Magica Pavlova

  • Pavlova is a particularly spectacular dessert, suitable for any occasion when you want to make a good impression. Woe to define it simply "Meringue with cream". The meringue base is enriched with corn starch and cream of tartar and the filling is based on cream but there is also mascarpone and condensed milk.
    Here is the recipe:
    Egg whites 160 g
    Granulated sugar 330g
    Corn starch 30 g
    Cream of tartar 4 g
    1 tablespoon of lemon juice
    Cooking 4 hours at 100 degrees, static oven and then leave to dry again in the oven off until completely cooled (1 night)
    To garnish:
    Fresh cream 200 ml
    Mascarpone 200 gr
    Condensed milk 50 gr
    Strawberries, raspberries, blueberries, currants to taste
    Method
    Whip the egg whites and when they are frothy add the sugar three times, continuing to whisk for two minutes each time you add the sugar.
    After this time, add the cream of tartar combined with the corn starch and mix for 2 minutes. Finally, add the lemon juice and whisk a little more.
    Grease a pan with the sole purpose of blocking a sheet of baking paper. Pour the whipped mixture into a circle and rising upwards. Take care to leave a void in the center which will house the decoration cream when cooked.
    Bake in a preheated static oven at 100 degrees for 4 hours. After this time, turn off the oven and allow to cool completely (usually 4 more hours).
    Final decoration
    For the decoration, whip the fresh cream with whips. When the cream is whipped, add the mascarpone and condensed milk a little at a time.
    With the help of a pastry bag, create cream roses and decorate as you like with the fruit you like best. Here I only used strawberries and berries, but peaches and kiwis also look great.
    You can prepare the meringue base also the day before but no later as unlike the classic meringue, the base of the Pavlova remains less cooked inside and if too much time passes from cooking you will feel a strong egg flavor.
