    BAKED BANANA OATMEAL CUP RECIPE
    3 cups rolled oats
    2 teaspoons baking powder
    1 teaspoon cinnamon
    1/8th teaspoon ground nutmeg
    1/2 teaspoon kosher salt
    1 cup mashed banana (2-3 bananas depending on their size)
    2 pastured eggs
    1.5 cups of unsweetened almond milk (or any milk you prefer)
    2 tablespoons mini chocolate chips
    Preheat oven to 350 degrees F.
    Spray a 12-cup muffin tin with cooking spray or coat it with coconut oil or butter.
    In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
    In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
    Pour the milk mixture over the oat mixture and stir well to combine.
    Evenly divide the oat mixture between all 12 muffin cups and then top each one with a sprinkle of chocolate chips.
    Bake for 20-25 minutes or until set and cooked through. Allow to cool and then store in an airtight container in the fridge for up to a week.
    Recipe Notes
    *I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them in the microwave for 30-45 seconds or pop them in the toaster oven until warm.
    *I rely on bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
    I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins, or raspberries. Stirring them into the batter is certainly an option if you want more flavor through the muffin cup.

    I just finished baking these...and LAWDHAMERCY !!! As of tonight, I pledge to ALWAYS keep the following ingredients in my home : OATS...BANANAS...RED APPLES...PECANS...and HONEY. As long as have those 5, I will NEVER buy sweets again. U just WILL NOT find these muffins in restaurants or stores. I feel so empowered now knowing I can make my own HEALTHY SWEETS.     I make a similar recipe but I run my oats through a food processor to turn them into more of a 'flour'! It makes the muffins a little fluffier!

      i believe that makes the oats more processed which isn't as good for you. better to leave them whole.

      @@mrsmir1734 FRESH of course! I blend almond milk, 2 eggs, 3 large bananas, 1 cup of blueberries and pour that on top of the dry mix. then add another cup of fresh blueberries to the mix. trust.

    I've been eating one of these muffins nearly every day for months now - it's a great after run/workout treat . I've added dark cocoa powder, dark chocolate chips, whatever nuts I have in the pantry, and a couple of tablespoons of psyllium husk to mine (because mine were kinda falling apart without it - probably because I use more banana than you do - and more extras) and I use kefir milk instead of plain milk. DELICIOUS!!!

    Just made these again. Very delicious! I didn't have a full 3 cups of rolled oats, so I used 2 cups of old fashioned and 1 cup of quick cooking oats. Using the quick oats helps with any 'wetness' issues after baking. I also added dark chocolate chunks, pecans and a few teaspoons of liquid monkfruit sweetener (caramel macchiato flavor) instead of using cinnamon and nutmeg. YUM!!! 👍🏾👍🏾

    These were delicious and I made an assortment that included pumpkin seeds, walnuts and coconut. I did add 2 tbsp of coconut sugar that was suggested. I also made this vegan. I used flax eggs and dairy free chocolate. Thank you for helping me change it up!

    been making these for a few weeks but decided to grind the oats to give it the texture of standard muffins, also added some beet/ carrot pulp left over from juicing, pumpkin and chia seeds and topped with rasberries and blueberries. The combination , flavor and nutrient density is so great that its become our fav snack during the day. Thanks alot

    Very delicious! I added coconut to the mix and on top, so the coconut toasted nicely! I also doubled the cinnamon! I used rice milk for the milk.

      They do work just fine -- except the glycemic index for quick oats is higher. Not a good thing.

    I rarely bake (or cook alot) but I tried this recipe tonight and it came out super delicious!! I did leave it for more time in my oven of 40 minutes which formed a golden crisp top and well formed body. No more sugary, store bought muffins for me now!!

    Tastes amazing! used regular milk instead of almond milk and raisins instead of chocolates. I also added a pinch of vanilla (for the eggs) but honestly the taste and the texture is more than awesome. Tried some few recipes like this before and this by far is the best! Thanks a lot

    Some changes I made....I used quick oats, I added two TSP of sugar, I just blitzed the dry ingredients the previous night and left it in the blender...blitzed the wet ingredients in the morning poured it and put it in the oven!
    Since the muffins don't have oil or butter, they tend to stick to the paper cup if you're using any.
    The chocolate chips are kinda necessary if you don't want to have bland muffins.
    Also, I made a small batch so keep an eye on the time coz they could dry out after 20 min.
    But overall, great recipe. Thanks :)

    Hi Dany , I tried this muffins today ! I didn't have the cup cake tray so baked it in a cube shaped cake pan ! I required about 2 cups of milk instead of 1.5 as you mentioned ,also in place of eggs I added clarified butter ,2 tb spoon ! The texture came up to be good and crumbly ! But it took longer to get baked , about 45/50 mins roughly ! After it cooled I cut them in bar shape. And it turned out to be yummy !!! Thank you ❤️I am sorry if I mispronounced your name ! 😁

    I made this recipe yesterday and it is really wonderful! At first I thought the dough was really soupy and running. But I checked my ingredients and I had followed the recipe. O they came out so delicious that my friend that works at Sprouts ate three of them in one sitting! He says this is good as anything they make! I personally feel that the unsweetened vanilla almond milk could be really good in these! I wish health and blessings to all who read this!

    This muffins are perfect! I love theme with almond butter (I prefer to ground the oatmeal for a “smother” muffin)

    Just took out of the oven, I too turned oatmeal into flour, measured oatmeal but when added to wet ingredients, was too soupy, so I added 1/4 cup of oatmeal and 1/4 cup whole wheat flour and a tablespoon of flax seed. Turned out great. Thank you

    These are a great snack/dessert and have been making these for 6 months so THANK YOU for publishing your recipe! I started adding peanut butter powder in the last 2 months so I tried it out in the recipe (8TB of PB2 or PBFit Chocolate Peanut Butter powder) and they turned out even better! This past week it dawned on me that I could try mixing up some of the PB powder to slather on as a swap out for my normal peanut butter or almond butter and its definitely the way to go if you are watching your calories and fat intake. Happy days :-)

    We cook for 8 disabled seniors. For breakfast they get Rice Pudding, Fresh Fruit Cups and These Wonderful Muffins. I am having such a good time since I found Clean & Delicious !!! MRS A in SF ( I ran out of mini chips, so when they cooled I put nutella on top )

    I’ve been looking for some lazy muffin recipes and these look amazing, I’m vegan, so I would skip out on the eggs (maybe I’d use a chia egg or flax egg), but still a good idea

    These are awesome! I didn't have enough bananas so I substituted with whole yogurt and a little maple syrup. Kids loved them!

    I just made these. They are really good and of course healthy! My bananas were over riped but muffins still needed to have much more sweeter. I used a little bit of honey too but apparently it wasn't enough haha.
    Overall, liked the recipe and will make it again, but next time I'll add lots of honey in it 😋
