Lynne, Gateshead, leek puddings are all different, my mam used to make the suet dough then mix the washed leeks into it so it was like a big dumpling and then she wrapped it in muslin and like steamed it in a big pan on top of the cooker and it was like a great big moist thing and we had it with new potatoes and mince and onion over the top it was lovely like big ball if we had no leeks she made a big onion pudding that was lovely as well but suet pudding are lovely , yours was a great one it worked well perfect. Have you ever tried pressure cooking this pudding? I did your steak and kidney pudding: steamed for 15 mins, pressure cooked on low pressure for 30 mins, then left it 15 mins for the steam to disperse slowly rather than a quick pressure release. That came out perfect so was thinking of trying the same for this as it looks delicious. I have never had bacon and leek pudding before. Thank you for your delicious recipes, all I've tried are fast becoming firm favorites.
My husband loves meat puddings so I am going to have to try making this. Never made a pudding before but with your great instructions i will have a go. I haven’t got a steamer so how long would I need to steam it in a saucepan please. X
I frequently in winter make a steak and kidney or steak and mushroom pudding. I put the steak the pudding raw but floured, then add a small amount of stock and gravy browning in as the liquid. It then gets steamed for about 5 hours. I may very well try this.
Its hard to beat a suet pudding, a proper home made one anyway. M&S used to sell absolutely delicious individual steak and kidney puddings years ago, I hadn't seen them in ages until the other week. Anyway I bought one, don't know what they've done but it was awful, the pastry was rubbish. Lesson learnt, make your own. I love watching Ian taste testing as much as I love watching you cook Mandy x

I never saw this type of steamed pudding only treacle, or Christmas puddings.As the live video was taken down I was not able to know that you will be up loading less, but I do think you should have a break, though I will miss you whenever you don’t post. I don’t know how backyard chef does it every day.😊

I think I’ll just make a steak and onion or steak and kidney though before our weather gets too hot. Can I freeze suet pastry after it’s cooked Amanda or would it be better just to make a small pudding?? I’m not sure cos I’ve only used suet once or twice. Glad you and Ian had a great break on the weekend. Sometimes you just have to do that to replenish yourselves, don’t you.

We used to have leek pudding. Mam would serve it with cooked ham. The water used to cook the ham became the stock for soup. Nothing was wasted.

Have you ever tried putting a bit of garlic and/or English mustard into your mash. I find it gives plain old mash a bit of extra taste.

Had this as a kid though i preferred plain leek as mother didn't fry the bacon. Always came out pale regarding the bacon
