I definitely think there should be at least one row of tile next to the counters, wherever it touches the wall. The sinks are not the only area that needs cleaning. Spills happen and some can be hard on paint. Always protect the walls whenever possible.
I think the tile should have been expanded completely across the walls between the windows behind the sinks to prevent food and water splashes getting onto the paint. It's called a backspash in the US.

The tile work is beautiful. Definitely tile the walls by the cooker - what could possibly bubble out of a boiling pot is easier to clean off the tile than the painted wall. The kitchen will more complete, also. Personally, I would have tiled the sink area all the way to the windows - it has a patchy feel to me the way it is. Dirty dishes, pots, pans, etc., could easily mar and damage the painted area.

Great for cleaning with heavy detergents necessary according to the health codes in a commercial kitchen. This kitchen doesn’t have a commercial vibe to it, there for the stone has a much warmer and family vibe. 😊

Billy, keep your focus, no new projects at the convent, the chapel won't run away, you can do it later, focus on the chateau! I would add a bit of back-splash next to the cooker, if there ever is a cooking mishap you will be glad to wipe down the back-splash instead of your wall that will be most likely need touch-ups.
