    In this video, I demonstrate how to create filled chocolate truffles. I will also demonstrate how to make raspberry white chocolate ganache. Free recipe can be found below.

    250 grams Dark Compound Chocolate (i.e., Cadbury melts)
    90 grams white chocolate
    30 grams cream
    1/4 cup raspberries
    2 tablespoons sugar
    1 1/2 tablespoons water
    Luster dust to decorate
    These are super fun to make so I do hope you give them a try. The raspberry ganache filling hardens in the fridge so it works nicely as a macaron filling as well or as a filling to go inside a cake.

    great video :) for those trying this out for the first time, try adding the raspberry mixture to the cream before adding it to the chocolate to avoid seizing.

    using soft molds would be painstakingly unwise, thank you for your wonderful recipe! I am loving this composition/ in my other life I live on a coco plantation, I own and operate a chocolate factory, and a vast flower field, and I chase storms,.. Ty for sharing this delight!

    There is another less messy way to make chocolate shells. Once the chocolate has been tempered, just pipe in the chocolate until each mold is about 1/4 full.
    Take a food grade paint brush and paint/swirl the chocolate around the sides....it doesn't take that long....just one or two swirls should coat the sides well.
    Pop the mold(s) into the fridge for about 10 minutes or until set.
    Fill the centers, pipe the remaining chocolate to cover each mold....into the fridge again for 10 min.
    Done!

      I think it would work with strawberries... I've seen strawberry ganache with similar measurements.

    I can't get mine to come out of the tray. I'm not sure what I'm doing wrong so I'm going to list a few things below and if anyone can tell me if I'm doing something wrong please help
    1. I'm tempering blocks of Cadbury baking chocolate.
    2. I then pour it into my mould and flip it upside down to run out the excess chocolate into the bowl I tempered in then leave the mould resting upside down on some baking paper on the bench.
    3. Then I put it into the fridge for a few hours to set properly
    4. Then I try to get the chocolate shells out of the mould before filling them with the ganache just so I don't waste the it if they don't pop out (this is where I have the most terrible because I usually only get about half of them out and the rest break or stay stuck).
    Am I using the right kind of chocolate for tempering? Will they pop out better if I fill and seal them rather than letting the shells set? Are they not coming out because I tempered them wrong or didn't need to?

    I tried to make some of these tonight. I used milk chocolate with the raspberry ganache and they came out of the moulds fine, but I used white chocolate for the salted caramel ones and they got stuck in the moulds and wouldn't come out !

    The salted caramel looks divine!!! I would love a recipe for that just to eat from the jar ;)
    Also do cadbury melts need to be tempered to get them to have that crack? Because mine dont seem to set properly after just been melted in the microwave and poured into the molds, they keep on melting when outside the fridge. Have you used some other compound chocolate or cadbury baking choc/choc chips?

      Saadia S hmm that's strange. Usually compound chocolate doesn't need to be tempered. Do you live in a warm / humid environment I am wondering?     Hello, any tips on melting compound chocolate? I bought the white chocolate ones and it refuses to melt! Wasn't able to get it to a runny consistency like yours. :(

      Thank you +Irene Cai! Were you able to melt it down to liquid form at least? If they melt to liquid but aren't very runny at all I would recommend adding in a little extra cohpa / vegetable shortening. Otherwise regular vegetable oil also does the trick :) just a little, maybe a tea spoon or so s it becomes more fluidy in consistency.

    Before you add the raspberries to the ganache Run it through a strainer to remove all the seeds 1st

      yes you definitely could.. cream cheese and chocolate always go together beautifully I reckon :) I think it would just need to be kept refrigerated if anything. Although I remember reading that if you have enough icing sugar in your frosting, it actually stops bacteria from growing, so it's like a preservative. It can keep it from going off at room temperature. Best research this again before taking that advice haha but I remember reading this on a forum. Just a fun fact ;)
