It's been a few years, but I finally got a spun steel oven.
my wife stalked my youtube playlist and got me a large Livingstone's bedourie for Father's day.
her words: "you're always watching that Australian guy on TH-cam and talking about the food he makes"

Harry, Thanks for the shout out! I am thrilled that you and the family thought the video was funny. I am a true fan and all the jokes I made are the kinds of jokes I would make with (or about) my good friends. I love what you do and hope you are able to keep doing it for a long, long time.
Should I do more "tribute" videos?
I have not finished this video yet and you may answer the question, but is spun steel the same as carbon steel?
    Thanks again!
    -Nathan

You are a champion mate, I’m definitely keen to see more of those videos from you.
Spun steel is carbon steel but only in the context of cookware (so when you see a carbon steel wok, that is spun) but it’s not the same as a carbon steel knife (that’s where is gets confusing).

@@NathanKingOverland spun steel is just the manufacturing processes of turning a flat peice of sheet metal into something 3D.
I'd personally love to see you make some more parody video's, something to remember with the Aussie sense of humour is you can push it pretty hard, we have a pretty relaxed view on life and love a good laugh at our own and other expense.

24:20 Bedourie Ovens, from Southern Metal Sinners, come with handles for the lid, so no tipping. I have a 12" high which takes a trivet in the bottom and a trivet in the top for veggies. You can also buy an oyster wheel and wooden paddle. 24:30 You can invert the lid to take coals.

Another less commonly thought of option: stainless steel. They do exist: Solidteknics noni (deepa pot plus skillet combo creates a dutch oven) is a good quality aussie brand (love the aus-ion at home but that is wrought iron); and the Soto stainless steel dutch oven (Japanese brand). Both look thick enough to be fine on an open fire and the material allows for more acidic sauces. Best part would seem that they don't need seasoning (but that also means less non-stick -- do we hate trivets that much?). Soto might be less well known to car campers but are better known to those that don't mind carrying their tent for a bit further than you would ever want to carry a swag, and may well have a really nice Soto Windmaster stove in their pack (but then likely nothing resembling a dutch oven but I've seen almost everything). I would be keen to hear your thoughts on these stainless steel options on your channel. I'm pretty good at checking my cookware then cleaning it up and re-seasoning well before I take it somewhere but the idea of taking something straight out of storage rust-free is something I can't help wondering about. I have to say that I love my Lodge cast iron oven with legs and my carbon steel wok though.

  • @miket2304
    @miket2304 ปีที่แล้ว

Used both and both work. Spun steel requires much more attention to heat though as it’s not as forgiving as cast. You can load the heat up with cast as the coals take longer to heat and cool off to good cooking temp before burning occurs. Load up spun steel you are quickly going to get a hot spot and need to use a trivet. We have Furphy and Harding camp ovens that have bounced around in the boat trailer for many years and never seen a broken one. We are pretty lazy cooks though and happy to get to temp and let it do it’s thing only needing a few coals every half hour or so. As I say, we agree both cook a good feed the spun steel needs a little more attention. I have the hillbilly frypan with high sides but is a little thin causing hot spots if you are not on the ball.

Remember a big heavy Camp oven for a whole gang, would have traditionally lived in the "Chuck wagon" and cooked meals for a whole crew. (Weight less of a concern, and the cook would look after his gear - not dropping or otherwise messing it up).
Obv. Hot rolledsteel ( Spun or drawn)- being - usually - a lot thinner may have worse cooking (and seasoning) characteristics ie. hot spots etc, but it is definitely easier to carry and use and faster to get going.
We also have a Cast Iron Wok - and it is a really nice tool to use (it heats nicely, even on an electric stovetop though doesn't get as hot as on a good burner) - quite finely made, not at all big and chunky like a camp oven.

Great video Harry. I have cast gear myself, as its been mostly given to me over the years. I got my 12inch cast oven for $5 and it cooks aswell as an expensive one. But i do love my cast iron skillet, use it all the time at home aswell and it has no wooden handle so it gets alot of use as a baking tray aswell.
There are some things I havent seen in spun steel such as my potjie, it is great for stews and slow cooking wet dishes. I think next time i buy myself a new oven, ill look at getting a spun steel one instead of cast.

I use an OzPig traveller potbelly stove and the spun steel is no good for use on it, hotspots, warping, poor heat retention. My weapon of choice is the 10L oblong shaped cast iron camp oven from BCF, fits perfectly (try getting oblong shaped spun steel) on top with none of the problems I mentioned, I'm ok with the extra weight if something works properly.

There is a great video out there of a guy who does a temperature test between cast iron and aluminum. Nearly identical. Weight would be around the same as the spun steel. Bonus! You don't need to season aluminum!!! Dude, you need some Dutch Oven tools like a lid lifter. $8.
