    • The BEST Leftover Rice...
    Ingredients:
    Leftover rice: 1 bowl
    Spring onions: 2 springs
    Red pepper chili: 1
    Fresh coriander: 2 handfuls
    Garlic: 1 clove, finely chopped
    Olive oil: 2 tbsp
    Sea salt: to taste
    Lime zest and juice of 1 lime
    For Dressing:
    Rice vinegar: 1 tbsp
    Chili sauce: 1/2 tsp
    Chili flakes: 1/2 tsp
    Honey: 1 tbsp
    Salt: a pinch
    For Vegetables:
    Shredded cabbage: a handful
    Carrot: 1, chopped lengthwise
    Cucumber: 1/2, chopped lengthwise
    Mango: 1, diced
    Pickled ginger: 1 tbsp
    For Garnish:
    Spring onions, red chilies, chopped peanuts (optional), fried onions (optional)
    Optional: Toasted sesame seeds
    Get ready to embark on a flavour-packed journey as we whip up this delightful bowl. Don't forget to customize it with your favourite toppings and garnishes!
    Quick Pickled Ginger Recipe | Easy DIY!
    Here's a quick and easy recipe to whip up this delightful condiment in no time.
    Ingredients:
    Ginger: 1-inch piece
    White sugar: 1/2 tsp
    Salt: 1/2 tsp
    Rice vinegar: enough to cover the ginger
    Instructions:
    Peel the ginger using a potato peeler, opting for young ginger if available, as it has fewer fibres.
    Place the peeled ginger in a bowl and pour hot water over it. Let it soak for about 10 minutes.
    After 10 minutes, rinse the ginger under tap water to wash off any residue.
    Squeeze the ginger gently to remove excess water and transfer it to a clean bowl.
    Add salt, sugar, and enough rice vinegar to completely cover the ginger.
    Your instant pickled ginger is ready to enjoy!
