Bacon & Onion Roly Poly CLASSIC BRITISH dish

- Bacon & Onion Roly Poly, a classic British dish, is a savory rolled suet pudding filled with bacon and onions.
The Bacon and Onion Roly Poly has a rich history rooted in British culinary tradition. This dish is a variant of the classic suet pudding, a staple in British cuisine for centuries.
Suet puddings date back to medieval times in England. Initially, they were primarily sweet puddings made with suet (a type of animal fat), flour, and various fillings. Over time, savory versions became popular.
19th Century and Industrial Revolution:** The savory Roly Poly gained popularity during the 19th century, especially among the working classes. The Industrial Revolution saw many people working long hours in factories, and dishes like the Roly Poly were filling, economical, and relatively easy to prepare. It could be cooked alongside a main meal in the oven or steamed, making it convenient.
Bacon and onion became a common filling due to their availability and affordability. Pork was a widely consumed meat in Britain, and onions were a staple in the diet, making this combination accessible to the masses.
During both World Wars, when rationing was in place, dishes like the Bacon and Onion Roly Poly were practical as they could be made with rationed ingredients and still provide a hearty meal.
In its various forms, the Roly Poly has been immortalized in British culture, appearing in literature and songs. It's a dish that speaks to the resourcefulness and simplicity of traditional British home cooking.
While not as commonly made in modern kitchens due to changing dietary preferences and the availability of a wider variety of foods, the Bacon and Onion Roly Poly remains a classic dish that represents a significant part of British culinary history.
With its humble origins and satisfying nature, this dish is a testament to traditional recipes' adaptability and enduring nature through changing times.

Rick, I'm saving these recipes, which remind me of my late parents ❤ Im in my early 50s, and this is fabulous childhood food memories; all of which deserve another tasting now! 😊 Thank you
Save away is not a problem. I'm in my sixties now, and I agree. Best, Rik
Amazing, the whole world thinks the Brits only are capable of cooking fish and chips I'm surprised at the traditional menus this cook comes up with, I'm British decent in Australia and these sort of dishes appeals to the Brit in me.
So true! Hope you enjoy mate. Best, Rik
I've actually had a fair number of these dishes as a child in Australia. Sadly, at the age of nine, I moved to the Netherlands, where my parents originally came from, and haven't had them since. I'm a bit of both Aussie and Dutchy😉. I'm glad I found this channel, which will help me to catch up again.
I'm pleased you found me. Hope you enjoy something. Best, Rik@@telebubba5527
Looks good. I may add some red pepper for mote color which maybe delicious as well. Thanks for the inspiration!
Thank you for doing this. It is very nostalgic for me. My lovely Londoner mum made this a couple of times a month during winter time when I was growing up. I was so lucky coming home from school to dinners like this waiting for me. Mum would also add mixed herbs and she used to steam hers in a cloth in her big silver pot lol
Wonderful! Thanks for sharing. Great memories. Best, Rik
Mine too 😄
My lovely Londoner Mum also used to make this, rolled in a muslin cloth in a double boiler.
In the 60s this was my favourite school dinner.
Thank you. Best, Rik
Suet is unobtainable in South Africa, so vegetable suet will have to do! My English grandmother used to make something similar. Now it’s my turn.
Good stuff. Love to SA. Best, Rik
Ho there fellow South African.. I'm thinking we could use Holsum which is a vegetable fat I think. Holsum also makes a great hot water pastry. I think that would work well
What do you think Rik❤
I absolutely love your channel and the great recipes it brings to me.
I was born and brought up in colonial Northern and Southern Rhodesia (now Zambia and Zimbabwe). The British influence in my Mother's fabulous cooking was such a blessing. My mother spoiled my father and us four girls with her marvellous meals and we've all passed on her recipes to our respective families. I'm 78 now and the kitchen is my happy place 😂
There’s something very special about home made suet pastry with rich gravy poured over it. Lovely job, Rik.
Thank you. Best, Rik
Oh! I really remember this one, I think my mum steamed it in a cloth.
Thank you. Best, Rik
So did my Mum
I’ve been wanting this for a very long time it’s delicious
Thank you. Best, Rik
Just made this tonight but steamed it in a big pot of home made veggie soup. My mum used to make this in the 1950's I didn't realise it was a thing, thought it was just another of mums great creations. I hadn't made this in years
Sounds great! Thank you. Best, Rik
My London aunt used to make this for us when she came to visit us she would boil hers and add sage as well thank you for sharing ❤
Yes, steaming is the more known way. I like a baked crust. Thanks for sharing. Best, Rik
@@BackyardChef My Nan used to make this using streaky bacon layered and then she steamed it in a massive pot for about 3-4 hours. One of the best parts was after she cooked it we would have a slice whilst it was hot (yummy) or wait until it cooled down then have a slice. However the really great part was cutting of a slice and then frying it, ooohhh the taste was fantastic. Thank you for reminding me about this, I had forgotten how to make this.
thanks for sharing, Yes a quick fry crunch over the sides and a fried egg on, and some beans, Lovely breakfast. Best, Rik@@Firefox1701d
Oh the bacon and onion clanger. Thats a blast from the past Rik. I remembered coming home from school on a winters day and having that..I'm now 74 ..
Thank you. Best, Rik
This was a school dinners staple.
Thank you. Best, Rik
I've been eating this all my life (72) my grandmother taught me how.the way I do it before rolling sprinkle a beef oxo cube ,then roll up in greaseproof paper then tin foil and steam for two hours, Mmmmmm
Lovely! Thank you. Best, Rik
Just made this for tea,it was delicious..Will definitely make suet pastry again..Thank you.
Thank you. Best, Rik
We called this dish a bacon badger! Delicious, thanks for the memory! 😊
What a great name! Best, Rik
A Buckinghamshire bacon badger would typically have potatoes and sage in it, traditionally steamed then as home ovens became more commonplace they tended to be baked instead.
That surely has to be food from heaven Rik
Thank you. Best, Rik
Thank you Rik, saved, and shared so i dont lose it, i got try that, i miss i from 40 years ago like me nan made it, classic cooking boss,
Thank you. Best, Rik
Another winner. Perfect for a cold and snowy day.
This is a fantastic recipe. I enjoy it every time. Hope you do. Best, Rik
I baked this today. I'm low carb and cannot eat pastry, so I prepared my go-to ersatz "pastry" with Mozzarella and cream cheeses, almond flour, and egg. The Roly Poly was delicious, tastier than the sausage rolls I usually make. Love the recipe.
Great job! Thanks for sharing. Love the pastry idea. Best, Rik
Looks yummy and I appreciate the backstory about it’s history. Thanks ❤❤❤
Thank you. Best, Rik
Hi Rik, Thanks for this recipe, I remember my mum making it, this will be our dinner tomorrow.
Thank you. Best, Rik
Really enjoy your presentations. A joyful combination of cooking skill and passion. I'll be trying out some of your recipes. Thanks and cheers!
Thank you. Best, Rik
Always steam mine in a cloth like my Mum used. to. A marvellous Winter warmer. She would also make Plum Duff, again steamed and served with custard. Any left over she would fry and then sprinkle a sugar over. All gone we have to be thin and trim and these delights don’t help with that. However at 92 I am now not bothered, so keep ‘em rolling Rik!😅
Thank you. The old ways are the best. Best, Rik
I've been 'dipping' into your channel for a couple of days now and enjoying your videos and the old-time dishes I used to love so much but had forgotten about. But now you have earned yourself another subscriber... how could I possibly not, when you give me one of my best childhood meals that's not only delicious but wrapped up in lovely memories of my mum, from the past...
Awesome! Thank you! Hold on to those memories! Best, Rik
I’ve just made two, one for the freezer and one for today’s dinner. Mouth has been salivating since I come across this particular video, that was yesterday lol, going to make your pita bread tomorrow and I’m now subscribed to your channel. Thanks 😊
Thank you. Best, Rik
Looks great Rik. I might make this very soon. Yum, yum, yummo!!!
Hope you enjoy. Thank you. Best, Rik
My Nan used to make this and she used to add chopped tomatoes as well into the filling
Lovely! Thank you. Best, Rik
Never seen this before. My nana used to make bacon and onion with scalloped potatoes
Lovely! Best, Rik
Oooh, this takes me back...my mum used to make bacon and onion pud, it was delish. Will give the roly poly a go, cheers!
UPDATE: Made this today (18.01.24) and it hit every spot I never knew I had. Absolutely delish, crispy on the outside, soft on the inside. Tasted amazing. Thanks.
Thanks for sharing, hope you enjoy it. Best, Rik
Missed this video previously. This was a recipe my mum made regularly and became a real comfort food! Yummy.
Thank you. Best, Rik
My mouth started watering when you pulled that roly poly out of the oven. Thank you for sharing that awesome recipe!
Cheers. Thank you. Best, Rik
Ric, It snowed here In northeastern Pennsylvania and its about 22* (F). This is the perfect dish to come into after 2.5 hours of snow removal. Good stuff. Keep it coming and Thanks!
Hope you enjoy, Frank. Stay wrapped. Thanks. Best, Rik
I just put the bacon rashers and onion in without fryingI thenwrap it in a cloth and boil submerged for a couple of hours.............a much softer presentation. fantastic taste.......and really good fried the following day.
Yes I have made it that way many times - I like the baking version these days! Best, Rik
A real favourite from my mum. A bit of sage and it tastes good cold. I used to give a big slice to the butcher in exchange for fresh suet.
Great memories. Fresh suet - wow! Best, Rik
Thank you for the great video, definitely on the menu this week
Hope you enjoy. Best, Rik
Nice one Rik
I make mine in a pudding bowl like a steak & kidney pudding and steam it for 2 hours, sometimes add some sliced potatoes for some extra carbs😉
Looking forward to your next classic and thank you for sharing 👌🏻
Cheers, Kev. Yes, steaming is the usual way - I like a crust on mine. Best, Rik
My mum used to cook a steamed version with gravy was amazing, I will try this thanks
Hope you enjoy. Best, Rik
So comforting to come home from a hard days' work and spend next to no time in the kitchen cooking up a treat. The onion gravy topped it all of nicely. Can't wait to try the suet pudding mix but I do need to buy a rolling pin. Good form of punishment when the other half's misbehaving too.
Ha ha ha, steady. Love onion gravy. Hope you enjoy it. Best, Rik
@fishnchips2423 I use a empty wine bottle to roll it out, works a treat & if you want to keep the pastry cold, fill it up with ice cold water & roll away
@@kerryh3918 you know what Kerry, thanks for the great tip because one thing I do have around is wine bottles galore for sure, thumbs up mate
That looked Bloody Delicious. Gonna have to try it. Cheers.
Thanks. Hope you enjoy it. Best, Rik
I would use bought Puff Pastry, and add some diced precooked potato to the ingredients to give it more body.
Sounds like a new recipe! Will give it a go. Thanks for sharing. Best, Rik
Then it would no longer be this traditional dish though.
You make so many traditional meals it's unbelievable , I love it and I love your videos Rik. God bless
Thank you. Best, Rik
It's absolutely fantastic seeing you cook all these wonderful dishes.I am trying some of them and it's great,so clear and understandable.Thank you chef
Thank you, Carmen; I hope you enjoy it. It's Rik, please - I understand politeness, but Rik will do just fine. Best, Rik
It's what we had for dinner on Wednesday! It's a firm favourite in my house. I also pre cook the bacon and onions too.
Sounds great! Thanks for sharing. Best, Rik
Oh thank you! My grandma used to make it but I never managed to get it right. I will now. 🤗
Give it a go, you can do it. Best, Rik
Thank you for the education of the British Isles anything on the isle of man I would love seeing that in the future..
I do have a couple, will do. Best, Rik
I usually bake or steam my roly polys in an aluminium roly poly tin i find they turn out a better shape and texture, the tins are available online fairly cheap if you can't find one locally. A very versatile dish as you can fill them with anything you like sweet or savoury and they always turn out delicious.
Thank you. Best, Rik
Looks so good! Especially with the onion gravy.
Delicious! Best, Rik
my Mother used to make this back in the 60s YUM
Hope you enjoy it. Best, Rik
@BackyardChef ever made milky jelly with heavily whisked Carnation

Yum
Oh, an other delicious recipe, thx❤️👍🇫🇮
You are most welcome. Best, Rik

Thank you. Best, Rik
Tempting. You might say it's a British classic, but I'm a 65yo Midlander and have never once tried a savoury roly poly.
Hope you give it a go! Many have over the years. Best, Rik
Add corned beef to this along with the bacon and onion, supreme. Thanks for the great video's....
Great idea! Thank you for sharing. Thank you. Best, Rik
When I was cook at the residential home I work at ,I always made this for them and they loved it 👌🏼looks nice what you cooked up 👍🏻
Sounds great! You did good! Yes this is a recipe. Best, Rik
Ahh thank you so much Rik….my late Mum used to make this but I never knew what is was called & how to replicate the pastry. Making this right now & it looks simply splendid. Subscribed
Hope you enjoy, thank you for the sub. Best, Rik
Pouring off the water before the fat starts to appear reduces the saltiness of the bacon.
I always used sausage meat and onion 🤦🏻♀️ definitely going to give bacon a try as looks delicious 😋
Sausage sounds like a great option. Best, Rik
Good video. This does look tasty.
It is! A good meal. Best, Rik
Awwwww I forgot about this I haven't made it for years yummmm guess what we have for tea❤

Mick you know me - its a good feed. Get your wellies, coat, hat, scarf and gloves ready! Best, Rik
Never had this but I've always loved suet pastry, sweet or savoury
Lot easier than a steak and kidney pud (which is heaven on a plate but a few quid these days) and will cost pennies for a ton of flavour, who doesn't look forward to anything rich warm and comforting with plenty of bacon?
Midweek joy, this needs making first thing

These are like ration book foods or certainly apres WW11 secondary modern “comprehensive “ schools. I don’t remember ever eating this type of stodgy food but can see the value of learning how to do so now for future generations with rising prices.
The old recipes are worth keeping alive. Best, Rik
Looks good Rik, my late mam had a rolling pin like yours and it was originally her mams x
The pin is a good one, had its wear and tear that is for sure. Best, Rik
Just found this yummmmy i was going to ask if you would do this. 🌹❤
Hope you enjoy. Thank you. Best, Rik
Another fine recipe that is knew to me and I will take on the challenge to make it. It reminds me when the Leeds lads came over last year and, brought some pork pies over from Wilsons butchers in Crossgates. They bring pies over every year but this year they, brought over pork pies stuffed with pork and black pudding. Not for me it spoils the pie. Some of these lads which I know very well are involved in the food manufacturing and supply business in Leeds.
I will be making Black Pudding on here soon! Just trying to get hold of some casings! no probs for sausage casing - trying to get hold of the larger ones is a nightmare - the challenges we face here mate. Best, Rik
All the best in the casings.@@BackyardChef
Cheers mate@@gyorgykiszli4269
How did you make the onion gravy. It all looked superb, even the veges on the side!
I posted the video a while ago th-cam.com/video/Ch54aCklsJE/w-d-xo.html Best, Rik
Just watched your formed ham vid. I will be making that tomorrow, and when ready I think I will use the ham instead of bacon and make this. Luckily I have some suet in the freezer.
Sounds great! I have formed ham in the fridge all the time. Its a go to for cheese and ham toasties. Best, Rik
Good one, thanks Rik. Question : do you have a video on how you make bacon?
Yes I have, mate 2 ways. Best, Rik
Appreciate the video. Fun recipe. The dough looks a little underdone when you first slice into the roll, is that normal? Maybe tin foil and another 10 mins cook time if it comes out that way?
Anyway thanks for the recipe, looks tasty.
Hi, Allen yes it can be cooked for longer. Thank you. Best, Rik
Hiya, is this a similar take on the Bedfordshire Clanger ? Memories.......😊
Here is the Bedfordshire Clanger - th-cam.com/video/zLfHN3HNL90/w-d-xo.html Best, Rik
@backyard chef Bedfordshire Clanger is bacon, cubed potatoes and onions in a suet pastry with apple filling at the other end if you want.
Sounds good! Thank you for sharing. Best, Rik@@gillpearce2143
@backyard chef, is there any chance you could show us how to make the steam version please? That’s how my Granny used to make it.
Will do. Best, Rik
Ric is this the traditional Bacon clanger? I remember having bacon clanger as a youngster and I think I loved it. I am sure it was made using up bits of boiled gammon- might be wrong it was in the very distant past lol I do however think honk it may have been boiled in a cloth but not entirely sure- memory is a weird thing.
Yes can be made in a cloth - folks do not seem to like the old ways on here. Thank you. Best, Rik
👍 Pastry making is an art not a science - either you can do it or you can't
I'm Lucky, I've made it for so long and do not hesitate to make pies etc - I don't care for all the butter has to be ice cold and all of that - I have made pastry in some very hot places with meted butter. I agree puff pastry has to be cold. There isn't many puff pastry recipes on here - only using bought stock. Do you make your own? Best, Rik
Have you tried making traditional Thai Curry Puffs yet?
Not on the channel - We have our own recipe, that we have made for years commercially and sold from our restaurant and shops. We closed a couple of years ago - old age. Best, Rik
Hi Rik, I reckon a bit of cheese grated in there would be good too. What are your thoughts mate?.
Sounds like a good plan! Thank you. Best, Rik
Looking super good. Do you think you could add small cubed cooked potatoes to the onion and bacon mix.?
Yes, definitely. Everything can be adapted. Best, Rik
Thanks
I don't eat meat but I buy bacon off cuts dor my daughter. Heron foods sells a massive pack for under £2.
Sounds like a bargain , thanks for sharing that. Best, Rik
Vegetable suet is not bad too…or half beef suet and half veggie 😊
Thank you. Best, Rik
I put a bit of grated cheese in the dough.
Thank you. Best, Rik
Thanks Rik, would love to try this, I can't find suet on line, Can you give us a link to buying suet?
Mate you could struggle like me. amzn.to/47FA0zI not sure where you would order from.
There are several alternatives to suet that you can use in baking suet pudding. Some of the most recommended substitutes include:
Vegetable Shortening: This is the best alternative for suet, especially for vegetarian options. It can be substituted in a 1:1 ratio for suet. For better results, freeze and grate the shortening before use to replicate suet's consistency.
Beef Fat: If you are not vegetarian and can't find suet, beef fat is a great substitute. It's available at butchers and can be used in the same way as suet.
Lard: Made from pig fat, lard is another suitable substitute. It is easily available in supermarkets. However, it has a lower melting point than suet, so it may not be ideal for every recipe.
Vegetable Suet: If you're looking for a vegetarian option, vegetable suet is a great choice. It's made from vegetable oils and can be used in a 1:1 ratio like regular suet.
Best, Rik
Thank you Rik so much for a comprehensive reply, I make lard from rendered pork fat, didn't know I could use that, you're a champion 👍
This one is about the self raising flour. Butter will do it at a pinch - I won't recommend that though. Best, Rik@@ZenonZolek
How about a cheese & onion pie? 😋
Filmed a couple of years ago th-cam.com/video/mYGqiu2eubg/w-d-xo.html Hope you enjoy it. Best, Rik
Rik, can I use a bread dough and lard instead?
Its too heavy - you can add baking powder and turn the bread flour into a self raising bread flour which would make it lighter in the cook. So it could be done, however not the same results. Best, Rik
I want to eat Dinner at Rik's place every night.
Id gladly share, Thank you. Best, Rik
any recommendation regarding a substitute for beef suet > ,,, nothing available where I live ,,
Butter, shortening. Thank you. Best, Rik
@@BackyardChef Thank you !! ,,,, love your videos, brings back many great memories growing up in Scotland. By the way, this recipe ( the pastry,) would that particular recipe work for Scotch pies ?? ,,,, cheers.
Vegatable suet not as good for rising as normal suet but I imagine a bit healthier.
I would imagine it may be. Best, Rik
Cracking Rik
Thanks, Allen. Great fried the next morning too. Crust up the side, add a fried egg and some baked beans, good breakfast. Best, Rik
Question can you substitute phyllo dough instead of making the dough?
I wouldn't, phyllo dough is a very thin, light, and flaky pastry dough, while suet dough is a rich, dense, and moist dough used mainly in traditional British cooking. However the choice is your and it might make for a great recipe. Best, Rik
