Ahmad, I am here a small Prefeture town in Aquitaine France. Despite their being considerable arabs in the area sadly they do not establish many moroccan/Algerian restaurants here. I have been seeking a good Aubergine salad recepie. As you know there are many on YT, but I was particularly impressed with your "no nonsence" approach without complication. Tonight is my second try following both your recepies. The last time I ate this dish was in Haifa Israel and it was very good too. Thank you once again & I hope to try your Hummus dish too. To save time and electricity, I cut the eggplant in half and used the frying pan to roast and add the baked aroma, then I put them in the microwave oven to soften. It worked very well.

Just made Moutabal - it was delish 😋 and really easy to prepare. Cooking the aubergine on the stove reminded me of how my Mum used to cook these because I am Indian and we have a dish that also starts this way. Thank you from Italy 🤩
My Hubby makes the best smokiest Baba Ganoush! He uses our Kamado Joe grille, and uses twigs from our pear trees to smoke the eggplant. Tons of garlic of course! I make the tabbouleh, and I am learning to make the pitah or flatbread from a turkish recipe. Can't wait to try the Moutabal.
