    You're very fortunate to have such prolific pear tree!! My favorite method of canning pears is plain pear halves in a light syrup. These are great in salads, with cottage cheese, lime Jello salads, and even over oatmeal, or in pies. In fact one of the most raved-about pies I ever made was made with 1 qt of home-canned peach slices combined with 1 qt of home-canned pears, sliced and seasoned like a peach cobbler (cinnamon, nutmeg, lemon juice, sugar a little flour that will thicken juices into a sauce as it cooks, and a pat of butter on top), in a cheddar pastry crust. I imagine that this same combo would work well in a hand pie.

    We had a great pear crop but ours are small. We made pear purée for our new grandbaby. No sugar! Very smooth. Also made a batch of pear pineapple preserves. That’s my grandmother’s recipe. A satisfying process all around. But I wish I would have used my apple pealer!

    • @BIGALTX

      That apple peeler is a time saver! :)

    I made pear jam last year. Put my pears in a open pan with a little water and cooked them down and then added my sugar. I went light on the sugar. Then cooked them down a little more. Canned some without cinnamon and some without. Both were wonderful!! Good on anything. A little thicker than apple sauce. Yum yum. Hope this makes sense.

    Lovely pears and preserves. I agree with your wife, the magnetic lid gadget is terrific-nothing like trying to fish a hot metal lid out of boiling water. The jar lifter is a great thing too. Melody B in NC

    Yes sir I've done this with apples and they were great and still firm and very tasty. I did add cinnamon and I also had some apple pie spice that I want to use up so I added that to as well. They jar up wonderfully.

    I got one of those apple peeler/slicer/corer things. I'm really glad I got the one that screws to the underside of the table. I can do a bushel of apples in about 5 minutes. That doodad really gets it. Sometimes the old ways are the best ways.

    Try cooking them down even further with more spices. I do this in a crockpot use and an immersion blender to make it smooth to make pear butter.

    Maybe the difference is where we're located, but I don't think I've ever seen pear preserves that were as "watery" as those appear to be...ours always have a more "candied" (for want of a better word) texture, translucent, and a VERY thick juice.

    • @BIGALTX
      @BIGALTX  3 ปีที่แล้ว

      I agree. They were too thin... but still very tasty!

    My grandma would add flavored Kool Aid to her pear preserves. I have never done that myself so I can't remember the ratio. Of course the preserves were delicious, as was anything my Grandma made!.

    My pear preserves turned out like gummy candy? Good but chewy! Made pear butter last year, o my goodness, it is heaven on a biscuit! I used mom’s recipe. Pears peeled, cored place in slow cooker and cook until soft add Half brown and white sugar to taste, season with cinnamon, nutmeg, allspice, to taste ginger if you like. The flavor is strong at first but mellows in jars. Mine turned out excellent. Mom is a pinch of this and that kind of person!

    Hello new here. Moving our family to country in Tx somewhere in 2 weeks from the city. Found your wasp video 😄. Where can we find the right canning jars now ? I am having a hard time finding the ball or mason kind anywhere, even online 😳.

    • @BIGALTX
      @BIGALTX  3 ปีที่แล้ว

      I understand jars are hard to find.
      Try Family Dollar, General Dollar... etc.
      I've seen them there.
      They mostly have "Golden Harvest", but they are as good as Ball, I think.
      Let me know if you find some.
      And... WELCOME TO TEXAS !!!! 😀

    So how hot is your Watergate before you added your jars?

    • @BIGALTX
      @BIGALTX  2 ปีที่แล้ว

      About the same temp as the pears in the jars.
      You don't want too drastic of a temp change.
      Then, bring the water up to boil

    • @BIGALTX

      Not sure, but I've seen canned fruit last for many years.
      Need to be stored in a cool dark place to get the longest shelf life.
