I'm 62 now and still remember my mom cooking for all eight of us kids. eggs, bacon, hash browns, flap jacks and karo syrup or molasses. I don't know how she did it but she did. Everything was always so perfect. She even made our lunches for school 5 days a week. She was a SUPERMOM and so full of love. Now I'm missing my MOM again, lol There wasn't anything she couldn't make in the kitchen. She also sewed all our cloths till we got old enough to work and buy our own and help out with expenses. I MISS YOU MOM AND DAD!

Randy, I'm 70 and miss my mother more now than ever, so I know your mournful misery.
I just made these for the first time today. I followed her directions exactly, and it worked great two times in a row! (I made some for my wife and daughter first; then, a second batch for me.) During my batch, for the first 15 minutes, I whisked 3 eggs, and then I mixed some instant pancake mix. For the second 15 minutes, I cooked my pancakes. The hash browns came out of my cast iron skillet, and the eggs went right into it. Eggs were done in about 2 minutes; all of my food was hot! I ate at Denny's last night, and my grand slam was actually better than theirs!
I love that “mom” look when she says: “don’t make me come over there!”

I do this with frozen hashbrowns and they turn out awesome, too. I drizzle a little olive oil on top right before flipping. Perfect every time! Thanks, Jenny!

@@Pluviophile218 No...just put canola oil in the pan and cook for 15-20 minutes before flipping and cooking for 10 minutes longer. Good luck!
Here is a cool trick you may want to try. After I grate my potatoes, I rinse them well with cold water then I use a salad spinner to dry them. The spinner will REALLY dry them out. Then I add, garlic, onion, salt, pepper and paprika. Everything else, I do the same. Try that salad spinner trick. You will be surprised - plus it will save paper towels.

+Dave Niezabitowski Wouldn't rinsing take all the starch off? And some flavor I would think. I just know it's the same principle with pasta. Never rinse! :)
+Allison Beck Yes, but that is what you want. Once it is rinsed they won't discolor anymore. Cooking them without rinsing them will make them soggy. The flavor will come from proper seasoning.
As for pasta, I also rinse pasta. It will prevent it from sticking and stop it from over cooking. Pasta will continue to cook if you DON'T rinse.
+Allison Beck I never rinse pasta. I much prefer it with the starch left on! Any sauce adheres better. Just drain the water before its fully cooked and you won't have a problem with it over cooking :)
Shaun Sawyer Exactly. I learned not to rinse pasta for that same reason. And I cook my pasta al dente so as not to overcook!

A. N. I don’t think you can make hash browns with no potatoes. I guess you could try squash or turnip or some other kind of root vegetable?

It’s called blanching them. Boil or bake the potato before grating it.

I'm hooked! I've been making this almost every day now ever since I saw this video. My only problem is my burner is old and the heat doesn't stay even so sometimes i burn them alittle. I'm working on getting them perfect. Thanks Jenny😁 oh and I use a towel and I add shredded onion!

Thank you very much!!! My Dad made homemade hash browns years ago with onions, oil of course, probably garlic and mushrooms if I’m remembering right and cut up jalapeño… perfect! This time I’m making it bland but your tip to keep them untouched each side for 30 minutes is spot on! I was skeptical at first thinking they’d burn but with some olive oil and because I squeezed the extra moisture out they’re turning out gorgeous and brown, crispy yumminess!!! Thanks a bunch 🤟🏽

Fro a cast iron skillet, you mght use a bit more fat, and slowly preheat your Cast Iron sikket on med forst, then up the temp, then back it back down. Cast Iron retains heat well so you need to use good heat management.

little tip when your using a grater and getting close to the end use a fork you'll be able to use the who potato without worrying about cutting you fingers

Wow - perfection! I am 66 and one of my favorite foods in life has been hash browns. And I've wished for them from afar because my entire life I've been told that they're stuffed with fat and salt and I've have had to give them a pass. I tried these today - 2 tsp of olive oil (good fat) and a whiff of salt on both sides when served. Freaking amazing!!! I can tell you there are a whole lot of hash browns waiting for me in my future. Thank you for this fabulous recipe!

I always incorporate chopped bell peppers and onions- I improves the flavor enormously. I also finish with lemon juice.

I usually use cheese cloth to squeeze out the moisture from the grated potatoes so I won't have to use too much paper towels. I also use a cast-iron pan so I won't have to wait 30 minutes to finish cooking those hash-browns. And, also, using a cast-iron pan cooks the hash-browns even more crisper and to a golden-brown surface.
I know everybody is going to hate me for this - I also use salt & pepper and butter along with olive-oil for a better taste, making those hash-brown taste like real hash-browns.
do you just rinse out the cheesecloth afterwards? Did you get your cheesecloth at the grocery store?
Oh, no, cheesecloths are made to be used just once. And, no, I usually purchase cheesecloths at websites that sell them. But some grocery store do sell them as will, but, I won't purchase them there....
+avsiii okay thanks. I will look for cheese cloths online sometime ... they seem to come up pretty often in recipes. I usually just cover the dough or whatever with moist paper towels
Well, if your working with some kind of dough instead of hash-browns, I usually use a moist dish towels. I use dish-towels to keep scratch made pasta from drying out and to raise yeast dough.
I usually use a tea towel to wring the potatoes out, so I don't have to waste anything.
You know what they say Jenny.... a messy cook is a good cook!!

Love this video. I’ve been making hash browns a lot in quarantine and I was wondering why they take so freaking long to make? And mushy too. I expect them to cook in like 15 minutes, then get impatient when it takes longer. Now I feel better, can’t wait to try this method. Thanks!
P. S. I did cut time off cuz I used it for quiche crust and it went in the oven for 20. But for hash browns with over easy eggs....yes... 30 minutes! Fricking perfect! Throw it on, follow your directions, hop in the shower, flip it when you hop out! It’s the perfect way to make them when you don’t feel you have the time. I’ll probably shred a potato the night before & just rinse them good and keep them in a bowl of water in the fridge overnight. I’m thinking that might be a good way to have a good breakfast and still have time to get ready for work. I’m feeding off your recipes. I’ve watched several hash brown videos. This one actually works! And you can get ready for work at the same time!!! GENIUS 😃😃😃

+Victoria Lopez - How much salt & pepper? Not enough to measure - just a few shakes because you can't fix too much but you can always add more later. If I had to guess, I'd say maybe 1/16 of a teaspoon.
Good vid, Jenny. Thank you. Here's a tip for you: There's a long story involved but the moral is, try some Himalayan salt. I bought it off amazon because everybody was raving about it and I thought "who raves about salt?" but I am so glad I did. The flavor is so much better (and smoother) than any Morton table or sea salt I've ever tried. I couldn't believe it but it is the only salt I use for seasoning food now. It is delicious. I keep some regular salt around for salting pasta water, etc. but Himalayan is the way to go. I hope you try it.

Great video - this time of year, when the garden-fresh potatoes come in, I always love making homemade hash browns. I have rushed it too many times in the past and ended up with under-cooked potatoes....15 minutes per side is perfect!

15 minutes to go and it smells and looks great. I've been washing the starch out of mine and squeezing the moisture out and it always burns I always cooked it on Med High.. low heat and not touching it for 15 minutes is a great improvement over my past failures, your video is making some great smelling Crispy Hash browns.. I smother mine in ketchup but I may just try salted first.

Nope, that " trick " didnt work. I just tried it and they were still mushy/greasy instead of fluffy like the restaurants. Im so disgusted.
I cant believe we can send a man to the moon, but I cant figure out how to make hash browns like the dang restaurant ! One of the posters above said we need to rinse them off thoroughly after shredding them to get the starch off first, and then dry. Guess I'll try that next ( sigh)

I try this recipe last year . You came out perfectly as you said. That being said living in the Middle East they had turmeric to everything it makes it a beautiful golden color and that's what I did. I hope you do some more
I think the reason hash browns are so enormously popular at breakfast, in diners, I-hop, Denny's etc, is that most folks love them, but don't cook them at home, because of the time required, the mess of squeezing out the water etc..so they take advantage of ordering them at local breakfast joints, where for some reason, they almost always seem to taste better

I have a brand new stove so I had to figure out the settings and I made them in 13 minutes and they were great. I think the secret is to get them as dry as possible. Thanks Jenny for a great recipe.

I do not know hash browns, but in my country we make something similar, but more flavoured. We peel and grate potatoes as well as you do, but we do not dry them at all. We put them in a bowl, add milk, flour, an egg, a little bit of salt, a little bit of pepper (optional), lots of garlic (crushed) and marjoram that we crush in our palms before adding, so that it is really soft. Then we mix it well and by using a ladle, we pour it on a pre-heated pan with some oil on it. We fry it until it is brown, then we turn it on the other side and fry the other side until brown too. If I should translate the recipes name into English, then it would be something like: Potatoe pancakes. (We usually make more than one for an adult person - for example, my husband can eat like 5 or 6 of them and he is slim!).
+DanaPatriciaMary1 That almost sounds like Pfannkuchen. My grandmother used to make it, except that she started with leftover mashed potatoes. She would add flour, egg, salt, pepper, garlic, and marjoram, and then fry the 3" patties until they were brown. So delicious.

To flip without breaking. Put a plate over them. Then turn upside down. Then turn that plate upside down onto another plate then back into pan the same way. Use the plates to eat off, so no extra mess.
Could be dangerous with the hot oil!!!
Good tip, just make sure they aren't stuck to the pan anywhere first. Then you're good to go.

ClaireNicole33 Riiiiight??? LOL I forgot about the good old salad spinner. I have four sisters and back in the day my mom gave us all salad spinners. We never use them until one day my sister Julie told me that she uses hers to wash her bras in! Just add some water and some sides and spin away your bras are clean and then you can even rinse and dry them and them! Besides of all the wastage of all the papertowels and money, She’s using the bleaced towels so literally all that bleach is going right into your potatoes. Otherwise great recipe! 👍🏼😂
