    I looked at the recepie I needed to know if subsututing equal amounts of coconut oil to the butter would work. I made the cookies and yes it did work.

      Oh, sorry about that Michele! I'm happy you made them anyway and you liked them. More people used coconut oil as well and left reviews on my blog, in the comments below the recipe. Would love it if you left your feedback there too. Thank you so much! Coconut oil is usually a good substitute for butter in most all recipes. The texture and taste changes a little but works great!

      Just made some totaly vegan for my sis..I'm.just a plain veggie so can use dairy but I used egg substitute and coconut butter turned out beautiful

    I finally find a good gingerbread cookies that I really like,. it's lightly sweeted and moisture and healthy. I would add a little bit more ground ginger as I like it more ginger flavor. This recipe is a keeper. Thanks!!

    Nice recipe but super sweet! I guess skipping the honey would be just fine if you don’t want a super sweet taste. I skipped the freezing part and it worked just fine!

      These are soft cookies so this is not the best recipe to make traditional gingerbread man cookies.

      I have not tried it but I think it will also work fine. Coconut sugar is not as sweet so you may need to add more of it (maybe double or a little less). Please let me know how it goes.

      I usually freeze it because it's faster, but you can place the dough to chill in the fridge also.

      Anytime you make substitutions the taste and texture change. However if you use another fat like coconut oil the recipe will still turn out good.

      There are a lot of people who made this recipe with flax "eggs" and said it worked well. You can also try aquafaba.

      Yes, brow sugar is a great substitute for coconut sugar.

      Coconut flour will not work, but oat flour works. Oat flour is drier than almond flour, so you'll need to add less. Please let me know how it goes.

      This is so true, I just tried using oat flour at the same amount, didn't work. Oat absorbs liquid, therefore you need to add the oat flour little by little until you get the right consistency for your cookie dough, and less amount.

      The eggs give any baked goods a different texture but you can use an egg substitute to act as a binder.

    Hi Adriana, just made your yummy ginger biscuits which taste marvellous thank you. We had trouble creaming the butter though so would it be possible to put the sugar in the liquid in lieu of the dry mix. Thanks again and God Bless. .Claudia ( in Australia )

      Sounds like your butter must have been still too cold. Try waiting for it to soften a little more so it’s easier to mix.

      Yes, any other nut flour works well as long as it's finely ground. You can sift your flour to remove the larger chunks.

      Hi Mary, I haven't tried this recipe with date paste. I think it will work but the texture and taste will be different. Since it's sweeter than coconut sugar, I would add only 1/4 to 1/3 cup. Please let me know if you try it and how it goes.

      Omitting or substituting the eggs will change the texture of the cookies, but you can use any other egg replacer as a binder.

      These are soft cookies and baking them longer won't change the texture. But you should try them cause they are really good :)

      Brown sugar works in place of coconut sugar, but all purpose flour may not work so well. It has different properties and may make the cookies drier and though. You could experiment with it and adding less , maybe 2 cups instead. Please let me know how it goes.

    These look really good!!!! Are there any suggestions for a substitute for the coconut sugar? I am currently on a candida diet and every bit of sugar will make me sick and break out with eczema.

      If you're on candida I suggest just omitting the sweetener altogether. The recipe will still turn out ok.

      Yes you can however you may need to add less oatmeal than the recipe calls for because it is drier and more absorbent than almond flour.

      It does make a difference but it may work. Usually you'll get a denser cookie and you may need to adjust the amount added so that your dough is not crumbly.

      Erythritol/swerve may work as well. They bake differently so your cookies might have a different texture but still good. If you try it please let me know how it goes.

      Add the same amount of coconut oil as long as it's not melted. If your dough has a different texture then mine you can adjust it by adding more flour or oil.

      Are seeds allowed? If so you can use a seed flour like pumpkin or sunflower seed in place of the almond flour. A gluten-free oat flour may also work, but you'll need to add less of it since its drier and denser than almond flour. Please let me know how it goes after you make it.

      Hi Michele, the dough for these cookies is soft and the cookies after baked are soft and chewy. Sugar cookies are harder so I'm not sure. I think you should give it a try and see how it goes. Maybe omitting the egg would make a less "cakey" cookie. Please let me know how it goes.

      This recipe adds coconut flour so the cookies would roll out easily and crisp up on the edges.
      They roll out like a dream and hold their shape really well during baking. They are crispy and buttery on the outside, and soft on the inside.
      This might be the best adaptaion of the above TH-cam recipe for a sugar cookie :)

      Almond flour is made from ground almonds. Some have the skin on which gives baked goods a drier texture, but blanched almond flour is what I use in all my recipes. You can you grind your almonds yourself to make the flour and I have a tutorial here: th-cam.com/video/s8SGGny8RBs/w-d-xo.html
      Be sure to watch until the end to see how it affects the texture of baked goods in comparison with store-bought almond flour.

      This where I get stuck because your so right the flour texture affects the cooking so greatly as I have found to be the case so many times. I have been using Almond meal (ground) for your recipes until I noticed you had Blanched almond flour in your recipes. Btw Almond flour is more expensive then ground almonds where I live.
