    I have been trying to make southern biscuits for years, without much success. I watched your video went to my kitchen and made these. They are absolutely the best biscuits I've ever had. My husband said they are just as good as his mom's. Now that's the best compliment I ever had. 😀 Thank you!

    I pretty much grew up in North Carolina and moved to Canada a few years ago. Can't find biscuits up here and boy have I missed them. I'm so glad I came across your recipe! When I ate one of the biscuits it made me feel like I was back in North Carolina. This is such an awesome recipe! Thank you!

    This is a modern version of how our Southern ancestors did. My grandmothers could pull the biscuit pieces off the wet dough with their flowered hands and shape the biscuits. they also didn't need to measure anything. I think White Lily self rising flour would also work for this. That would make it easier for beginners. also butter should be very cold from the freezer. Your pans were perfect. This will also bake good at 450 for about 20 minutes. Great demonstration !

    Good morning! I've had this recipe in my watch list for months. I decided to halve it, just to try it this morning. I had my doubts after making a real mess with the dough, but these biscuits turned out beautifully. I do thank you so much for this method - I've made buiscuits for decades, but never like this and again, these are wonderful...

    I like this technique of coating the biscuits in flour so the dough remains moist. Also putting them together in a small pan. I've always baked mine apart but this looks like a better idea.
    One thing I've learned is to cut your butter into the dough in two stages. First half make tiny pieces, second half make large chunks. Adds to the flakiness. In pie crust as well. New idea for me, thought I'd pass it along.
    Glad you realized you hadn't mixed your dry ingredients first!
    Like using whole milk. Adds more flavor and richness.

      I don't understand what is meant by two stages for cutting in butter ... ?? Does it mean cut in half the butter in small bits, then cut the remaining butter in larger chunks ???

    I tried your biscuit recipe and this is the way grandmother's made biscuits in the south. They come out flaky and tender not tuff because you do not overhandle the dough and the dough is sticky but the extra flour is the another key to great biscuits.

    YUM! Biscuits are wonderful! Cook's Illustrated and Taste of Home happen to be of my favorites. But Cook's is so good in teaching technique as well. Nicely done! Now I'm hungry for biscuits. LOL.

      Every great cook I've ever seen gets their hands dirty. If you want natural home cooking, your going to need to wash your hands sometimes. Maybe you should stick to canned biscuits.

    OMG ! The Best Recipe ever, Thank you Tressa. Now i'll just whip up some Homemade Sausage Gravy and pig out. Next time I will try some lard and see how they turn out. I only made 9 Biscuits but they were 2 1/2 inches high. Thanks Again

    Cooks Illustrated was one of my favorite food magazines. I liked the way they develop recipes. One I remember was the addition of creamed corn to cornbread.

    They sure look delicious. I'm a bit different as I never put Jelly, Syrup or Molasses on my Biscuits. I like to separate it when its hot and put a pad of butter. I do this to the most round biscuit in the pan when they come out of the oven. I then cut it in half and share it with my wife. Its a little ritual I have. Oh, then I make the sausage gravy to go with my biscuits. I use unsalted butter too, but use White Lily Self Rising Flour after sifting it. I also use a tbsp of Brown Sugar. Mine are always very yummy, but I'd love to try these.

      Her way is a bit different but works well. I use 2 bowls. One for mixing and one with just flour all around the sides. I put the wet mix in the flour bowl after mixing the butter and Buttermilk, and gently turn while folding. About 7-8 folds. Then I remove to a flat board and lightly pat down to about 3/4". Then cut out the biscuits with a cutter. I rub a little buttermilk from the cup (it runs back down) on top of the biscuits. So you see, several ways to make great Biscuits.

    Hello ! I was scrolling thru biscuit video and I saw yours. I've made several ways but I find I do better but scooping and rolling some. Baking at 450 around 12 or so mins. My question to you is could I use self rising flour. I love making biscuits and learned about a year ago. I'm still a work in progress lol. And I'm no spring chicken either. Thanks for any help

    Wow.. I am very impressed. Love how you do the demo, step by step... and then show the finished product.
    (Thankfully, the difference between whole buttermilk and low-fat is not that great. Buttermilk is essentially the milk left over when butter is made, but there's no butter in it. Low fat buttermilk contains about 2.5 gr of fat per cup. Whole milk contains has about 8.9 gr.) (I know these things because I have no life - ha!) Great presentation !

    I’m gonna try this . I’ve been doing the one on the white lily flour bag . They turn out great to . So I’m gonna try this one to see if we like them as much . I’ve seen many folks put there biscuits in a cast iron pan to bake them , I tried it and didn’t like the taste at all. Just saying .

    Hi I tried this recipe and the biscuits came out light, tasty but not brown enough, so i left them in an additional 10 minutes and that did it. Will try this again

      Brushing with butter ahead of baking should brown them, if not, put under broiler about 30 seconds. That way you won't dry them out with the extra baking.

      I am not bragging but these biscuits are the best I have ever had. I got the recipe from Cook's Illustrated Baking Book. I find these easier too because you do not have to cut them out. Make sure you butter before and after it really makes a difference. Anyway, that is just my preference. Thank you for watching and commenting. I appreciate you!

    Help ! I'm new at biscuit making and love to make them. I use this method cause works best for me. Scoop and roll. After biscuits are done and I must say they look perfect. But ! They fall apart when I go to butter them. I freeze my butter and buttermilk is very cold. Not sure what I do wrong. Please any advise for this old woman lol

    Sifting and weighing gives better results. My grandmother used Crisco (old formulation - it is different now) rather than butter and also sweet milk rather than buttermilk. She also rolled the dough with an old bottle and cut the biscuits out with a drinking glass. I have never tasted biscuits anywhere as good as hers were. I have tried rolling or patting then cutting using a vented cutter but pinching or "choking" is less messy and works the dough less. A little kneading while mixing is ok. Wet dough lightly floured while shaping works best, similar to what you did. Also a rest before shaping in the refrigerator helps with hydration and chilling, and a rest after shaping in the pan seems to help. I put a gob of fat in a well then add liquid and mix with fingers. Then rotate the bowl as I gradually add the flour while mixing it in with my fingers. I have used leaf lard, butter, and shortening, and combinations, but prefer shortening for good texture and ease of use. The internal temperature should be around 200F when done. Butter the tops and invert right after removing from the oven to prevent sogginess. Cut open and butter generously while hot. No real need to measure the flour as the number of buscuits is determined by the amount of liquid and to a lesser extent the amount of fat. Tests have shown that about 1/4 cup of fat per 2 cups of flour is optimum. A little more or less will not hurt. Biscuits are forgiving as long as you really care.

      OMG!!!! thank you a million times! literally, best biscuits i've ever made and my boyfriend agreed too. we doubled the recipe for his whole family and they all loved them; every one but 3 got eaten last night and it made 19! (two i made really big) we also used good butter that we just bought :)
      We had them with fried chicken, baked macaroni, mashed potatoes, mixed vegetables, and white gravy. SOO GOOD!
      But get this; this morning we split one of the biscuits in half, put them in the toaster at a medium low heat, cooked an egg in a mason jar lid (to make them circular) with butter in a cast iron with an extra egg white added to the mason jar lid so they were thicker than just your standard egg. Then I steamed the eggs by pouring water in the cast iron and covered it with a lid until they were ready to flip. My boyfriend cooked up some local sausage links that taste EXACTLY like McDonalds sausage and got them nice and brown. Then we topped the eggs with mild cheddar cheese (our favorite slices) and covered them on low until the cheese was super melty and hot. We buttered the biscuits, put the egg with cheese on the bottom then the sausage, and then the biscuit. We buttered the tops of them and wrapped them halfway up in paper towels so they weren't messy. OH MY ATLANTA. Best breakfast sandwich...i've...ever....eaten... I'm so in love. I'm still thinking of how good it was hours after i had breakfast. Best fuel for my boyfriend too, he was sooo happy and it only took about 15 minutes cause the biscuits were already made, super soft, and ready to go!!! Give it a go if you're interested in those kinds of foods! I just want to make a big batch and eat them everyday lmao. If you have any suggestions let me know! This is definitely a recipe i'm going to end up memorizing because i make it soooo much! THANK YOU, i'll probably use this recipe for a lot of future events and family breakfasts/dinners because i cook everyday, i love it! These biscuits were so much fun!!

    Your biscuits look delicious!
    My mom always rolled hers in her hands but I've never had any success with that method. There really is a difference in the lightness of a biscuit when doing it your way as opposed to rolling & cutting them out. They don't rise really tall but they are SO light & fluffy; even the outter crust is softer. I know it's a matter of preference but I don't think many people ever get to try one like this to even know the difference. And who knows, maybe using your scoop method will eventually help me learn how to do them like my mom.😊

    I always thought flour had to be sifted for them to be light and fluffy? I have a question...why not use self rising flour with baking soda and baking powder and salt already in there instead of adding it all separate unless there is a reason for it??? Just curious?

      Lujuana Hastings Well I got the recipe from Cooks Illustrated and they said this recipe makes them tall and fluffy. I think it is because they add more baking powder than self rising flour has. I would have to look at the recipe book again to know exactly and I am not home at the moment. But I will say I have tried many biscuit recipes using both kinds of flour and this one is the best I have ever had. They are so fluffy and moist and a little crispy on the outside. Just the perfect biscuit if you ask me but I thank you so much for watching and commenting. I hope you will give these a try. Have a great day😊
