How to make Strawberry Chocolate Bonbon | 귀염뽀짝 딸기 초콜릿 봉봉 만들기 🍓

    * I love their flavourings. I was impressed that it’s quite natural! I’ve tried apple extract and bacon flavouring and I really recommend them.
    How to temper white chocolate (Proper way!)
    Melt the chocolate up to 40~45C. While stirring the melted chocolate continuously, slowly add the unmelted chocolate in several additions. Lower the temperature to 26C. And use microwave or bain-marie raise the temperature to 28~29C. If you used the microwave method, slowly reheat, at 10 second intervals (at half power), while checking the temperature and stirring, at each interval, until the desired working temperature is reached.
    *You need to use couverture chocolate for tempering!
    Strawberry ganache filling
    Strawberry puree 150g
    Sugar 200g
    Glucose or Corn syrup 25g
    Valrhona strawberry chocolate 150g
    Strawberry puree 50g
    *You can make it set the ganache filling overnight or 20min in the fridge.
    Modeling chocolate
    White chocolate 50g
    Corn syrup 20g

    템퍼링하는 법
    커버쳐 화이트 초콜릿을 40~45도로 녹여주세요. 녹인 초콜릿의 30%정도 커버쳐 화이트 초코릿을 넣고 잘 저어줍니다. 26도까지 온도를 낮춘 뒤 다시 초콜릿을 28~29도 정도로 올려주세요.
    온도 조절은 따뜻한 물을 넣은 냄비 위에 볼을 올려서 하셔도 되지만, 저는 개인적으로 전자렌지를 선호해요. (물 끓이기 귀찮으니까 ㅋㅋ) 대신, 전자렌지를 사용하실 때는 엄청 조심하셔야 해요. 조금만 돌린다고 해도 온도가 팍팍 올라갈 수 있거든요. 참고로, 귀차니즘 그 자체인 제가 자주 쓰는 방법은 영상을 참조해주세요! 진짜 간단한 템퍼링 방법이에요.

      Very common and easy to find 🌺 also, much easier to work with then making your own. Specially if using the airbrush. Less risky

    안녕하세요 콤프레셔가 없어서 색소를 붓에다 발라 쓰는데 한번 할때마다 몰드에서 엄청 안떨어지고 계속 뜨거운물에 씻어야 해서 고민입니다. 다른 분이 추천해준 클리너나 세정제품을 써봐도 잘 안지워지는데 몰드에 묻은색소를 지울때 어떻게 하시나요?

      스프레이 다 끝내고 휴지로 코코아버터를 닦아준 뒤, 키친 싱크대에서 뜨거운물을 틀어서 넣고 계속 스프레이하면서 안에 있는 것도 씻기도록 해요. 그리고 말려준답니다
