Long-haired old country boy here. This is a good way to use leftover potatoes. I will try it. If you have an overripe banana, mash it and mix it with one egg and 2/3 cup of oatmeal to make 2 nice sized pancakes. Walnuts, vanilla, and cinnamon are good in these.

Look delicious! I have made potato pancakes many times but have to make a larger amount. I grate on the larger side of the grater. Put the potatoes in cold water to keep from turning brown. Then rinse a couple times to remove extra starch. I drain it well then put in a clean white flour sack dish towel and wring it to remove as much water as I can. Then I add a couple beaten eggs, a little S/R flour, s+p and chopped green onions or you can use white sweet onion (Vidalia). Then fry out in little patties just like yours!
