How to make New Orleans Stuffed Bell Peppers.

  • New Orleans Native Charlie Andrews Gives a demonstration on how to make New Orleans Stuffed Bell Peppers. A favorite especially around the holidays. They are eaten all year long. Unlike others who put rice, carrots, potatoes, tomatoes in their Bell Peppers, our version Stuffed Bell Peppers calls for the use of the Green Bell Peppers only. We also make a stuffing that consists of Ground beef, Shrimp, Ham, crab meat, butter, breadcrumbs and my favorite New Orleans seasonings to create a one-of-a-kind Stuffed Bell Pepper that's made only in New Orleans. I hope you all will give this New Orleans classic a try.

    That's what I'm saying, Charlie! Rice, cheese, tomato sauce??? Slice the top off? Use yellow, red orange peppers???! Hell no, we don't do stuffed bell peppers that way. Now, sometimes we do use just ground meat when there aint' enough money for shrimp, ham, etc...but yes, you are showing the true New Orleans bell pepper recipe and I hope it never gets lost.       Y'all must be from the 7th or 9th ward. I know we locals like to say what not to use, but if you Creole, you not scared of tomato sauce and beef. I grew up enjoying the stuffing using rice, beef, and tomato sauce and using red bell peppers.. N.O is a melting pot, so don't be afraid to cook using different local vegetables and flavors.

    Charlie!!!!!! I made these green peppers on Sunday and I will never make those “Italian” style tomato/cheese things again!

    I just came back from
    NOLA and I will have to agree that the food there is hands down the best ever. Everything was perfectly seasoned; no added seasonings required. I am a caterer and normally picky, but NOLA was taste perfection. Can’t wait to try these. Thanks for sharing!

    I’m glad you mentioned the other variations of stuffed bell peppers. I’m from New Orleans, so I make a funny face when I see tomato stuffed peppers or southwestern style stuffed peppers.

    New Orleans has the best food, Hands Down!!!!. Hello Charlie, I see you updated your bell pepper receipe. I made the old receipe for Mothers Day. A few months ago I made the other bell pepper receipe and I boiled the bell peppers for five minutes then placed the stuffed bell peppers in the oven for 30 minutes, well my bell peppers fell apart a little.LOL. I guess I boiled them for too long. So when I made them for Mothers Day, I eliminated the boiling part and placed them in the oven for 25 minutes and then stuffed them and put them back in oven for 30 minutes. I guess they meant it when they say Good Food takes Time. I truly enjoyed your video Charlie and can't wait to make the updated version soon.💖💖

    Hi Charlie! I'm going to make your New Orleans stuffed bell peppers, they did do delicious I could taste them❤
    But what you said about no one but those in New Orleans make shrimp stock the way y'all do. I have lived in TN/ GA all my life and I wanted shrimp stock one day and decided I'd make some. So I started putting together all the flavors I wanted with my shrimp shells and heads and water. OMG the flavor was so good!!! When you told the ingredients you used I couldn't believe you had my recipe, lol😂 I guess it's true great mind think alike!! I just found your channel and subscribed immediately! ❤❤❤❤

    Man Charlie, this looks delicious. When you keep them in the fridge, how do you reheat? 350 for 30 min again or does that overcook?

      Thanks man. Yeah just place them in a preheated 350 for 25 minutes or until the bell peppers are hot. I can guarantee you it won't overcook. Let me know how it turns out. ☺👍🏽

    If you put them in the freezer, what do you have to do to prepare them to be used? Do you need to thaw them out first or can you put them directly in the oven? Should it be at 350 or another temperature and how long shall it cook for?

      Hey there!! Give them about a day or 2 to thaw some. Unwrap the stuffed peppers and place them onto a baking pan. Bake them a preheated 350-degree oven, on the middle rack for 25 to 30 minutes. If they are still not warm continue baking them until they are hot. Also, no worries about the food overcooking! I hope I was able to answer your question. Thanks!

Secondly, I love spicy 🌶 food 🥘 but with all of these spices, will it cause a rise in blood 🩸 pressure & if so, what salt substitutes do you recommend.     Charlie yes indeed. Let me tell you. Those bell peppers look so good and when I made them I followed the entire recipe. I didn't put the ham in but it was the best bell peppers I had ever tasted. Trust me people, these bell peppers will cause a fight to break out. Cuz your family will be fighting over them.

    Try adding about a 1/2 lb smoke sausage ( cut in dices) and about 4 pieces of whole bay leaves. After cooking, crack one egg and stirr in well to keep moist in the inside, you may need a little more bread crumbs. A try drizzling a little margarine over the bread crumbs and bake until brown, that will give a crust on top and moist inside. Just a little something from the old folks recipe.

    Unfortunately my wife and daughter don’t like seafood so had to make some substitutes. Andouille sausage instead of shrimp and crab meat and beef stock versus shrimp. Lmao

    You had me at using the spare shrimp parts for stock. In my humble opinion, only a heathen would throw those away. LOL I make mine by chopping off the top and stuffing them whole. I want to try this way of halving them. I saw another video where they charred the pepper halves and peeled them vs blanching. Your thoughts? Keep on trucking brother. I love your videos!!

      I know right! The shrimp heads and shells make a wonderful shrimp stock! I've never charred or blanched the bell peppers before. If they are doing those methods for this recipe it actually doesn't make sense!

    Charlie it still will not taste like New Orleans we live in different states. You need open restaurant or food truck come eat your food I have friend who lives in Shreveport Louisiana been begging me come visit. I would come if you had a food truck or restaurant. Just to eat your food.

    I'm luvin' the vid. But if you serve it the next day, how do you reheat it such that that the entire contents of the pepper gets warmed up, and perhaps not overcooked. Stuffed bell pepper is thick and I would imagine it's hard to reheat it through and through. I hate to microwave such a beautiful product. Please don't tell me to microwave it. For me this dish needs to be served within a couple of hours of making it. Just my humble opinion though.

      Hello John! That's pretty easy to do. You can warm it in the oven and not overcook it. The juices will still be there. Same with microwave. I've done this several times and no issues with overcooking at all.

      I'm happy to hear that the bell peppers were successful. The best thing to do is place them in a foil pan. Then, fill another foil pan with a very small amount of water. Place that onto a pan holder. Light a sterno and add it underneath the foil pan with the water. Place the foil pan with the bell peppers in it inside the foil pan with the water. The pan should fit right inside of the other pan. Cover it with foil, and that should keep them hot. Hope this helps. Thanks for leaving feedback!
