight I asked Google how to pronounce Baoding balls, aka "worry balls."
    They're a couple balls that worried people can roll around in one hand, to help release the stress. I was shopping for myself. 2020, right? Well, my search result produced how to pronounce boudin. 😃
    Stumbled on to you guys here, I watched the video, and guess what:
    I'm destressed; I feel comforted, and I feel a sense of community. And I forgot all about worry balls.
    Acadiana, y'all are America's best kept secret. When I brag about how lucky I was to have lived down there, folks say, "I love NOLA!"
    To help keep the secret, I don't correct them. 😉

    I had some fresh boudin from a roadside shop when I visited Louisiana. Delicious! Can't get it here in Alberta. Guess I'll have to make it myself if I want some!

    Thankyou for posting ,what an easy food to make. I love all things Cajun and Creole and will have to find my way to travel their from Alberta Canada. We may be polite up here but I know the Creole and Cajun folks are welcoming. I really liked seeing the old meat grinder. It is a part of living history .     All these new cooks with their fancy boudin recipe's, his is the simplest and the best. Cajun food was poor man food in the day. You eat anything. They threw in the spleen, liver, lungs, heart, and all the left over pieces of the pig.Today it's got gourmet ridiculous.

    Oh MAN! I don't get down to Cajun country anymore and I am hungry for boudin. There was a truck stop I went to that always had fresh boudin balls. Get some of those and a big helping of red beans and rice and, on occasion, freshly boiled mud bugs. That was all just too good by half!!! I don't have a meat grinder, but I do have an industrial strength food processor, so I'm gonna make me some boudin.
    By the way, those boudin balls were the size of baseballs. I'm drooling all over my keyboard now.

      It's excellent and you are only limited by what's available. Cann be pork, gator, crawfish etc.. It's by all means not all created equal, that said, never had boudin I didn't like though some is tastier than others. When you drive across LA, especially southern route I always stop when I see a sing, Boudin. Like I said, you'll never see a repeat recipe.

    I bought some at Walmart but I want to make it homemade. My mamma used to make liver pudding and she didn't write the recipe down. There was a place in a little town near us that made it for a long time but their little place caught on fire. I was so sad because they had good homemade sausage wonderful liver pudding. I've looked for some to compare it to for years now and when I tried boudin it was so close. I do know that one thing she put in her liver pudding was pig ears so she could get the gel so it would congeal in the pan and she could slice it. Thank you so much for this recipe Mr Norbert I can't wait to make it God bless you both

    Lafayette is the best little big city in the South. My niece and nephew live in Duson.

    The recipe on your website isn't what is happening in the video. The recipe omits the celery and bell pepper and doesn't mention adding vegetables before AND after cooking. How much bell pepper and celery are used and how much should be added before cooking and after cooking? Thank you!

      I Love Lafayette & Breaux Bridge, The People are Great!! The whole area!! I Miss the Boudin I had in the 80's I Now Order it from cajun grocers but its not the same, different casing they said.

      I was born in Lafayette and lived there until I was 25 moved away for five years and moved back for 10. I now live in Alabama and go home every time I get a chance. Love Cajun cooking! Just bought a grinder.

      Hey I’m from Lake Chuck too. He’s got some good stuff but I usually get my boudin from Leonard’s off of Hwy 14 in Lake Charles. They have some great food and Mr. Leonard and his Wife are the sweetest people I know. His wife makes some DELICIOUS brownies as well

    Sooooo home sick. I bought something called boudin up here in Missouri. Bah, it was nasty. There wasn't even 10% rice and it wasn't even cooked. Time to make a trip back home to Breaux Bridge. :)

      Red Fox Creole country is spread out because greater New Orleans is creole country and parts of Acadiana (Cajun country) and parts of North Louisiana is creole country. I’m a white Creole from greater New Orleans area.
