Our Favorite Buttermilk Biscuit
1 stick butter, frozen- I used salted butter (1 stick equals 8 tablespoons or 1/4 of a pound)
2 1/2 cups self-rising flour
1 cup chilled buttermilk
Parchment paper
2 Tbsp. butter, melted (to brush on top after the biscuits have baked)
**** When baking from the biscuits you've frozen (if you froze some of them) I found they baked better and rose higher at 450` F.
For the same amount of time. I put my frozen biscuits on the baking sheet and let them stay at room temperature until my oven reaches 450 F and then place them in the oven.
If NOT frozen, use the directions below:
1. Preheat oven to 475°. Grate frozen butter using large holes of a box grater. Toss together grated butter and flour in a medium bowl. Chill 10 minutes in the freezer. THE FREEZING IS A CRUCIAL STEP SO DON'T LEAVE IT OUT!!!
2. Make a well in center of mixture. Add chilled buttermilk, and stir until well blended (about 15 times).Don't stir more than 20 times or you'll have tough biscuits. The dough will be sticky.
3. Turn dough out onto a lightly floured surface. Lightly sprinkle flour over top of dough. With a floured rolling pin, roll dough into a 3/4-inch thick rectangle (about 9 x 5 inches).
4. Fold dough in half so short ends meet. Repeat rolling and folding process 4 more times, a total of 5 times.
5. Roll dough with a floured rolling pin to 1/2-inch thickness. Cut with a 2 1/2-inch floured, round cutter, reshaping scraps and flouring surface as needed.
6. Place dough rounds, side by side, in a parchment paper-lined jelly-roll pan. (Dough rounds should touch.) Bake at 475° for 15 minutes or lightly browned. Remove from oven; brush with melted butter. Serve immediately.
Makes 12 to 14 biscuits.

I have tried I don't know how many times to make biscuits and they always end up in the trash. They were always falling apart and just not any good....I love to cook and I had some self-rising flour and buttermilk and thought I would give these a try....THEY WERE DELICIOUS....I told my husband that I was going to try biscuits one more time and he said "Uh Oh"...well he tried them...he ate 1........and then went back for 2 more....Please try them if you have never been able to make biscuits....you won't be disappointed. Thank you Hands That Cook....

Frist time in years and they where very good. I used reg. Flour and added my baking powder and shift.
I usually buy frozen biscuits because my attempts a
to make them fail miserably.
This looks like a recipe I could try. Thanks for sharing. Blessings from Cullman.❤

A comment worth NEVER forgetting !

YES!!! Finally, someone mentions putting the flour butter mix into the freezer to make the butter cold and this does make a huge difference in the quality of the biscuits.
I have never made biscuits before in my life, and I’m so glad that I choose this recipe to be my first!! These biscuits taste just like Hardees!! They’re perfect!!! The only thing different that I had to do is use a bit more buttermilk because of the flour I was using, my dough wasn’t getting sticky enough. Thank you so much for sharing this gift with all of us!!! ⭐️ ⭐️⭐️⭐️⭐️
As a son of the south, I grew up eating homemade biscuits prepared by relatives in the rural part of southeastern Virginia, in the area I referred to as "the country" whenever we visited from our suburban home. As a child, I remember fondly how delicious those biscuits were, often served with fresh butter beans, corn and country ham that were grown locally and prepared by my grandmother. I recently decided I wanted to attempt making some biscuits from scratch myself. So it was that I went looking for recipes on TH-cam. After findng your video, I decided to try out your recipe and technique. I must say I was truly shocked that my very first attempt turned out great! Since that first attempt, I have experimented with several other recipes, but your recipe really is the best recipe I have found. I have made them at least 3 times now, and they truly were no-fail biscuits every time! Thanks for sharing your technique!
MAN IF ONLY MINE BAKED RIGHT THE FIRST TIME , STILL TRYING , BUT GETTING THAR , THIS WILL BE MY THIRD TRY AND I KNOW IT WILL BE RIGHT
You go guy😃👋
Oh my goodness!!! This just like making biscuits with my Grandma on Sunday's after church. With several moves with the military and my childhood home burning to the ground we lost the recipe. My cousins and I have been trying recreate it but nothing was right there was always something missing (and it wasn't love). Thank you for sharing. I can't wait to make them for my cousins and see the smiles on their faces! You rock!!!
Thank you Myra!! I hope this recipe is close to your Grandma's and everyone enjoys it. TFW God Bless, Linda
I must confess, That after looking at your video and receipt and Your instructions, So simple and straight to the point. I searched and searched to find something better. I looked at yeast biscuits, other self rising flour biscuits, baking powder biscuits and yes, A bread machine biscuit. I have FAILED to find anything better then Yours. Thank God I saw Your video. Again Thank You.
Hi Phillip, After you've made and tasted these biscuits, I know you'll be more than satisfied at the taste and results. Thank you so much for the compliment. I really appreciate it! TFW and commenting! God Bless, Linda

@@msdaisy6949 aww Ms Daisy...if you've tried to make a good biscuit for years with no success, you'd understand the excitement and self satisfaction when, with simple instructions, you made a biscuit that is the best. Maybe not to you, but to some people making a good biscuit is an accomplishment they've always wanted. TFW God bless you Daisy, Linda
Made these today with my 10 y.o. niece for a family breakfast, easy to make and turned out really good. I had to add a little extra buttermilk to the mix as the dough was a little dry with just the 1 cup. Cooked for 13.5 minutes and they came out perfect. Sent a couple home with my mom so she could enjoy the tasty goodness later.
I'm so glad these turned out for you and you all enjoyed them! Thank you for watching and commenting. I hope you'll enjoy many of the other recipes I've posted. Linda

I made this recipe for the first time today (2018 July 19). It worked as advertised.
For years I'd tried to make Southern biscuits with ordinary flour, but the result was always tough biscuits. So I finally ordered White Lily self-rising flour via Walmart's on-line purchasing service, I bought real buttermilk at the local supermarket, and the result was real Southern biscuits.
MANY thanks for posting this recipe.
I've just found your message...some messages don't come up for some reason....so glad this worked out for you! Now you're an official biscuit maker, and a good one!!! TFW God Bless, Linda

This biscuit recipe is the best ever. It really is no-fail, and it's easy to just keep a couple sticks of butter in the freezer and then pull one out whenever you want to make a batch. My friends are so impressed with my biscuit making skills now, and it's all thanks to you! :D
Hey Lori....I'm so glad you like this biscuit recipe. It's the only way I make biscuits now. Thanks for getting back with me to let me know you're enjoying them!! TFW God Bless, Linda
Thank you so much ,and may your grand children, have the same wonderful memorys of you as I do of my grandma. God bless
You're welcome Mike. I hope exchanging the butter for lard or shortening works for you. God Bless, Linda
Love it! Thanks again. We've used the southern biscuit flour for years. My daughter rolls the dough with a mason jar. Cuts Them as well using the jar. Just as my relatives did for the last century.
Thanks for the tip about the Mason jar haven't use rolling pin in so long I don't know if I have one but I know I have a mason jar God bless
I made these today and they are perfect! I followed your instructions to a 'T'. They made exactly 12 three inch biscuits, rolled out to a half inch thick before baking.
I used a clean, short blueberry can from a muffin mix with the lid removed .It worked perfectly to cut them. Ten minutes at 475 degrees for my thickness and oven. My son said that they were the best biscuits that he had ever eaten.Thank you so much for sharing.
You're so welcome! I want everyone to make great biscuits and have no fear when making them. TFW God Bless, Linda

I love the dark biscuits, and I'd love some butter and honey. Mmmmmm
This is the same as the recipe I learned as a child. My mother told me that if I didn't learn to make biscuits and bread I would never get a husband. She told my brothers if they didn't learn how to make bread their hair would fall out. People wonder how my Mom managed to get 6 sons and a daughter to learn to cook. She lied to us. End result, we can cook anything we want!
LOL!!! I love your story!
2late4me2care, I just have to tell you how much I love that story. ;o)
Wish your mother raised my son🤣

Omgosh!... I'm cracking 😂 up at this comment. I too learned at a very young age. I was in that kitchen with my Mama, or Grandma every chance I got.. I introduced my Son the kitchen when he was about three.. he's an awesome cook & now teaches his wife... 😋💕

Hi Viviana, For each CUP of all purpose flour you need for a recipe add 1-1/2 tsp. of baking powder and 1/4 tsp. of salt. I hope this helps! TFW God Bless, Linda

Does this recipe call for the use of salted butter? Or should we use unsalted butter? Or does matter? I am using self-rising flour and do not want to serve overly salty biscuits. Thanks for any help you can provide!
I never ever use unsalted butter...this is salted butter and the biscuits are perfect! TFW God Bless, Linda
I used this recipe, IT WORKS! I was so proud of myself. Thank you soooo much for this!♥️
Those biscuits look awesome. I married a southern man and trying to cook as good as his mama. He is a very fussy eater, but loves his mama's biscuits. This recipe taught me a lot. Thank you!
Hi Kathleen, don't try to compete with his Mama, you may be disappointed in his opinion. These are great biscuits and may I suggest you use this recipe. This should be a good copy of hers. Let me know how he liked them please. TFW and commenting!! Linda

If you follow all the directions to a T, you have the best biscuits you've ever eaten without all that frustration....so happy for you!! TFW God Bless, Linda
Thanks for the recipe for No-Fail biscuits. Thanks also for the extra hint re chilling the dough before adding the buttermilk. It's just me & my husband, so I also appreciated the idea of freezing the dough rounds in a freezer bag with time & temp written on the bag. That way I can just bake what we "should" have, & save ready made dough for the next time or 2. I'll keep checking back!
Thank you, Thank you! I made these this morning and after years of FAILED attempts, made the PERFECT biscuit, thanks to you! Your detailed explanations and showing how it’s done made all the difference!
I finally used your rolling method last weekend, and man, the lamination was amazing! Thank you from the granddaughter of two Southern women, for helping me perfect my biscuit process❤️Happy Thanksgiving too:)
Used your biscuit recipe tonight (8/6/19) Didn't have buttermilk, but they still turned out GREAT! I've never been able to make good biscuits, but this one was easy and SO GOOD! Thank you for sharing your technique with us. It will be one of my "go to" breads for sure.
Sherry Add 1 tbs vinegar or lemon juice to your whole milk. Let sit for 5 min and you will have buttermilk.
Yes - this is what I use - only I add 1 Tablespoon sugar. Really good!

annie b You've already tried and made them? Good for you! I knew they'd turn out perfect IF you followed the directions. BTW, did you have a soft winter wheat flour or use a regular self rising flour? Annie, I'm proud of you for having the courage to at least try this. So many people won't. Freeze the unbaked biscuits if you don't want to bake them all at once. Simply freeze on a baking sheet and then into a zip lock bag with instructions. When you take them out of the freezer, let them sit on the baking sheet until the oven heats up to 475, then proceed as the instructions say.

The first time that I tried this recipe, I used whole milk, because I didn't have any buttermilk. The next time I had buttermilk, and after I made the first batch, I had to make more. They were absolutely delicious, and oddly enough, they smelled like blueberries. Thank you so much for putting this recipe on TH-cam.

I live in Indiana and I buy White Lilly self rising flour here at Kroger. However, I have compared White Lilly to other available flours. White Lilly has 2% protein level, and as you say it is made from soft winter wheat. King Arthur self rising flour is also 2 % protein and made from soft winter wheat. King Arthur says they reformulated their self rising flour a couple of years ago. I have not used the KA self rising because White Lilly is cheaper, but it seems like KA self rising flour would make good light biscuits also. A few days later I was shopping at Mejers ( competitor of Walmart ) and I checked some other brands of self rising flour, and there were about four that had a 2% or 3% protein level. I am not a flour expert but just for discussion, if I could not find White Lilly, I would look for a self rising flour with a 2% or 3% protein level and use that. Just my opinion. Your biscuits look really good.
+Charlie Wilson Hi Charlie, I'm not a flour expert either and have always used white lily...I have bought KA but honestly cannot tell the difference. That can be said (IMHO) about cheaper flours also...I can't tell the difference in regular or sr flour other than the soft winter wheat variety. In my opinion, it's all marketing. It doesn't matter WHO mills the flour (my opinion) I've bought flour from Aldi and can't tell a difference so the only reason I use a soft winter wheat flour, no matter what brand, is to make biscuits and pie crust. I agree with you! Thanks for watching and commenting Charlie.
Thankyou very much May God Bless you
I'm 54 and have never made homemade biscuits and I live in Alabama! Lol. I'm trying these!! Thank you!

Wonderful looking biscuits. That's how I used to make them or similarly. My mama taught me this many years ago. Even my father got to be the expert at making them. He'd make them every morning plus a full breakfast. Thanks for bringing back a very sweet memory.

Great with my good Sausage and Biscuit Gravy recipe etc
Thank you SO MUCH for making this video! I really like that it is a simple recipe. I also like the fact that I can freeze the dough because it's only me here, and I don't eat biscuits everyday. I am so glad I stumbled upon your channel because I truly enjoy watching your videos! I love it when Sammy comes in and has a taste test. The thing about your videos that upsets my little dog is the alarm that dings when someone comes inside your house. It scares my dog to death. She is afraid of smoke detectors and I guess it sounds like a smoke detector to her. But keep up the great work. I really enjoy your knowledge on the ingredients, too. Thanks again!! :)
Ranita Todd Hi Ranita, I'm so glad I can be of some help. When you want to use a frozen biscuit, just put them on the baking sheet frozen and leave them out while your oven heats up. They are just as delicious baked from frozen as when I made them fresh. The sound you hear is my burglar alarm. Sam is in and out constantly. I'm so sorry it upsets your dog. I'm an animal lover too so I sympathize with you. I'll try to get him to stop going in and out of the house when I make a video.....but I can't make any promises that he'll quit. He has a lot of nervous energy!

Thanks, Linda! Actually much to learn!! :)) Like as a 70-year old woman, I never even remotely thought about basic things like qualities of soft wheat vs hard wheat flours until you showed me! We don't have your Lily flour here, but I learned from another commenter below about King Arthur flour with 3% protein. I have seen that here. Just searching for "proper" flour is a new educational adventure in itself!! :)) All the rest is brand new too. Thanks for teaching this old dog some new tricks!! :)) God bless you too.
I have found that 2 cups of self rising flour and 1 cup of heavy whipping cream make some very tasty and fluffy biscuits. Just don't over work the mix
I thought it was 2 cups of heavy cream to 2 cups of flour?
@@metroteacher Try it her way and see if it works for you. :) Her way works for her.
Also, if it hasn't been mentioned in the comments below already...you can substitute the buttermilk with 1c cow's milk with 2tbsp white vinegar. It will coagulate & thicken. Old school buttermilk is also actually not white at all...if you leave milk out for a few days in a humid environment, the curds will separate from the whey. The clear liquid at the bottom is the actual buttermilk. The buttermilk we purchase at the grocery store is cultured the same way as yogurt and pasteurized which is why it is white. Great recipe. Same as mine except I use shortening instead of butter in the dough & still brush the tops with it before, during, & after the baking process. ❤❤❤😋
Thanks a lot for share this way to get buttermilk, here in México it is not possible to get it, Ussually I make bisckets or scones a little bit different, and I love them. I will try this way.
@@mariadej.torresdelatorre1345 I’m in Canada, and I never see buttermilk here either. Here’s another substitute: For whatever amount I need, I pour half of that amount of whole milk in a measuring cup, then add an equal amount of sour cream and stir. Let it stand for at least 5 minutes and stir again.
@@codysagod thanks, your recipe sounds good, I will try it.
thanks for the recipe. I think I was mixing too much. turned out perfect. you are a godess!!!
Thank you! I'm so glad you were successful. TFW God Bless, Linda
Just made a trial batch to test before Thanksgiving. They were amazing. My first try at any type of biscuit making. This is a winner. I will be making another batch soon. I didn't have any fancy southern flour...used King Arthur unbleached all purpose flour to which I added baking powder and salt. They were slightly crunchy on the outside and very tender and flakey inside. Thank you for the baking lesson.
Janelle, There's nothing I'd rather hear than a success story! I'm so glad you enjoyed these biscuits. TFW and commenting. God Bless, Linda
Oh, and you can freeze them! Thank you for your videos, I adore watching the grandmas on you tube over anyone else. God Bless you for teaching according to his word "the older woman will teach the younger woman" . I didn't any time with my grandma or mother to learn. Keep up the "Good work" .
Thank you for the compliment. I appreciate it and I'll do the best I can to teach what I know. TFW and commenting. God Bless, Linda
Thank you I am teaching my five year old grand daughter how to make biscuits.
We make oat meal cookies and use my 50 year old china with linen napkins!
The art of cooking should be passed on!
Setting a table should Not be a lost skill and we can teach this so they will hopefully pass it on
Again thank you!
Absolutely true Denice...you go girl! What a lucky granddaughter you have to have such a wonderful grandmother to teach her!! TFW God Bless, Linda
If you don't have self rising flour, simply replace 1 and a half teaspoons of reg flour with baking powder per cup. Or just add the teaspoon and a half of baking powder to a cup of flour. For the half cup you would use 3/4 t. baking powder. By the time you add your buttermilk and extra flour to roll it out, it won't matter which way you did it. Technique is what's important. :o)
Looks scrumptious.
I am starving
+DVincentW Hi, go make some biscuits and you won't be hungry anymore, LOL!! Thanks for watching and commenting!!!!
Thanks I love your recipes!
Thank you as well, for watching and commenting!
Miss Linda, lady, I have tried so many recipes for biscuits for the past 20 years! I have made mile high raw in the middle biscuits, whiter than white biscuits, hockey pucks full of crumbs. I had given up, until I watched your video. I followed it to the tee, except parchment paper, I greased my cookie sheet with olive oil. Other than that I did exactly what you told me to do! My biscuit where kissing on the pan, had risen like they were reaching for the top shelf and had more layer's than a Farrah Fawcett hairdo. I also made buttermilk gravy, I added milk, water and buttermilk and ma'am! It was delicious. My sister and I were taken back to Mother's kitchen table. So thank you for the recipe and the memory. Keep doing what you do! God Bless and tell Mr. Sam howdy for me. xoxo Wayne
reat that's exactly the way I make my biscuit's and let them touch, a lot of videos say don't let them touch. glad you put the right way to make biscuits, tks for the video.
yumo now we need gravy and taters lol
Sounds good! TFW and commenting. God Bless, Linda

You said that you were going to freeze the ones you did not cook. Did you cook them and then freeze or did you freeze them uncooked. If you froze them uncooked did you freeze on a cookie sheet then put them in a bag together and freeze.
I am going to try these as I have never been able to make biscuit, mine could be classified as lethal weapons. btcakelady
They were put in the freezer already cut out as biscuits but not baked. I freeze them on the cookie sheet and once frozen I put them in a ziploc bag. When I want a biscuit or two I take out what I need, put them on a baking tray and let them just sit there until my oven heats to the proper temperature...then (and they're usually still partially frozen) I bake them
Ha ha ha, Funny response. Freeze them on a cookie sheet first so they do not stick together, then place then in a freezer bag. Remember if cooing them frozen to heat the seven at 350 degrees only. I just taught my son how to make them He did well for his first time. Yummy good.
Or you could place a piece of parchment paper between each biscuit prior to placing them in the zip LOCK bag.

@@deniseguidotti2652 The oven temp should be 450 F, not 350 F...the lower temp will not let them rise correctly. God bless, Linda
