Finally a recipe I can get behind. If I see one more saying "use vanilla extract that is from Madagascar that was extracted by hand" or "use only the best sugar that you can only get online sourced from some far off country" so the ingredients for sugar cookies will cost you about $200 to make I will scream! Lol. I love to use imitation vanilla extract and hated feeling guilty about it.
I used to think it had to be the real extract. I would even try to tell my mother she wasn't using "the right stuff." Recently I watched a video where a guy did a very thorough test with everything from imitation to vanilla beans. He determined that it makes zero difference in cookies. Wish I could tell my mom she was right.

Oh, you should try using almond extract-- Yum! I have always followed my Betty Crocker cookbook (circa 1974) sugar cookie recipe, which calls for that. It really makes them taste special. Plus, almond extract is clear so you can add it to your icing, too. Oh! And about possible spreading when the cookies bake, if that happens, don't panic. Just, right out of the oven, use the same cookie cutter to trim them. But it has to be immediately after they come out. Then to use up those trimmed bits, crush them and add enough buttercream icing so they stick together and roll them into balls. It's sort of like a cake-pop, but with cookie crumbs. You can even dip them in left-over icing to coat them. :D Another tip I just learned is, instead of rolling the dough in flour, roll the dough between two pieces of plastic wrap. It saves all that mess and, if you're making a cookie house (gingerbread or sugar cookie), it helps keep the area in line since you need to have them an oblong size. I love it!
I love linzer cookies. Almond flour and extract. So delicious 😋 I agree, I’ve never rolled my cookie dough straight on the counter, I always put it between 2 pieces of parchment paper!

You sure can! If you’re freezing, I highly recommend rolling it out to the appropriate thickness and laying them onto baking sheets in the freezer if you can. That way you don’t really have to thaw at all! You can just cut your shapes. If you don’t have the space, I would just flatten them as much as you can and thaw for about 20 minutes or so left in the plastic wrap. 🥰

BAKE: 1O-13 MINUTES 📝
I just found you, your so awesome!! Just wondering do you use same sugar cookie recipe all the time? Do you ever try to change it up?
I generally use the same one! I have tried out one or two other chocolate sugar cookie recipes, but I always venture back to using this one :)
