Hey, Kim - I have been making pinwheel sandwich cookies with peppermint cream cheese frosting in the middle for maybe 15 years. Do you think this cookie dough would take rolling it up into a pinwheel if I tinted one half red? It seems like maybe it would do okay? It's the kind you roll up into a log and freeze, then cut into round cookies (that never really wind up perfectly round). I haven't had any to eat for myself in a loooooong time, so I may give it a shot. If it fails, at least they'll still taste good?

Have you tried rolling out your dough first and then stacking them in the fridge on a flat cookie sheet? Works great for regular dough but not sure how it would work with your dough. I do plan to try these. These look so light; almost like they have a lot of cornstarch in them. My daughter and her partner are gluten free and I'm super excited that I can bring them cookies for Christmas.
Kite Hill brand of vegan cream cheese is my favorite! I cannot tell the difference except for it’s more like the fluffy tub of regular cream cheese in texture. I may try to do these dairy free this year so I can eat them, too. Hmmm…
