Long-haired old country boy here. This is a good way to use leftover potatoes. I will try it. If you have an overripe banana, mash it and mix it with one egg and 2/3 cup of oatmeal to make 2 nice sized pancakes. Walnuts, vanilla, and cinnamon are good in these.

After grating the potato (s) I squeeze out the water. There are so many other things we can add to these potato pancakes. Precooked onions,zucchini, ham, mushrooms. I practically live on foods w onions and some garlic and lots of vegetables, but I am not a vegetarian. More veggies, less meat 😊 U got me there!...potatoes are so versatile. You can do SO much w them. Filling to keep u full for a while.
