A few reasons why I love Cooking Con Claudia: 1) Claudia is extremely beautiful and presents herself to the world as such, taking the time to wear cute outfits, fix the hair, make up etc. 2) Video Organization is very polished and well executed with clear shots of the meal prep or cooking steps. Everything is in focus, nothing that does not belong is there. Very much appreciate how you value the time of others by doing the additional edits. 3) A very elegant kitchen with nice cabinets, counter tops and stove plus all the nice kitchen gadgets and accessories 4) Ingredient prep, love this part where all the unnecessary parts are not shown, only what is needed and by combining many of the spices into one bowl is one example. 5) Blending... Love the blender, I have the same and appreciate removing the actual blending time so that the shot goes from turn on to completed in an instant. 6) The best part...comes after the plating and Claudia is about to taste that savory goodness. Her smile beams with joy. Makes me happy because I know its good. 7) Maybe the most important thing is whatever you cook, it all looks so good and it make my mouth water. Yes! Some recipes add flour, but IMO it’s better to coat (dredge) the meat in the flour (do that for any stew). The meat doesn’t dry out if you do this.

Tejanos make it with 1 inch chuck roast cutlets at a much longer cook time. Lol I need to ask butcher to chop it up! Lol hahaha I cook mine for 8-9 hours! What’s better Claudia 😘

Claudia, that looks fantastic! I’m sure that meat is tender. Nothing is more disappointing than ordering carne guisada in a restaurant that doesn’t cook it until it’s tender. I can’t even find it outside south Texas, so I make it myself. I’ve travelled to California and Arizona and asked, “do you have carne guisada?” The answer is always “yes, we have carne asada.” BTW, everything is good if it starts with guallijo peppers. I also dredge the meat with flour before browning. It seals the meat and starts the gravy! And you have to test the guisada with a tortilla. Then another. Then another. Everyone ends up standing around the pot dipping tortillas.

Not Arizona version but MY VERSION 😊 if you don’t like the red color skip on the Chile sauce 😊 I love my foods to be super seasoned and just super flavorful. You can make this dish very simple without it but to me it’s just missing something

Carne guisada does have tomatoes sauce but it doesn’t have chile ancho and chile guajillo that makes this another dish asado de rez
