    I made these today and they are PERFECT! Instead of the flour combination in the recipe, I used Trader Joe's gluten-free all purpose flour with an additional 1/8 cup GF flour. I will make this anytime I need cutout cookies or for a simple cookie with tea. The lemon is a wonderful addition. I'm an experienced baker, but these were easy enough for my toddler to assist. I've had to navigate through gluten-free baking for almost 2 yrs now and have created many recipes, revamped other and it's a real joy to stumble upon perfect recipes such as these cookies. Thanks for sharing!

    I would absolutely LOVE a tangible Gluten Free Habit Cookbook!! My son has celiac disease and you are my ABSOLUTE go-to for recipes. I would use a cookbook until the pages would tatter!! Thank you so much for providing such Wonderful recipes! Happy Happy Holidays to you and yours....

    I won't be able to do these before Christmas as I would wish because I will still need to adjust them for high altitude. This always takes at least a few tries for me to get them right lol. Thank you for the video I just found you & believe me I will be back! Merry Christmas! UPDATE: Just wanted to let you know I changed my plans & used this recipe for this years Christmas. At 5000 ft elevation the only thing I had different was only 8 min baking time but that could be my oven different than yours so this recipe is a WIN for my altitude. thank you so much, I feel like one of the family again having my gluten free cookies. Now lets see how many of them even notice lol. Merry Christmas!!

    Please mention the measurements of the ingredients. I tried your recipe it did not come out well. In baking measurement is important.

    Thoughts on substituting an oil like anise oil for the lemon zest? Before my Celiac diagnosis, my favorite Christmas cookie was a Polish pierniki cut-out cookie, which has heavy anise flavor (at least in my family). I would love to make a gluten free cut-out cookie that is similar. Thanks!

    If I wanted to make these a chocolate sugar cookie, I think I would skip the lemon and add some unsweetened pure cacao powder but just how much caca powder should I add? Any ideas? I also wanted to roll out the dough with a rolling pin that has a christmas shaped background throughout the entire rolling pin...should I do the final rolling pass with the background rolling pin before I refrigerate the dough or after I take it out of the fridge?

    Have you tried using flax meal instead of xanthan gum? I haven't tried, and I'm curious to know how well it works.

    I'm adding these to my bake list. M staying with 2 guys who don't use their oven. Does not work. Lol. When hubby get back from deployment I will be back home in my own house to bake up a storm LOL

    If I use a premixed gluten free flour. How would I go sbout that? I don't have access to all those ingredients separately unfortunately

      You can substitute for the combined amount. I use premix cup for cup flour from red Bob's and it comes out good.

      It depends on the GF flour blend. I used the Trader Joe's Gluten-free All Purpose flour and it worked perfectly. These taste better than most traditional wheat flour cutout cookies. I'd suggest finding a GF blend with the same ingredients and trying it out or just following the recipe from this video.

    My mum is gluten-free and sugar-free and so I'm making this for mother's day. I replaced the sugar with granulated erythritol and the flour I used Bob's Red Mill's blend. I did not chill it in the fridge. Turned out pretty well, a little spread, but not too much.
