I went to his restaurant The Maze in London once. It was one of the greatest meals I’ve ever had, certainly the greatest steak I’ve ever had. The staff thought my family and I were so nice that they gave us a tour of the kitchen. I learned a few cooking tips from them that I still use to this day

Buy frozen. Sushi grade tuna is frozen, in fact, a lot of the fish in grocery stores is previously frozen, they just charge more to the it out for you.

I understand that you're supposed to buy the book, so the recipe isn't available unless you write it all down as you go. However, the link to buy the book doesn't work either.
From what I can tell though, the recipe in the book is different from what he demonstrated here. Adds milk to the egg, pepper to the flour, uses lime instead of lemon, shreads instead of grates the cabbage, uses pickled ginger, not fresh, the apple is optional, and so forth.
