Thank you so much for this challenge! I’m so glad you still show so much with canning. So many homesteaders are converting to mainly freeze drying and that’s just not an option for so many of us!
I don’t watch those. I follow so many people I enjoy, but when they start that freeze drying, I don’t watch. It doesn’t apply to me. It makes me mad actually, because..you said it…it’s not an option. Why bother watching? I’ll never freeze dry bc I can’t afford it.

You can always dehydrate. It’s not quite the same but a valid way anyone can preserve food. I do lots of it.

I live in the UK and I bought a pressure canner two weeks ago and started using it pretty much straight away. Already the jars are building up even though it’s a much scaled down version of what you do. I’m loving it and really want to thank you for these videos. I’ve learned so much. Although I came to the challenge late I’ve tried to preserve something each day. I hear your voice. “It’s x jars we didn’t have…. “. Brilliant!

This year, I have canned more then I have ever before in the month of August 409 jars for my family. Not counting what I had on my shelf’s from the beginning of summer or what was leftover from last year. And I’m not done yet! I have a bushel of tomatoes sitting in my dinning room, plus pears and apples haven’t came in yet, and whatever else I get from the garden before the 1st frost. So thankful for you and your inspiration.

Good morning! This video couldn't have come at a better time, as our pear tree is loaded this year. As I've been preserving, I've wondered, "what would Jessica do with all of these pears?" Your videos are so inspiring! Watching todays video brought back many fond memories of my Grandmother. She did mostly small batch canning and never wasted anything and there was nothing like opening a jar of something she had prepared. So thank you for sharing and for inspiring us think of ways we can make better use of the bounty at this time of year. Also for reminding us that even if we can't do a lot, we can do a little and sometimes that makes all the difference.
I loved apple butter as a kid. These days, it’s hard to come by unless you make it yourself. Beautiful accomplishment! Those jars are beautiful to see.
I am of German heritage and love plum butter!
We do the crockpot apple butter every year. That's the only way we have done it for 5 years. I was freezing so I wouldn't have to can. Last year we decided to free up the freezer and canned them, so good!@@sharongriffith7505
I find it at the local farmers markets and festivals in autumn and winter. Good luck finding it!
My favorite aunt used to make peach/pear jam! It was my favorite. Although I do love blueberry/cherry as well. Always a JOY to watch your channel! You are an amazing mother and wife…..BLESSED ♥️
YOU. ARE. AMAZING!!! How do you do all this?!! I bought a pressure canner for myself for Christmas and still have yet to can one thing. I have jar's, lid's, ring's, gallon's of vinegar, pound's of salt... and a terrible fear I will do something wrong! Were you ever scared you might not do something correctly and make your family sick? My mom got blown into a wall across the room from the pressure canner...I signed off canning at that moment. As a child you don't forget those things. Please tell me there are safeguards in place to keep this from happening now. It took me a couple of YEARS to work up the courage to purchase a canner. You make it look so easy, almost effortless, although I DO KNOW YOU ARE AN INCREDIBLY HARD WORKING WOMAN!! You are such a blessing to so many of us. Thank you for encouraging us to at least think about, consider and maybe even try canning. Thank you.

Jessica, I want to thank you for inspiring me to continue to fill my shelves to feed my family over the winter. During this month, I've also been working on cooking through the beef from my last 1/2 cow purchased a year ago. This morning, I have a brisket in the oven roasting. I've never cooked one before, so this is a new challenge for me. My next 1/2 pig and 1/2 cow arrive in November, and I need to make space. To that end, I've been canning products I typically would have frozen. Each time my nephew stops by, he opens the dishwasher to discover how many jars I've emptied this week because I needed something else to go with what I was cooking. I have a large quantity of tomatoes I was gifted that I cored and scored which will get roasted next week, run through the food mill and cooked down with peppers and onions to make pasta sauce for the winter. We had cooler weather this week, so I made a batch of chili. Dear nephew said he didn't have the energy to visit, so I told him to come, pack up the chili and take it home with him. I ended up with only four servings for myself, but that means I'll be more likely to make another batch. Cooking and eating alone is a challenge I don't wish on anyone. I still cook the way I did when my three sons were living at home and teenagers - there's always too much left over! I have three projects ahead of me for the upcoming week, including canning potatoes, canning carrots and cooking down the pasta sauce. If I have any jars left over, I have dried beans that need to go on the shelves. While they will keep as dried beans, they are much more convenient when they are ready to use!

Usually i have to wait until September to do your challenge but this year our weather was amazing so I was able to start at the beginning! I kept track every day of what I did and added it up at the end. Holy Moly! The numbers I put up shocked me because it was a little at a time. Thanks so much for sharing with us! I so enjoyed this year!
I just asked a neighbor what they do with their pears from their tree. It’s loaded down! They said they give them away if anyone wants them! I asked if I could have some and they said to take as many as I wanted! Thank you for sharing your knowledge ❤
We are finishing up on our 4 bushels of pears this week. We may be able to get 10-15 more gallons this weekend off the tree before it’s too late. I made salted caramel pear butter, spiced pear slices, vanilla pear sauce, chai spiced pear halves, pears with pineapple in homemade spiced rum vanilla extract with a little brown sugar. I used pineapple I cut up and froze when I got them for 60 cents each a couple of months ago. I don’t cut off the pear peels either. I’m canning simple pear slices today and more of the salted caramel butter.

I didn't do something everyday, but I ran out of pint canning jars yesterday and had to run to dollar general and get more. I've canned some new things this year. Some we loved and some we said never again. Still not done. Lots of tomatoes still in freezer and in the garden.

I am just so impressed at how much food you grew and processed for you and your family! God has been good to your family, and you in turn have been good to share your know-how and experience. I can talk English but spell it 😂😂. Here in Sweden we dont can anyting in pressur canning , lost the knowlig howto over the years i think. Frees drying you cant by a freesdryer. I made pear/raisin mince meat pie filling and it was amazing. We have it during the holidays . I have a few relatives that love this so I canned an extra batch and gave them out at Christmas.

Good Morning Jessica! I bought and used Pomona pectin for the first time and it was amazing to see how well it jelled! I found frozen blueberries and raspberries in the deep freeze that were hidden at the bottom and I made jam. I also found some frozen cranberries so yesterday I made cranberry juice but I added 1/4 cp of sugar to each quart and processed them longer. We’re opening one this morning. God Bless!

I have made the pear conserve but I used dried cranberries because that’s what I had. It was delicious! I love it served with ham.

conserves - we put over pound cake/bread, lemon or even vanilla bread
chutneys - we put over all sorts of meat, but mostly chicken
My favorite is the Ball's cherry chutney recipe over ham. Thank you for having these challenges to keep us going!!!!

I got pears from a coworker and canned 6 pints of pear pieces yesterday along with a scant 1/2 pint jar of the leftover syrup. I simmered it with a cinnamon stick and a dash of vanilla. Hopefully it will be tasty!! I’m doing more tomato soup today. I let my celery go too long so I salvaged what I could of the leaves snd air dried them in a brown paper bag and preserved a 1/2 pint of dried celery leaves to add to soups/stews. I have more growing so hopefully I’ll be more on top of the next batch. As I told you last week, I have the nesco electric pressure canner which is great for small batches. I drive by a pear tree on a strip of ground between the Pa turnpike and a township road. I want to stop and pick the pears so they don’t go yo waste but 1. I’m worried I’ll get hit by a car 2. I’m worried someone I know will see me and think I’m crazy 3. I need a fruit picking basket 4. I’m the only one who eats canned pears and it’s just me and my daughter at home…how much food do I need?? I’m running out of room!! My husband stays with his mom (who has early dementia)in ohio and I drive there nearly every weekend to see and spend time with him. I have a daughter and son in law with 2 young (2.5 yrs and 8 months) girls very close who I share my canned food with as well. Love and blessings to you and your family and to all of your viewers ❤️
Have someone drop you off & pick you up to get the pears, don't want to get hurt. Get as much food as you can get..have your children furnish jars for you!

I tried that pear cranberry ginger conserve recipe too and it was SO delightful and dicious. I used dried cranberry but I wish I had thought to toss in a handful of fresh frozen cranberries I had leftover.....
You have to try the pear cardamom pie filling. It's SO yummy. Makes 4 pints. Such a treat. I have been so enjoying that recipe book!

My mother shared your channel with me and I love watching your different videos you have.. especially this one! I have a mulberry tree in my yard and my peach tree blossomed for the first time last year! The dang bugs got to my peaches before I could.. i was so upset! I definitely want to try doing a pear jelly- that would be good. I did my first mulberry jelly last year and it was delish!

Just in time! We were blessed by our trees with about the same amount - I need to write the recipe for your "pie goo" down (was in a prior video). We're making pear butter, and had made juice, pear rings, slices, dices, and tiny cubes as well as putting some in the dehydrator!

My peach scrap vinegar is amazing!! I started a batch of pear scrap vinegar yesterday!! I use ph strips to check it. When I did my first batch of peach scrap vinegar, I accidentally left the scraps in for the whole month. It turned out great so I did it with the second batch too. I’m going to do the same with my pear scrap vinegar. Now I just need to figure out what to do with all my vinegars!!😂 I used my chive vinegar to make a dressing for my cucumber salad and on my tomatoes. My chive vinegar is delicious too. It’s so much fun to experiment with all of this food.

You have inspired me to persevere as much as I can. Every year I get more in the pantry which we expanded last winter. It gives me such joy to see the shelf stable foods to feed into the next year.
