Additional tips to reduce the irritating gas (propanethial-S-oxide) 1. Keep your cutting knife sharpened (sharp knives release a lot less gas than dull knives) 2. Do the cutting under your stove exhaust vent (reduces the amount of gas from irritating your eyes). 3. Pre-cool the onion either 10min in the freezer or 30min in the refrigerator (slows down the rate of gas release).
Gordon having seggs be like: "3 fingers, 1 in the front 2 behind" "Turn that around, up and down motion" "Nice. Long. Stroke" "It will start to bleed and you'll start crying rapidly" " Push the "onion" back together, push the "knife" halfway in the "onion""

The person who taught Gordon to cook literally said not to cut into the onion like that, the onion has layers upon layers until the root, so cut into natures lines and chop to the side it's magic.
He'd actually partially wrong on the root being removed causing the onion to make you cry, the teary reaction is from the amino acids called lachrymor that get released when cells of the onions are crushed. This is also released when the juices are oxidized in the air. So in order to tackle the onion problem you need to know 2 things, vapors are heavily dependant on temperature and crushing cells will make more liquids. What can be done to avoid this? Refrigerate the onions. Don't cut a room temperature onion as the added temperature will help the liquid oxidize and secondly have an extremely sharp knife, the less cells it crushes the less juice created. And on the other hand if you microwave an onion and crush it with a hammer you'll essentially set off an amino acid grenade in your kitchen and everybody will start tearing up. Also the less fresh the onion the further the breakdown is and the amino acids that exist in the onion

Step 1 cut in half. Step 2 cut down in strips. Step 3 "push the knife in the onion...." Cutting toward your fingers, you can cut your hand open. Step 4 go to A&E. Step 5 order a take away.
Make the 1 - 2 horizontal slices 1st Gordon is much easier than the way you are doing it by making all those vertical slices. That's too hard to keep the onion in shape while slicing. I like Rachel Rays method a whole lot better! 😁 AND to keep from crying - while chopping, slicing or fixing the onion, do NOT breathe through your nose at all! But ONLY through your mouth, and you will NOT CRY! Watched Rachel & figured it out... it honestly works!!

I’ve been using this tech ever since I saw it couple years ago works like a charm and makes me look like a badass chef dad for my family
