Thanks for posting this! I had always seen videos where chefs finely dice their onions like this, but never explain in detail how they did it. I'll definitely be using this tutorial!
When you mess about with a food processor scooping the veg out and cleaning it all afterwards, I bet it's faster chopping by hand like this. Food processor makes it too small too. I make soffrito for my bolognese sauce and it turns the fried veg into sludge using a food processor. There's also usually a few big pieces the blades didn't catch.
A good tip to save time I learned is to peel the onion after you cut it in half, that way you can see what layer you need to peel down to, grab it and simply take it off, rather than peeling the onion like a potato for 2 minutes
I hate you, Ha Ha. You make it look so easy. I was not doing the horizontal cuts before, so the onion chunks were large. Great video. Sometimes we just need a hint.
Cranky blonde chef showed this. I think this is great. It makes onion cutting so simple. My only adjustment is I cut the horizontals first, then the verticals. And, thank you for saying/teaching: "This is not a race!" (That’s how you cut yourself)
Stop trying to save so much onion. It’s an onion! Also, make your horizontal cut before cutting from above. It makes the onion more stable and safer from cutting yourself.

I just realized I’ve been cutting onions WILDLY incorrectly my whole life. Also I’m in love with his voice
I should cut my own at home since the Costco food court doesn’t want to bring back the diced onions in their food court.
Silly billy

Great video and love the way you broke it all down

Thank you for making this video. I struggle a lot with chopping up vegetables, especially onions.
You are welcome.

Yes. It also depends if you need about 50 pounds of diced onions. The food processor might start to look awesome at that point.

Yeah that's what I was thinking

You're welcome!
I did this and my chef got mad bc it wasn't small enough. Anyone got any tips to make the dice even finer?
Make the incisions smaller
I thought blue cutting boards were for fish and green were for vegetables
Yea mate ur right I was literally just about to comment on that
Blue looks better on the camera. White onion on a whiteboard it’s kind a hard. Thanks for watching
MY eyes burn!
Googles work great.
You say to watch your video on sharpening knives, but you don't give the link.
Thanks.
No *wonder* my onions came out like voting districts in Wisconsin 😮
LOL

Your not suppose to cut it like that but what I know you lot disent follow Gordon R video it helps a lot more
Thanks
Why are you using a blue board that's for raw fish do u teach your students that aswell
Blue looks better under the camera. A white board and a white onion... not that good. Thanks for watching
Not how Gordon Ramsay teaches...
one thousand ways to skin an onion. Choose the one you like best.
