Though my guess as to why Nintendo removed it is that they felt it was unnecessary with F.L.U.D.D., and it could have been easily exploitable to get to Pianta Village early.

He'll be partially covered at first, but will eventually be completely covered if you stay in the goop long enough. Spinning and swimming both remove the goop.

The thing about the mysterious yoshi head, I think it would’ve been used when you would be riding yoshi because yoshi sprays out juice instead of water, so they had to choose something to display you were on top of yoshi. Though it would be enjoyable to have a yoshi head nozzle in sunshine.
Finally beat the game after playing off and on for 13 years. I love the game so much, but never really tried to beat it. It's just too much fun to goof around.

Kug and the drawing enemies likely come from an earlier concept stage of the game, when the Graffitti theme would have been more represented by enemies. Test Pollution Maps show stick figure characters and the like as well, which hints at the same ideas, before it was decided to use 3D enemies with paint and goop to show off the Gamecube's graphics abilities.
So I know this is old, but the green yoshi head isn’t that weird. The model for the yoshi defaults to green, but when you have a yoshi, it has eaten fruit and therefore is colored. But when it’s juice runs out, or it touches water, you can see it turn green as it dissolves. Also, yoshi himself is considered an extension of FLUDD since he is controlled the same way as FLUDD
I think that yoshi head would mean that you could customize nozzels and the yoshi head could mean that you could clean that Weird orange lava stuff also, you could maybe buy them and coins could have a use!

The unused Yoshi head was most likely to take place for the Fludd nozzle on the bar, but was just replaced with the gut bar.
Diving on the test level’s barrel causes it to be permanently overlayed on the screen. It’s very strange. Nothing else like it happens in the game.
